SWISS STEAK RECIPE

This was one of the favourite meals my mother made for us when I was growing up. I made it for my own family as well and my children still request it when I have an opportunity to cook for them. It goes wonderfully with mounds of fluffy mashed potatoes.

1 ½ pounds of beef round steak, cut into serving sized pieces
½ cup of all-purpose flour
Salt and black pepper to taste
1 TBS butter
1 TBS canola oil
1 fat clove of garlic, peeled and crushed
2 large onions, peeled and thinly sliced
4 cups of canned plum tomatoes in tomato juice, undrained
1 tsp Worcestershire Sauce
A splash of hot sauce (optional)

Steps:

  • Season the pieces of steak all over with some salt and pepper. Sprinkle with flour and pound the flour into the steak using the side of a bread and butter plate. Keep doing this on both sides of the pieces of steak until no more flour can be absorbed. This is what makes the meat meltingly tender.
  • Melt the butter and canola oil together in a large deep skillet. Brown the pounded and floured pieces of steak in the hot fat on both sides, working in batches until all of the meat is browned, and removing to a plate as it is done.
  • Add the onions to the pan drippings and sauté until they are beginning to soften. Add the garlic and cook for about 30 seconds then pour in the tomatoes, along with their juices, and the Worcestershire sauce. I like to break the tomatoes up roughly with my hands.
  • Season to taste with salt and pepper, and hot sauce if desired. Return the steak to the pan, submerging it in the tomato sauce.
  • Cover tightly and simmer over a low heat for 1 ½ to 2 hours at which time the steak will be very tender and the sauce nicely thickened. Check it periodically to make sure there is enough liquid in the pan. If you think that it needs more, feel free to add a bit of beef stock or hot water.

Steps:

  • 1. I cut the beef steak into strips. Add garlic powder, onion powder, salt, & pepper. Add in the chopped onion.. Cook on medium to high until browned. Once you see its cooked & brown in color. Add the can or 2 (if you want more tomatoes) of tomatoes.(make sure the whole tomatoes are cut & add the juice) Let that sit on medium to low heat to let it soak up the flavor. Cook for about 10 more minutes.
  • 2. Cook the rice as shown on box. As much as you want.. Pour tomato smothered steak over your rice.

2 Ib beef bottom round, trimmed of excess fat
2 tsp kosher salt
1 tsp freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
1 large onion, thinly sliced
2 cloves garlic, minced
2 stalks of celery, chopped
1 tbsp tomato paste
1 (14.5-ounce) can of diced tomatoes
1 tsp smoked paprika
1 tsp dried oregano
1 tbsp Worcestershire sauce
1 1/2 cups beef broth

Steps:

  • Preheat the oven to 325 F.
  • Slice the meat 1/2-inch thick with the grain and season with salt and ground black pepper on both sides.
  • Fill a pie pan with the flour.
  • Dredge both sides of the slices of meat in the flour until coated.
  • Use a needle meat tenderizer to tenderize the meat until each slice is 1/4-inch thick.
  • Put the slices aside and dredge them with the flour again until coated on both sides.
  • Set a 4 to 5-quart Dutch oven over medium-high heat with the vegetable oil or bacon drippings.
  • Add the steaks to the Dutch oven once the oil begins to shimmer, being careful not to crowd the Dutch oven.
  • Cook until golden brown, about 2 minutes on each side.
  • Once all the steaks have been browned, remove them to a plate.
  • After removing the last steaks from the pot, add the onions, garlic, and celery, and cook them for 1 to 2 minutes.
  • Stir the tomato paste into the mixture. Then, add the tomatoes, paprika, oregano, Worcestershire sauce, and beef broth, and stir well.
  • Add the meat back to the pot, submerging it in the liquid.
  • Place the pot on the middle rack of the oven and cover it.
  • Bake until the meat is tender, about 1 1/2 to 2 hours.
  • Serve and enjoy with your favorite sides.

