TOMATO-YOGURT CHICKEN CURRY

2 tablespoons peanut or canola oil
1 teaspoon cumin seeds
1 medium red onion, finely chopped
2 bay leaves
One 14.5-ounce can whole plum tomatoes
5 cloves garlic
1 1/2-inch piece ginger, peeled and roughly chopped
4 dried arbol chiles, stems removed
1/4 teaspoon turmeric
1/2 teaspoon paprika
2 pounds skinless, boneless chicken thighs, fat trimmed, halved
2 medium red-skinned potatoes, cut into 1-inch cubes
1 teaspoon honey
Kosher salt
2 tablespoons plain whole-milk yogurt, preferably Greek style
Generous pinch of Garam Masala, recipe follows
Cooked basmati rice, for serving
Chopped fresh cilantro, for topping
1/4 cup green cardamom pods
4 black cardamom pods
3 large cinnamon sticks, preferably Ceylon, broken into pieces
2 tablespoons whole cloves

Steps:

  • Toast the cumin: Heat the oil in a large, deep pot over medium heat until it shimmers. Sprinkle in the cumin seeds and stir; they should sizzle on contact, become fragrant and darken slightly.
  • Caramelize the onion: Immediately add the red onion and bay leaves to the pot. Cook, stirring often, until the onion is dark chestnut brown, 12 to 15 minutes.
  • Make the tomato base: While the onion is cooking, drain the juice from the can of tomatoes into a liquid measuring cup; set aside. Puree the tomatoes, garlic, ginger, chiles, turmeric and paprika in a food processor.
  • Saute the base: Add the tomato base to the onion mixture and cook, stirring, until thick and paste-like, 10 minutes. When the mixture starts sticking to the bottom of the pot, add the chicken and potatoes. Cook, stirring, until the chicken is opaque and the sauce clings to the meat and potatoes, about 5 minutes.
  • Simmer the curry: Add the honey to the reserved tomato juice, then add enough water to make 1 1/2 cups of liquid; pour into the pot. Season with salt to your liking and bring to a boil, then reduce the heat to medium low and gently simmer, uncovered and stirring occasionally, until the potatoes are tender and the sauce is slightly thickened, 25 to 30 minutes.
  • Adjust the seasoning: Gently stir the yogurt into the curry. Taste for seasoning and add salt, if necessary. Sprinkle with the Garam Masala and serve over rice. Top with cilantro.
  • Shell the cardamom: Gently crack open the green and black cardamom pods with a mortar and pestle (or crush them on a cutting board using a heavy pan). Remove the seeds and discard the husks.
  • Grind the spices: Finely grind the cardamom seeds, cinnamon sticks and cloves in a spice or coffee grinder. Store in an airtight container away from direct sunlight for up to 1 year.

1 cup plain yogurt, whisked until smooth
1 tablespoon grated fresh ginger
3 cloves garlic, put through a garlic press or finely minced
Kosher salt and freshly ground black pepper
1 pound boneless, skinless chicken thighs, cut into large bite-size chunks
3 tablespoons butter
Ginger-Garlic Paste, recipe follows
2 teaspoons olive oil
6 cloves garlic, minced
2-inch thumb ginger, peeled and minced
2 serrano pepper, minced (seeds removed if you don't want it spicy)
2 tablespoons tomato paste
2 teaspoons paprika
1 teaspoon garam masala
8 Roma tomatoes, diced
1 1/2 teaspoons kosher salt
2 cups water
1 tablespoon dried fenugreek leaves, optional
1/2 cup heavy cream
Fresh cilantro leaves, minced
Serving suggestion: Cooked rice, warm naan bread or crusty bread.
1/2 cup cloves garlic, whole
1/2 cup fresh ginger, peeled, cut into 1/2-inch slices
1/4 cup canola oil

Steps:

  • For the marinade: In a large bowl, mix together the marinade ingredients. Add the chicken and toss to coat. Marinate at least 30 minutes, or in the refrigerator up to overnight.
  • For the sauce: When you're ready to make the curry, place a large skillet over medium heat and add the olive oil and butter. When the butter has melted, add the Ginger-Garlic Paste and serrano peppers. Saute until lightly browned around the edges. Add the tomato paste and cook until the tomato has darkened in color, about 3 minutes. Add the garam masala and the paprika and saute for about 1 minute to draw out their flavors.
  • Add the tomatoes, salt, and 1 cup water. Bring to a boil, turn down to a simmer, and cook until thickened, about 20 minutes. You may need more water depending on how much liquid the tomatoes give off.
  • Meanwhile, fire up your grill. When it is nice and hot, lightly brush it with oil. Place the chicken on the grill, shaking off some of the excess marinade. Cook until it's charred, about 2 minutes on each side. (Don't worry that the chicken will still be a little uncooked, it finishes cooking in the sauce).
  • Pour the sauce into a blender or food processor, or use an immersion blender, and process until smooth. Pour back into the skillet and bring back up to a boil. Add the chicken and fenugreek leaves, if using. Take the heat down to a simmer and cook for about 10 minutes. Add the cream and stir through. Garnish with minced fresh cilantro, and serve over rice, with naan, or a crusty piece of bread!
  • Throw the garlic, ginger, and canola oil in a mini-food processor and let it go until it forms a semi-smooth paste. There will still be tiny little pieces in there, but overall, it should resemble a paste.
  • Save what you don't use in a small glass jar. It should last in the fridge for 2 to 3 weeks. It's a delicious addition to marinades, pasta sauces, stir fry sauces, slow-cooker recipes, gravy etc. We always had a jar of this stuff in our fridge growing up.

