- Preheat oven to 350 degrees F.
- Heat a large 12-inch oven-safe skillet over medium-high heat and add smoked sausage, cook until brown. Add garlic, onion and bell pepper. Lower heat to medium and stir until vegetables are soft, about 5 minutes.
- Stir in cooked tortellini, oregano, marinara sauce and one cup of cheese. Top with remaining cheese. Bake in the oven for about 10 minutes until cheese is melted and bubbly.

- In 12-inch skillet, cook sliced sausage, onion and garlic 5 to 7 minutes or until onion softens and sausage starts to brown.
- Stir in sauce, tomatoes, chicken broth and tortellini. Cover and simmer 8 to 10 minutes, stirring occasionally, until tortellini is cooked.
- Remove from heat; sprinkle with cheese and basil. Serve when cheese has melted.

- 1. Kielbasa: In a large skillet heat up olive oil, place sausage in and brown..it is already cooked so you are just browning and heating through. Turn down heat, add garlic and spices.
- 2. Pasta: Boil in salted water..I'm pretty sure directions say for 7 minutes..I normally only do it for 5 or 6..I HATE over cooked pasta and it cooks a little more once you mix it into skillet with kielbasa. Once cooked strain and add to skillet with sausage. Toss around on low heat for several minutes. Turn off heat and add cheese to taste. If it seems a little dry add a drizzle of olive oil.

- Heat the olive oil in a large Dutch oven over medium-high heat. Add the kielbasa, garlic, onion, thyme, and red pepper flakes and saute until browned, about 12 minutes. ( I threw the garlic in after about 8 minutes of cooking.. didn't want it to burn.) Add the broth and tomatoes and bring to a boil . Reduce heat to low and simmer for 15 minutes. Add the beans and tortellini to the soup. Simmer until the pasta is just tender to the bite, about 10 minutes. Stir the spinach into the soup and turn off the heat; let stand for about 2 minutes. Ladle the soup into bowls and sprinkle with Parmesan cheese before serving. ** Please note , add tortellini at another time if you aren't going to eat this all right away. It will become mushy if stored and absorbs some of the soup. I recommend boiling it as needed al dente, then throwing it in the soup for a couple of minutes.
BEER-CHEESE KIELBASA WITH TORTELLINI
Steps:
- Fill 12-inch nonstick skillet half full with water (about 6 cups). Heat to boiling. Add tortellini; cook uncovered minimum time as directed on bag, stirring occasionally. Drain.
- In 1-cup measuring cup, stir 3/4 cup water and the flour with whisk until smooth; pour into same skillet. Stir in beer, green onions, chili sauce, mustard and salt. Heat to boiling. Reduce heat; simmer uncovered 1 minute, stirring constantly, until thickened.
- Gently fold in tortellini and kielbasa. Cover; cook over medium-low heat about 5 minutes or until kielbasa is hot.
- Fold in cheese, 1/2 cup at a time, until melted. Remove from heat; top with roasted peppers.

- Heat oil in heavy large pot over medium-high heat. Add next 6 ingredients and sauté until vegetables are soft and kielbasa is brown, about 12 minutes. Add broth and bring to boil. Stir in kale and cannellini. Reduce heat to low and simmer until kale is wilted, about 4 minutes. (Can be made 1 day ahead. Cool slightly; cover and refrigerate. Bring to simmer before continuing.) Add tortellini to soup. Simmer until pasta is just tender but still firm to bite, about 5 minutes.
- Ladle soup into bowls. Serve, passing cheese separately.
