Any Harry Potter fan knows what this is. I finally procured the recipe from an British friend of mine. I know I can now find 'Lyle's Golden Syrup' in the grocery store along with the pancake syrups. Serve with ice cream or whipped cream.

1 cup golden syrup
¼ cup heavy cream
1 cup bread crumbs
1 lemon, zested
2 tablespoons lemon juice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Press the pie crust pastry evenly into the bottom of a 9-inch pie plate.
  • Mix the syrup, cream, bread crumbs, lemon zest, and lemon juice together in a bowl; pour into the pie crust.
  • Bake in the preheated oven until the filling is set, 35 to 40 minutes. Allow to cool slightly before serving.

Treat family and friends to a comforting treacle tart with crumbly pastry and rich filling. A classic British dessert, serve with ice cream or clotted cream

250g plain flour
½ tsp fine salt
140g cold unsalted butter, cubed
3 tbsp icing sugar
2 medium egg yolks
2-3 tbsp cold water
400g golden syrup
1 ball stem ginger in syrup, finely chopped, plus 50g of the syrup
1 lemon, zested
2 medium eggs, lightly beaten
100g fine fresh white breadcrumbs

Steps:

  • Sieve the flour and salt into a large bowl. Add the butter and rub together with your fingers to a fine breadcrumb-like texture (you can also do this part in a food processor). Stir though the icing sugar, then quickly add the egg yolks and 2 tbsp water, mixing swiftly with a cutlery knife to combine. Form into a ball (add another tbsp water if you need to), wrap and chill for 30 mins. Roll out to the thickness of a pound coin, and line a 22cm fluted tart tin with the pastry, leaving an overhang. Return to the fridge for 30 mins.
  • Heat the oven to 200C/180C fan/gas 6. Put a baking sheet into the oven to heat up. Line the pastry case with baking parchment and baking beans, then put in the oven on the baking sheet, and bake for 15 mins. Remove the parchment and bake for a further 10 mins or until the pastry is golden brown. Leave the pastry to cool before trimming off the overhanging edges with a small serrated knife.
  • Lower the oven temperature to 160C/140C fan/gas 4. Combine the golden syrup, ginger, ginger syrup, lemon, eggs and breadcrumbs in a bowl, briefly whisking everything together until combined. Carefully pour the filling into the pastry case put in the lower part of the oven to bake for 35-40 mins or until the filling is just set. Remove from the oven and leave to cool down for 20 mins before serving with ice cream or thick clotted cream.

375g pack sweet shortcrust pastry
a little flour , for dusting
750g golden syrup
225g breadcrumbs
zest and juice 1 lemon
1 ½ tsp ground ginger
3 eggs
6-8 balls stem ginger , thinly sliced
vanilla ice cream or custard , to serve

Steps:

  • Roll out the pastry on a lightly floured surface until big enough to line a 23cm fluted tart case, about 3cm deep. Line the tin with the pastry and fold the overhang over the sides. Chill for 30 mins.
  • Heat oven to 200C/180C fan/gas 6. Line the tart with greaseproof paper and baking beans. Bake blind for 20 mins. Remove the beans and paper and bake for 10 mins more until the pastry is pale golden and sandy.
  • Meanwhile, mix the golden syrup, breadcrumbs, lemon zest and juice, ground ginger and eggs together. Once the pastry is ready, lower the oven to 160C/140C fan/gas 3. Using a small serrated knife, carefully trim the edges, then tip in the treacle mixture and bake for 55 mins-1 hr until the filling is golden and crisp, and feels set to the touch.
  • When the tart comes out of the oven, arrange the ginger slices over the top. Drizzle with some syrup from the ginger jar, then lift from the tin to a serving plate and serve warm with vanilla ice cream or custard.

Topped with unsweetened whipped cream, this lovely tart is perfect for a Sunday brunch or dessert on any occasion. Most of you will remember Treacle Tart from the popular book series, Harry Potter. You can also serve treacle tart with clotted cream or vanilla ice cream! The treacle is so sweet that you want to serve it with something not so sweet, so that the flavors balance.