1 ½ lb boneless skinless chicken thighs
1 teaspoon sea salt, divided
½ teaspoon ground black pepper, divided
1 tablespoon olive oil
1 tablespoon garlic, minced
2 teaspoons dried thyme
1 teaspoon dried rosemary
½ cup chicken stock
⅓ cup sun-dried tomato, chopped
1 cup heavy cream
½ cup grated parmesan cheese
2 tablespoons fresh parsley, for garnish
steam cauliflower rice, for serving

Steps:

  • Preheat the oven to 350°F (180°C).
  • Season the chicken thighs on both sides with ½ teaspoon salt and ¼ teaspoon black pepper.
  • Heat a 10-inch cast iron skillet over high heat. Once the skillet is hot, add the olive oil and the chicken thighs. Cook for 3-4 minutes, or until the edges are seared. Remove the chicken from the skillet and transfer to a clean plate.
  • Reduce the heat to medium-low. Add the garlic thyme, and rosemary to the pan and sauté for 2-3 minutes, until fragrant.
  • Pour in the chicken stock, then add the sun-dried tomatoes and heavy cream. Season with the remaining ½ teaspoon salt and ¼ teaspoon pepper. Bring to a simmer and cook for 1-2 minutes, to let the flavors meld, then add the Parmesan cheese and stir until melted.
  • Return the chicken thighs to the skillet, nestling into the sauce. Drizzle some of the sauce over the chicken.
  • Transfer the skillet to the oven and bake for 15 minutes until the chicken is cooked through.
  • Remove from the oven and let sit for 5 minutes, until cooled slightly and the sauce thickens.
  • Garnish with the parsley, then serve the chicken over cauliflower rice with more sauce spooned on top.
  • Enjoy!

A not-too-hot curry with Thai flavours. I absolutely adore this dish. It's better than restaurant quality. Don't leave out the fish sauce, it's the magic ingredient in Thai food and doesn't taste anything like it smells!

2 teaspoons oil
2 onions, chopped
3 crushed garlic cloves, crushed
1 tablespoon chopped gingerroot
1 tablespoon red curry paste
1 tablespoon tomato paste
500 g boneless skinless chicken thighs, cut into strips
400 ml reduced-fat coconut milk
500 g tomatoes, peeled and chopped
2 tablespoons Thai fish sauce
1/4 cup coriander, chopped
1 tablespoon palm sugar or 1 tablespoon brown sugar

Steps:

  • Heat the oil in a large saucepan or pot and sauté the onion, garlic and ginger gently until the onion is soft.
  • Stir in the curry paste and tomato paste and cook for 2 minutes, stirring.
  • Add the chicken and cook for 3 minutes until it's coated in the spice mix and almost cooked.
  • Stir in the coconut milk and bring to the boil.
  • Reduce the heat and simmer for 15 minutes.
  • Stir in the tomatoes, fish sauce, coriander and sugar.
  • Simmer for another 5 minutes.
  • Serve with jasmine rice.

TOMATO AND CHICKEN ROGAN JOSH CURRY (PRESSURE COOKER)

This originates from a recipe from Taste.com.au for Tomatoe and Chicken Korma Curry but we (the DH and I) tweaked to suit out tastes for a Rogan Josh. For this we used Patak's spicy Rogan Josh with a 3 chilli rating but actually found it quite mild and so next time we are planning on adding some fresh hot chillies to add zing (the original recipe also gives instructions for casserole and slow cooker methods). For the onion due to introlerances issues I cut into wedges so the DH could remove so he would not ingest, the original recipe called for 2 large brown onions thinly sliced. TOMATOES in the original they added them just before serving but I cut a cross in the top of each tomato and dropped into boiling water for 1 minute, removed and let cool till could handle and then roughly chopped and added to the pressure cooker when cooking but DH reckoned he would prefer them finely chopped so they dissolved more and became part of the sauce..

