Chipotle-Honey-Glazed Chicken Wings with Toasted Sesame Seeds and Green Onion image

Yield Serves 4 to 6

Number Of Ingredients 12

1 cup honey
2 to 3 tablespoons pureed canned chipotle chiles in adobo
2 tablespoons Dijon mustard
4 tablespoons ancho chile powder
Kosher salt and freshly ground black pepper
4 tablespoons canola oil
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons Spanish paprika
3 pounds chicken wings
2 tablespoons sesame seeds, toasted
3 green onions, white and green parts, thinly sliced

Steps:

  • Heat your grill to medium-high
  • Whisk together the honey, chipotle puree, 1 tablespoon of the mustard, 1 tablespoon of the ancho powder, 1 teaspoon salt, and 2 tablespoons of the oil in a small bowl. Divide the glaze evenly between 2 bowls, one small, the other large.
  • Stir together the remaining 3 tablespoons of ancho powder with the coriander, cumin, and paprika in a small bowl.
  • Rinse the chicken wings under cold water and pat dry with paper towels. Cut the tips off the wings and discard (or freeze and use for making chicken stock). Cut each wing into 2 pieces through the joint.
  • Place the chicken wings in a large bowl, add the spice rub and the remaining 2 tablespoons oil, and toss to coat. Season with salt and pepper and place the wings on the grill in an even layer. Grill until golden brown and slightly charred, 4 to 5 minutes. Reduce the heat of the grill to medium, turn the wings over, and close the lid of the grill. Continue grilling until just cooked through, 15 to 20 minutes longer, brushing with the small bowl of glaze every few minutes and turning once during the last 10 minutes of cooking.
  • Transfer the wings to the large bowl, brush with the reserved glaze, and toss to coat. Transfer to a platter and sprinkle with the sesame seeds and green onions.

1/3 cup toasted sesame seeds and All- purpose flour
Salt and cayenne to taste
3 pound chicken, cut into serving pieces
1 tablespoon unsalted butter
2 tablespoons vegetable oil
3 tablespoons flour
1 1/2 cups chicken stock, heated
1/2 cup heavy cream or milk
1 tablespoon dijon mustard, or to taste
fresh bread crumbs to taste

Steps:

  • Preheat the oven to 350 F. In a shallow dish combine the sesame seeds, flour, salt and cayenne to taste. Dredge the chicken in the mixture, gently patting the coating onto it. In a large skillet, heat the butter and oil over moderate heat until hot. Add the chicken and cook it for 4 minutes on each side, or until golden brown. Transfer chicken to a platter. Add the flour to the skillet and cook it for 2 minutes. Add the chicken stock and cream and bring the mixture to a boil, stirring. Simmer the mixture until lightly thickened and season with the mustard and salt and pepper to taste. Arrange the chicken in a buttered baking dish, spoon the sauce over it and sprinkle with the bread crumbs. Bake, covered, with foil, for 30 minutes. Uncover and bake for 10 to 15 minutes more.

16 chicken wings, 3 to 3 1/2 pounds, wing tips removed
2 tablespoons vegetable oil
1 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
3 tablespoons sweet chili sauce
3 tablespoons soy sauce
2 teaspoons chili-garlic sauce, such as Sriracha
1 teaspoon dark sesame oil
1/2 teaspoon fresh ginger, grated
1 tablespoon sesame seeds

Steps:

  • Put the wings in a large bowl and evenly coat them with the oil, salt, and pepper. Set aside at room temperature for 20 to 30 minutes
  • before grilling.
  • In a small bowl whisk the glaze ingredients.
  • In a medium skillet over medium heat, toast the sesame seeds until golden brown, 3 to 5 minutes, stirring occasionally. Pour the
  • seeds into a cool container to stop the cooking.
  • Brush the cooking grate clean. Grill the wings over direct medium heat, with the lid closed as much as possible, until the skin turns
  • golden brown, about 10 minutes, turning occasionally and swapping their positions as needed for even cooking. Then lightly brush the
  • wings with the glaze on both sides and grill until the meat is no longer pink at the bone, 8 to 10 minutes, continuing to turn, glaze, and

1/2 cup Toasted Sesame Salad Dressing
2 skinless, boneless chicken breasts
1 cup Toasted Sesame Salad Dressing

Steps:

  • In a small bowl, squeeze out 1/2 cup of the salad dressing. Baste the chickens with the dressing and heat up oil in a skillet on medium. Once oil is heated up, place chicken breasts in skillet. As it is cooking, add the 1 cup sesame dressing in skillet for a sauce. Don't put too much oil in though or else the oil and sesame dressing will goop. When there is no more pink inside, plate the chicken with a salad dressed in the Toasted Sesame Dressing.