½ cup all-purpose flour
1 pinch salt
½ cup unsalted butter, cubed
2 tablespoons cold water, or as needed
9 tablespoons golden syrup
9 tablespoons dry bread crumbs
zest from 1 lemon
1 tablespoon lemon juice
1 teaspoon ground ginger
1 cup heavy cream

Steps:

  • Put the flour and salt in a large bowl and add the cubes of butter. Use a fork to cut the butter into the flour until you have a mixture that resembles coarse breadcrumbs with no large lumps of butter remaining. Try to work quickly so that it does not become greasy. Using a table knife, stir in just enough of the cold water to bind the dough together. Turn the dough out onto plastic wrap, cover completely, and flatten slightly. Chill in the freezer while you finish the next steps.
  • Warm the golden syrup in a saucepan over low heat. Stir the bread crumbs, lemon zest, lemon juice, and ground ginger into the warmed syrup; keep warm on lowest heat setting.
  • Preheat an oven to 375 degrees F (190 degrees C).
  • Remove the dough from the freezer and turn it out into an ungreased tart or pie pan. Use the plastic wrap to gently press the dough from the center outward, spreading the dough to the edges of the pan, working as quickly as possible to keep from warming the butter.
  • Stir the golden syrup mixture, and scrape from saucepan onto the dough using a rubber spatula to spread evenly to the edges of the dough.
  • Bake in the preheated oven until the tart is crisp and golden, 20 to 25 minutes. Allow to cool completely.
  • Pour the whipping cream into a bowl, and whisk vigorously until it begins to thicken. Continue whisking the cream until thick and smooth; spread over the cooled tart.

1 egg, lightly beaten

Steps:

  • Prepare the pastry as for pie crust and chill for 30 minutes.
  • Roll out for a 9 inch tart pan. Reserve the scraps. Trim the edges and retain the scraps.
  • Preheat oven to 400°F.
  • Mix the oats, zest, and ginger, and sprinkle half in the pastry. Pour on the syrup and lemon juice and sprinkle rest of oat mixture on top.
  • Roll out any remaining pastry and cut strips to lay a trellis over the tart if desired.
  • Bake for 30 minutes and serve hot or cold.

TREACLE, PORTER, OATMEAL & APPLE TART

250g plain flour, plus extra for dusting
125g cold butter, cut into cubes
50g icing sugar
1-2 egg yolks (freeze the whites for another recipe)
2 large bramley apples, peeled and coursley grated (200g prepped weight)
100ml porter (I use St Peter's Old-Style Porter)
100g soft brown breadcrumbs
25g oats
1 lemon, zested
1⁄2 orange, zested
2 tbsp lemon juice
250g golden syrup
50g butter
3 tbsp cream
2 large eggs, lightly beaten
whipped double cream, to serve

Steps:

  • Blitz the flour, butter and sugar in a food processor. Add 1 egg yolk and blitz again. The pastry should come together into a ball. If not, add the second yolk and 1-2 tsp cold water. Shape the pastry into a disc. Wrap the disc and leave to rest in the fridge for about 45 mins.
  • Roll the pastry out into a circle on a lightly floured piece of baking parchment. It needs to be about 5cm bigger than a 25cm tart tin with a loose-bottomed base.
  • Use the rolling pin to lift the pastry and line the tin with it. Push it into the sides of the tin all the way round, then cut off the excess. Chill in the freezer for 30 mins.
  • Heat the oven to 180C/160C fan/ gas 4. Fill the case with crumpled baking parchment and baking beans, then blind-bake the pastry case for 20 mins. Remove the beans and paper, then bake for another 15 mins. Take the tart case out and leave to cool in the tin. Increase the heat to 200C/180C fan/gas 6.
  • Meanwhile, for the filling, put the apples into a saucepan with the porter. Bring to a simmer and cook for 5-8 mins until the porter has reduced by about half. Put this in a bowl with the breadcrumbs, oats, citrus zests and lemon juice.
  • Warm the golden syrup in a pan over a low heat with the butter and a pinch of salt. Leave to cool, then whisk in the cream and eggs. Mix this into the rest of the filling.
  • Spoon the filling into the tart case, then bake for 40 mins, or until the surface is dark golden and the filling seems just set when you press the centre (it will continue to set as the tart cools). Serve warm with some whipped double cream.