390 g Greek yogurt or 1 1/2 cups Greek yogurt
140 g curry paste (Rogan Josh we used Patak's spicy 3 chilli rating)
2 1/4 kg boneless skinless chicken thighs (trimmed of fate and I cut each into 3 pieces)
1 tablespoon vegetable oil
1 onion (brown large cut into wedges see intro)
2 large tomatoes (coarsely chopped see intro)
100 g baby spinach leaves (I used silverbeet sliced)
1/2 cup coriander leaves (I omitted serve as garnish) (optional)

Steps:

  • Combine the yoghurt and curry paste in a large glass or ceramic bowl (I ended up using stainless steel as it was the only bowl that was big enough) and then add the chicken to coat and cover with plastic wrap and place into the fridge for 30 minutes to marines (mine was in for nearly 1 1/2 hours).
  • Heat oil in the pressure cooker (though I did it in a separate frypan as I was making ahead but use the pressure cooker if you are going to be cooking the chicken straight away) and add onion and cook until golden, this took me about 10 minutes but I had wedges of onion, if thinly sliced would take about 3 to 5 minutes.
  • Add the cooked onion and diced tomatoes (see intro) to your marinated chicken mix and place in the pressure cooker, (at this point I used an electric pressure cooker), I sealed in the pressure cooker and set the timer for high pressure for 15 minutes, it took 18 minutes to come up to pressure and then cooked for 15 minutes and then did fast release and then served over rice and with steamed vegetables and naan bread on the side (original recipe recommended pappadums).

GARAM MASALA TOMATO CHICKEN CURRY

I'm very fond of curries; I've made many. The first time I tried this, it was a bit on the spicy side but -more than that- suffering from too much liquid. The Garam Masala didn't really work with that amount of fluidity ... even when thickened. I realized the the spice blend needed to be hot, yes, but it also needed more natural sweetness and less liquid. This version achieved that, muchly.

2 tablespoons sesame oil
3 medium white onions, frenched
8 ounces dried apricots, finely chopped
3 large carrots, cut on the bias into 1-inch - 2-inch pieces
3 tablespoons gingerroot, peeled and minced

1/4 teaspoon black pepper
2 lbs chicken thighs, cut into 1-inch pieces

1 head cauliflower, chopped into bite-size florettes

Steps:

  • In a large pot, heat the sesame oil over a medium flame until hot. Add the onion, dried apricots, carrot, ginger root, and garlic; stir occasionally and cook until the onion turns translucent. Add salt and pepper to taste (about a pinch) but be careful not to brown the onions.
  • Mix the chicken thigh meat with the cayenne pepper and half of the Masala; stir the seasoned meat into the vegetables. Cook until the chicken is opaque.
  • Add the tomatoes and garbonzo beans; stir into the meat and vegetables. Cook until the liquid of the tomatoes comes to a simmer.
  • Add the cauliflower, coconut milk, and remaining Masala. Bring to a simmer and reduce the heat to "low". Cover with a tight-fitting lid and cook for 20 - 30 minutes.
  • Remove the cover, increase the heat to "medium" and reduce the thickness of the broth to a desired consistency.
  • Ladle equal portions into bowls with either Basmati rice or potatoes.

1 green chile, very finely diced
2 ginger-garlic, tsp
2 veg oil, tbsp
2 onions, finely diced
1 turmeric, tsp
1 coriander, tsp
1 cumin, tsp
1 garam masala, tsp
1/2 red chile pwdr, tsp
1 tomato paste (2 tbsp), 1/2 can of chopped tomatoes, tomatoes 4 fresh
1/2 sugar, tsp
1 cilantro, small handful
1/2 inch fresh root ginger, scraped and julienned

Steps:

  • Combine chicken in bowl with green chile and half of ginger-garlic paste. Season with salt and and form into small balls
  • Heat the oil in skillet and add onions x 8-10 min or until very soft. Stir in remaining ginger - garlic and spices. Cook x 5 min adding water as necessary to prevent burning
  • Added the tomatoes and sugar. Pour in 7 ounces of water, season with salt and bring to boil. Slip in the meatballs and bring to boil. Reduce heat and simmer until the meatballs are cooked through the sauce is thicker.
  • Serve hot with cilantro and ginger

2 tablespoons butter
1 onion, chopped
⅔ cup beer
1 (10.75 ounce) can condensed tomato soup
1 teaspoon curry powder
½ teaspoon dried basil
½ teaspoon ground black pepper
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken in a 9x13 inch baking dish. Melt butter in a medium skillet over medium heat. Saute onion, then stir in beer, soup, curry powder, basil and pepper. Reduce heat to low and simmer for about 10 minutes, then pour over chicken.
  • Bake at 350 degrees F (175 degrees C) for 1 hour; sprinkle with cheese for last 10 minutes of baking.
