TRI-COLOR SLAW WITH LIME DRESSING

Great slaw recipe to pair with a Southwestern dish.

½ head green cabbage, cored and shredded
½ head red cabbage, cored and shredded
1 pound carrots, peeled and shredded
1 bunch cilantro, roughly chopped
⅓ cup lime juice
⅔ cup peanut oil
2 teaspoons sugar
kosher salt to taste
ground black pepper to taste

Steps:

  • Toss green cabbage, red cabbage, carrots, and cilantro together in a large bowl.
  • Beat peanut oil and lime juice together with a whisk until smooth; add sugar and beat to dissolve. Drizzle dressing over the slaw and toss to coat; season with kosher salt and black pepper.
  • Cover bowl with plastic wrap and refrigerate at least 30 minutes.

2 tablespoons apple cider vinegar
1 tablespoon honey
3 tablespoons extra-virgin olive oil
1 teaspoon whole celery seed
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 large carrots, julienne
2 cups shredded green cabbage
2 cups shredded purple cabbage

Steps:

  • Combine the apple cider vinegar and honey in a large mixing bowl and whisk until combined. While continuously whisking, slowly pour the olive oil in to emulsify the dressing. Sprinkle in the celery seed, salt and freshly ground black pepper and stir to combine.
  • Add the carrots, green cabbage and purple cabbage. Toss with the dressing and transfer to a serving dish.