Treacle tarts are usually made with a combination of golden syrup and molasses. The dessert has a texture similar to pecan pie (minus the nuts). Recipe by Tamasin Day-Lewis and taken from Bon Appetit May 2010 for ZWT. ****Golden syrup is a type of cane syrup popular in Great Britain; available at some supermarkets and at specialty foods stores and British import shops. RZ doesn't recognize this as an ingredient, and there should be 1 and 1/4 cups of golden syrup in the filling.

The apple and tangy lemon cuts through the syrup nicely in this pretty dessert - perfect if you normally find treacle tart too sweet

375g pack sweet shortcrust pastry
a little flour , for dusting
600g golden syrup , plus a little extra
225g fresh white breadcrumbs
zest and juice 2 lemons
3 large eggs , broken up with a fork
5 small eating apples - choose your favourites
custard , vanilla ice cream or clotted cream, to serve

Steps:

  • Roll out the pastry on a flour-dusted surface until big enough to line a 23cm fluted tart tin, about 3cm deep. Lift the pastry into the tin to line, then cover and chill for 30 mins.
  • Heat oven to 200C/180C fan/gas 6. Scrunch up a big sheet of baking parchment and use to line the pastry before filling with baking beans (or dried lentils or rice). Bake for 20 mins, then remove the beans and parchment and bake for 10-12 mins more until the pastry is golden and biscuity.
  • Meanwhile, put the golden syrup, breadcrumbs, zest from both lemons and juice from 1, and the eggs in a big mixing bowl. Peel 2 of the apples and coarsely grate into the bowl. Mix everything together.
  • Reduce oven to 160C/140C fan/gas 3. Use an apple corer to core the 3 remaining apples, then slice thinly into rings. Toss the slices with the remaining lemon juice to stop them from browning. Tip the syrupy crumbs into the tin and arrange just enough of the apple slices in an overlapping ring. Brush an extra 1-2 tbsp syrup over the apple slices until they're covered, then return the tart to the oven and bake for 55 mins-1 hr until the exposed filling feels set to the touch.
  • Cool for 10 mins in the tin, then carefully remove, drizzle a little more syrup over the top and serve warm with custard, ice cream or dollops of clotted cream.

  • TO MAKE PASTRY, in a medium bowl, combine flour and sugar. Use a pastry blender or fork to cut in butter and lard or shortening until mixture resembles coarse crumbs. Stir in enough water to make a soft dough that forms a ball. Wrap in plastic wrap; refrigerate 30 minutes.
  • TO MAKE FILLING, in a large bowl, combine breadcrumbs, ginger, lemon juice, egg, corn syrup and molasses.
  • TO COMPLETE, preheat oven to 350°F Butter a 9-inch pie pan or quiche dish. On a lightly floured surface, roll out pastry until 1/8 inch thick. If you find traditional treacle tart too sweet, try this lighter classic with lots of zingy ginger and the addition of lemon-poached pears

500g pack sweet shortcrust pastry
a little flour , for dusting
300g granulated sugar
3 lemons , zested
5 firm pears , peeled
600g golden syrup
1 ball stem ginger , finely chopped, plus 1tbsp syrup from the jar
140g breadcrumb
3 eggs

Steps:

  • Roll out the pastry with a little flour and use to line a loose-bottom 23cm round tin (it needs to be about 5cm high). Leave the excess pastry overhanging the sides, then chill for 30 mins.
  • In a large saucepan, melt the sugar with 800ml water and the zest of 1 lemon. Increase the heat until just simmering, drop in the pears, then cover and poach for 12-15 mins until almost tender. Lift out the pears, then set aside on some kitchen paper.
  • Heat oven to 200C/fan 180C/gas 6. Line the pastry case with baking paper, fill with baking beans, then bake blind for 15-20 mins until a pale biscuit colour. Remove the paper and beans, then bake for a further 5 mins. Meanwhile, put the golden syrup in a small pan with remaining zest, juice of 1 lemon and the chopped ginger and syrup, then warm until runny. Tip the breadcrumbs into a large bowl, then stir in the warm syrup and eggs.
  • Reduce oven temperature to 180C/fan 160C/gas 4. Slice a little off the bottom of each pear so they stand upright, then space them out in the tin. 200g cold, unsalted butter , cubed
350g plain flour , plus extra for rolling out
½ tsp ground ginger (optional)
100g golden caster sugar
1 egg yolk
400g golden syrup
finely grated zest of 1 lemon and juice of 1⁄2
100g white breadcrumb

Steps:

  • Blitz the butter, flour and ginger, if using, in a food processor until the mix looks like fine crumbs. Stir in the sugar, then add the egg yolk and 2 tsp cold water. Pulse until the dough clumps together, or bring it together with a knife by hand. Turn onto a lightly floured surface and press into a smooth round. Chill for 30 mins or until firm.
  • Roll out the pastry to the thickness of 2 x £1 coins and stamp out 8 x 11cm circles (or cut around a saucer and trim to fit tins). Line 8 x 10cm width heart-shaped tins with the pastry. Re-roll trimmings. With a small cutter, stamp out 8 hearts to decorate. Chill tins and hearts for 15 mins or until firm. Heat oven to 170C/fan 150C/gas 5 and put a baking sheet in.
  • Stir the syrup, lemon juice and zest together. Divide the breadcrumbs between tins (they should reach to the top of the pastry), then spoon the syrup over slowly, adding more once the first lot has started to soak in. Top with the small pastry hearts. Put tins onto the hot baking sheet and bake for 25 mins or until pastry is golden and the filling is orangey-gold and slightly set. Leave to cool for 15 mins, then turn onto a wire rack. Serve just warm. Will keep for up to 3 days in an airtight container. Heat in a low oven for 5 mins to warm through.

250g plain flour , plus extra for dusting
125g unsalted butter , chilled and chopped
75g icing sugar
2 egg yolks
700g golden syrup
50g honey
250g breadcrumbs
½ grapefruit , zest only
100ml red IPA (we used Siren Liquid Mistress)
3 medium eggs
honeycomb , broken into shards (optional)

Steps:

  • To make the pastry, put the flour and butter in a bowl and rub together with your fingertips until it resembles breadcrumbs. Mix in the icing sugar followed by the yolks. If the pastry feels too dry, add 2 tbsp water. Shape into a ball, flatten it out into a disc, wrap it in cling film, then chill for 30 mins.
  • Roll out the pastry on a lightly floured surface until big enough to line a 23cm fluted tart tin, about 3cm deep. Line the tin with the pastry, allowing the edges to overhang. Chill for another 30 mins.
  • Heat oven to 200C/180C fan/gas 6. Line the tart with baking parchment and baking beans. Bake blind for 20 mins. Remove the beans and parchment and bake for 10-15 mins more until the pastry is golden and crisp.
  • While the pastry is cooking, mix the golden syrup, honey, breadcrumbs, grapefruit zest, beer and eggs together in a large jug or bowl.
  • Lower oven to 160C/140C fan/gas 3. Use a small serrated knife to trim the pastry edges, then fill with the treacle mixture. Bake for 55 mins-1 hr until golden. Scatter over the honeycomb shards before serving, if you like.

