QUICK AND EASY TUNA PASTA BAKE
This is a super quick and easy recipe I made for my seven young children out of whatever I could find in my cupboard one evening! I'd say normally it'd serve 4 adults or up to 6 children. It's on the table in less than 30 minutes.

Steps:
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and return penne to the pot.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Mix tuna, spaghetti sauce, salt, pepper, and Italian herbs into the drained penne. Pour penne mixture into an oven-proof dish. Sprinkle with Cheddar cheese and bread crumbs.
- Broil in the preheated oven until cheese is melted and breadcrumbs are crispy, about 5 minutes.

- Preheat oven to 180°C Cook pasta in a large saucepan of boiling, salted water, following packet directions, until tender. Drain.
- Heat oil in a large frying pan over medium heat. Add onions, garlic and celery. Cook, stirring, for 2 minutes or until onion is soft. Add tomatoes. Cook for 2 minutes. Add spinach, pesto and milk. Cook, stirring, for 2 minutes or until spinach just wilts. Add pasta to pan with tuna (undrained). Season with salt and pepper. Toss gently to combine.
- Spoon mixture into an 8 cup-capacity ceramic baking dish. Top with cheese. Bake for 20 minutes or until cheese is melted and golden. Stand for 5 minutes before serving.

Steps:
- Preheat oven to 200C/400F/ gas mark 6.
- Cook the pasta in boiling water for 5 minutes, add the broccoli and cook for another 4-5 minutes until just tender. Drain.
- Flake tuna into an ovenproof dish.
- Blend margarine, flour and milk, bring to boil, stirring constantly until sauce thickens.
- Simmer for 2-3 minutes, remove from heat and add half the cheese, mustard powder, and pepper to taste.
- Spoon pasta and broccoli over the time and cover with the sauce.
- Mix breadcrumbs with the remaining cheese and sprinkle over the top.
- Bake for about 25 minutes until golden and crisp.

It was a cold and raining Saturday afternoon and I could not be bothered going shopping so this is what I came up with. The fresh veggies can easily be subbed with canned or frozen.

Steps:
- Heat oil in a non stick fry pan.
- Sauté the onion, carrot and celery until onion is opaque.
- Add in the basil, oregano and pepepr and cook for 1 minute.
- Add the tomato paste and cook one minute.
- Add the can of diced tomatoes and stock powder, stir well.
- Half fill the can of tomatoes with water and add to the pan.
- Cook on low heat for 30 minutes, stirring occasionally.
- Throw in the corn, tuna and broccoli and mix in the cooked pasta.
- Transfer to a baking dish, evenly pour over the white sauce and top with grated cheese.
- Bake in a moderate oven for 20 minutes until cheese is nice and golden brown.

- preheat the oven to gas mark 6/200
- gently melt the butter in a saucepan over a low heat. add the flour and mix well. cook mixture for 1 minute and then remove from heat.
- boil some slightly salted water in a seperate saucepan. when boiling add in your pasta.
- stir the milk into the sauce a little at a time to make a smooth sauce. put pan back on the heat. stir while the sauce thickens so it doesn't go lumpy.
- when the sauce boils, turn down heat and cook for 1-2 minutes. remove from heat. mix in cheddar, tuna and sweetcorn. season
- drain the pasta when cooked. mix with the sauce. place in an oven proof dish and sprinkle with parmesan. bake in oven for for 20-25 mins

- Place bechamel/white sauce and can of asparagus soup in a saucepan and heat together over low to medium heat with curry powder and nutmeg, season with salt and pepper.
- Add approx ½ cup of the cheese and stir in thoroughly.
- Heat pasta until cooked.
- Place tuna, cooked pasta, sauce, canned asparagus, canned corn in a baking dish and mix thoroughly.
- Sprinkle remaining cheese on top and heat in oven on approx 180oC until cheese has melted and browned slightly (approx 20 minutes).
- You could also use breadcrumbs with the cheese on top if you prefer.

I saw this recipe demonstrated on YouTube, and it made my mouth water. Chilcott is known as the One Pot Chef there and has a delightful Ausralian accent. I'm thinking about using reconstituted mixed dried mushrooms in this recipe.

- Preheat oven to 400 degrees F.
- Pour uncooked pasta into a large baking dish. Set aside.
- In a large saucepan, gently heat olive oil, and add mushrooms. Turn them over, stirring, until they start to shrink down a bit and brown off. Add the celery soup and tuna and stir to combine thorooughly.
- Add milk and water to mixture and stir until all ingredients are combined nicely. Bring to boiling, then pour on top of the pasta. It seems like a lot of water, but the pasta will soak it up.
- Cover the baking dish with foil and place in preheated oven. Bake for 20 minutes. Remove the foil and bake 10 minutes longer.
