2 tablespoons extra-virgin olive oil
3 Scotch bonnet peppers, minced
1 red pepper, julienned
1 red onion, sliced thinly lengthwise
1 teaspoon curry paste
2 cups fish stock
2 cans coconut milk
3 lobsters, boiled, meat removed and chopped
1/4 cup milk
2 tablespoons unsalted butter
1 can pineapple chunks, juice drained
1 teaspoon kosher salt
2 tablespoons sugar
4 scallions, chopped
1 cup cilantro leaves, chopped, plus extra for garnish
1 cup flaked coconut, toasted
Jasmine Rice, recipe follows
Water
2 cups jasmine rice
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon sugar
Toasted coconut, to taste

Steps:

  • In a large saucepan, heat the olive oil over medium-high heat. Sweat the peppers and onion in the olive oil until they become tender, about 5 to 7 minutes. Add the curry paste, fish stock, and coconut milk to the pan, reduce the heat to a simmer, and cook for approximately 20 minutes. Add the lobster meat to the pan and simmer for another 20 minutes, letting the mixture reduce.
  • Add the milk, butter, pineapple chunks, salt and sugar to the pan and stir with a wooden spoon to combine. Finally, add the scallions and cilantro to the pan and simmer for 2 more minutes. Serve on a bed of jasmine rice and garnish with chopped cilantro and toasted coconut.
  • Bring just enough water to cover the rice to a boil in a medium sized pot over high heat. Add the rice to the pot, lower the heat to medium-low, and cover with a lid. Steam the rice until it is cooked through yet still firm, about 15 minutes. Drain off the excess water, and season with salt, pepper, sugar and coconut, to taste.

  • Melt 4 tablespoons butter in a pot over medium-high heat. Stir in 2 cups converted long-grain rice, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring, until the rice is golden, about 5 minutes. Add 2 cups each chicken broth and water; bring to a simmer, then cover and cook over low heat, 15 minutes. Remove from the heat and let stand 5 minutes. Fluff with a fork and stir in chopped scallions and parsley.

1 1/2 cups water
1 cup jasmine rice, rinsed well
5 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper
4 ounces shiitake mushrooms, stems discarded, caps cut into 1/4-inch-thick slices
2 garlic cloves, thinly sliced
1 tablespoon rice-wine vinegar
1 scallion, cut into 2-inch-long pieces, thinly sliced lengthwise

Steps:

  • Bring water and rice to a boil in a small pot. Reduce heat, cover, and simmer until water is absorbed, about 15 minutes. Remove from heat, stir in 1 tablespoon oil, and season with salt and pepper. Cover, and let stand.
  • Meanwhile, heat remaining 4 tablespoons oil in a large saute pan over medium-high heat. Add shiitakes in a single layer, and cook, stirring often, until browned and crisp, about 3 minutes. Reduce heat to medium, and cook for 2 minutes more. Add garlic, and cook until light gold, about 2 minutes. Stir in vinegar, and season with salt and pepper. Transfer rice to a platter, top with shiitake mixture, and sprinkle with scallions. Serve immediately.

  • Wash rice in several changes of cold water in a bowl until water is almost clear, then drain rice well in a sieve.

2 cloves garlic, minced
1 Tbsp. minced gingerroot
1-1/2 cups jasmine rice, uncooked, rinsed and drained
2-1/4 cups water
1/3 cup KRAFT Asian Toasted Sesame Dressing
2 WYLER'S Reduced Sodium Instant Bouillon Chicken Flavored Cubes
1 bunch green onions, trimmed
2 Tbsp. chopped fresh cilantro

Steps:

  • Heat 2 tsp. oil in large saucepan on medium heat. Add garlic and ginger; cook and stir 2 min. Stir in rice.
  • Add water, dressing and bouillon; stir. Bring to boil, then continue to cook until bouillon is completely dissolved, stirring occasionally. Cover; simmer on medium-low heat 18 to 20 min. or until rice is tender and liquid is absorbed. Remove from heat. Let stand 5 min.
  • Meanwhile, heat broiler. Toss onions with remaining oil on rimmed baking sheet. Broil, 6 inches from heat, 2 to 3 min. or until lightly charred, turning frequently. Cool 5 min.
