EASY OVEN ROASTED POTATOES



Easy Oven Roasted Potatoes image

Simply seasoned, easy oven roasted potatoes make the ideal side dish for a meat and potatoes dinner. A high baking temperature makes the potatoes sizzle and brown nicely.

6 small red potatoes
1/4 cup olive oil
1 1/2 teaspoons salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon onion powder

Steps:

  • Preheat the oven to 450ºF.
  • Clean and cut the potatoes into 1/2"-1" cubes.
  • In a large bowl, toss the potatoes with the oil and spices.
  • Spray a shallow baking pan or cast iron pan with cooking spray or rub lightly with oil. Spread the potatoes in the bottom of the prepared baking pan. Try to have the potatoes in a single layer with space in between for the ultimate crispiness.
  • Bake for 25 minutes, or until potatoes are tender. Stir the potatoes once after about 15 minutes of baking so they brown on all sides. Turn the broiler on low and broil the potatoes for about 5 minutes to brown them even more. This is optional, but it makes the potatoes crispy. Watch the potatoes closely while they are under the broiler so that they don't burn.
  • Serve immediately.

1 (24 ounce) bag unpeeled golden baby potatoes
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon chopped fresh rosemary, or to taste
sea salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine potatoes, olive oil, garlic, rosemary, sea salt, and pepper in a bowl. Toss until potatoes are covered and garlic is evenly distributed. Transfer to a rimmed baking sheet.

3 pounds small red or white potatoes
1/4 cup good olive oil
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced garlic (6 cloves)
2 tablespoons minced fresh parsley

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.

1kg waxy potato, such as Maris Peer or Desirée
6-8 tbsp sunflower or olive oil

Steps:

  • Cut 1 kg waxy potatoes into chunks.
  • Bring a large pan of water to the boil, then cook the potatoes for 3 mins. Drain, shake out onto a kitchen paper-lined tray and leave to cool.
  • When ready to serve, heat 6-8 tbsp sunflower or olive oil in a large non-stick frying pan until you can feel a strong heat rising.
  • If your pan isn't large enough, fry the potatoes in two batches - rather than crowding them. Have kitchen paper ready to drain them on. Add the potatoes in a single layer, not too tightly packed.
  • Turn the heat to medium-high, so that the potatoes sizzle, but don't stir until they start to brown underneath.
  • Turn them all evenly 2 or 3 times until nicely browned all over - this can take about 7 mins.
  • Then lift out with a fish slice or large slotted spoon to drain on more kitchen paper. Sprinkle with sea salt.