1 1/2 pounds sirloin tips (cut into ​pieces or strips)
4 tablespoons flour
2 tablespoons vegetable oil or extra virgin olive oil
1 large green bell pepper (sliced in strips)
1 large onion (quartered and sliced)
1 can (4 ounces) sliced mushrooms (drained, optional)
1 can (14.5 ounces) diced tomatoes
3 tablespoons low sodium soy sauce
1/2 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper
1/4 teaspoon crushed red pepper (optional)

Steps:

  • Put the steak pieces in a bag with the flour and shake to coat.
  • Heat the vegetable oil in a large skillet or sauté pan over medium-high heat (or the crock pot insert if it is stovetop safe) and brown the steak pieces on all sides. Place the steak in the crock pot insert if you didn't use it for browning it.
  • To the steak add the bell pepper, sliced onion, and drained sliced mushrooms, if using.

¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds beef round steak, cut 1-inch thick
2 tablespoons vegetable oil
¼ cup water, or as needed
1 (14.5 ounce) can diced tomatoes
½ cup minced green bell pepper
1 teaspoon onion powder
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.
  • Heat vegetable oil in a large skillet over medium heat; cook the floured beef in the hot oil until browned on both sides, about 15 minutes. Reduce heat to low, pour in water, cover skillet, and simmer beef until tender, about 1 hour. Add more water to the skillet if needed to prevent burning.

4 bacon slices
2 tablespoons vegetable oil, divided
1 1/2 pounds chuck eye or blade steaks
1/2 cup all-purpose flour
2 cups thinly sliced onion
1 cup water

Steps:

  • Cook bacon in 1 tablespoon oil in a large heavy skillet over medium heat until crisp. Drain on paper towels, reserving fat in skillet, then crumble.
  • Meanwhile, pound steaks 1/4 inch thick between sheets of plastic wrap using flat side of a meat pounder. Snip through any gristle with kitchen shears (to prevent curling), then pat steaks dry.
  • Mix together flour, 1 teaspoon salt, and 1/4 teaspoon pepper and dredge steaks on all sides, shaking off excess.
  • Heat reserved bacon fat over medium-high heat until it shimmers, then brown steaks on both sides in batches; transfer to a plate.
  • Add onion to skillet with remaining tablespoon oil, 1/4 teaspoon salt, and 1/8 teaspoon pepper and cook over medium heat, stirring frequently and scraping up brown bits, until softened and browned, about 10 minutes.
  • Add steaks with any meat juices and water and bring to a boil. Simmer, tightly covered, over low heat until meat is very tender, about 1 1/4 hours. If sauce is thin, transfer meat to a platter and boil until reduced to about 1 cup. Season steaks with salt and pepper. Serve with sauce and sprinkled with bacon.

Steps:

  • Cut beef into 6 serving-size pieces; sprinkle with seasoned salt and pepper. Layer beef and onion in 3- to 4-quart slow cooker. Pour pasta sauce over top.
  • Cover and cook on Low heat setting 8 to 9 hours.

1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 teaspoon onion powder
4 pieces cube steaks (butcher tenderized)
1 cup flour
1/2 cup oil
2 cups water
1 beef bouillon cube
1 large yellow onion, sliced rings

Steps:

  • In small bowl mix 4 seasonings.
  • Place flour in a flat surfaced dish (save unused flour for smothering).
  • Sprinkle front and back side of each steak piece and rub deep into groves of steak.
  • Heat oil to medium high in skillet (cast iron is best).
  • Dredge each piece in flour, press in with finger tips. Re-dredge in flour again and place carefully in hot oil for 1 minute and then turn back heat to medium.
  • Fry steak 4-5 minutes on each side. Remove, drain on a separate plate.
  • Remove all but 2-3 Tbs of oil, over medium high heat, sprinkle with 3 Tbs flour, whisking until well mixed and roux browns.
  • Add water, bouillon cube and remaining seasoning. Mix until gravy begins to thicken slightly. Test taste for spice as this is the time to adjust (salt or water).
  • Replace steak back in gravy and spread onion rings over the tops.
  • Cover and simmer 30-40 minutes.

24 ounces cube steaks
1/2 cup all-purpose flour
1 teaspoon pepper
4 1/2 tablespoons vegetable oil

1 tablespoon beef bouillon granules