320g sheet ready-rolled shortcrust pastry
750g golden syrup
175g fresh breadcrumb
120g rolled oats
zest and juice 1 lemon
3 large eggs , beaten

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line the base and sides of a 20 x 30cm baking tin with 2 criss-crossed strips of baking parchment. Unroll the pastry and sit in the centre of the tin so that it lines the base, and evenly comes up the sides a little. Lay a sheet of greaseproof paper (not parchment) on top. Add some baking beans, then bake for 20 mins. Remove the beans and paper and bake for 10 more mins until pale but biscuity, then lower the oven to 180C/160C fan/gas 4.
  • Mix the golden syrup, breadcrumbs, oats, lemon zest and juice and the eggs. Tip into the pastry, spread evenly, then bake for 40 mins until golden brown and set. Cool, then slice into bars. Will keep in a tin for up to five days.

LIGHTER TREACLE TART

This traditional favourite is a perfect way to end a decadent meal- but our version is made lighter with extra apple and half-fat crème fraîche

225g ready-made shortcrust pastry
flour , for dusting
1 medium egg
3 tbsp half-fat crème fraîche
175g golden syrup
1 tbsp black treacle
1 small eating apple such as Cox's (total weight 140g), cored, peeled, coarsely grated
50g fresh white breadcrumb
1 lemon

Steps:

  • Heat oven to 200C/180C fan/gas 6. Roll the pastry out thinly on a lightly floured surface. Line a 23cm round x 2.5cm deep fluted flan tin, easing the pastry into the tin and the flutes carefully so you don't stretch it. Roll a rolling pin over the top of the tin to trim off any excess pastry. Prick the pastry base lightly with a fork. Chill for 10 mins while the oven heats up.
  • Put the flan tin on a baking sheet. Line the pastry with foil and baking beans, and bake for 12 mins until the pastry is set. Remove the foil and beans from the pastry case, and bake for another 5 mins until the pastry is very pale golden. Remove and lower the oven to 180C/160C fan/gas 4.
  • While the pastry is baking, make the filling. Beat the egg in a medium bowl, then stir in the crème fraîche, golden syrup, treacle, apple and breadcrumbs. Finely grate the zest from the lemon and stir into the filling mix with 1 tbsp lemon juice. Leave to stand for 10-15 mins so that the breadcrumbs can absorb the other ingredients slightly.
  • Pour the filling into the pastry case and bake for 30 mins or until the filling is softly set. Remove the tart and let it cool a little to firm up. Remove from the tin and serve warm or cold.

200g plain flour, plus extra for dusting
50g golden caster sugar
100g ground almonds
175g cold butter, cut into cubes
2 egg yolks (freeze the whites for another recipe)
clotted cream, to serve
250g brioche, blitzed to fine crumbs in a food processor
454g golden syrup
1 lemon, zested
2 eggs
½ tsp ground ginger
large pinch of ground cloves

Steps:

  • Mix the flour, sugar and ground almonds together in a bowl. Rub in the butter with your fingertips until the mixture is crumbly, then mix in the egg yolks. If the pastry is still too dry, add up to 1-2 tbsp cold water until it comes together. Knead briefly, then form the dough into a ball and flatten into a disc with your hands. Wrap well, then chill for at least 30 mins.
  • Roll the pastry out on a lightly floured surface to a 5mm thickness, then lift into a 22cm tart tin. Press into the base and up the side using a piece of excess floured pastry to help, leaving some overhanging the rim. If it cracks anywhere, patch it with the leftover pastry. Chill for at least 30 mins, or freeze for 10 mins.
  • Heat the oven to 200C/180C fan/gas 6. Prick the pastry case all over with a fork, line with baking parchment and fill with baking beans. Put on a baking tray and bake for 20 mins, then remove the parchment and beans and bake for 10 mins more. Remove from the oven and lower the temperature to 180C/160C fan/gas 4.
  • For the filling, tip the crumbs into a dry pan and toast over a medium heat, tossing until lightly brown. Tip into a bowl with the rest of the ingredients and a large pinch of sea salt. Mix, then scrape into the tart case. Bake for 30-35 mins until set with a slight wobble in the middle. Leave to cool until just warm or completely cold. Will keep for two days covered at room temperature. Serve with clotted cream.
