Time 1h20m

Number Of Ingredients 6

2 lbs ground beef ((ground chuck is preferred, or use a ground beef/ground pork combo))
1 1/2 cups quick oats ((or plain breadcrumbs))
1/2 cup white onion ((or yellow onion, finely diced))
3 large eggs
1 Tbsp meatloaf seasoning ((see recipe, or use 1 packet store-bought seasoning mix))
1/3 cup ketchup ((plus more for topping the meatloaf if desired))

Steps:

  • Preheat your oven to 350°F (175°C) and lightly grease a 9x5 loaf pan or line a rimmed baking sheet with parchment paper.
  • In a large mixing bowl, add the ground beef, quick oats, diced onion, eggs, meatloaf seasoning, and ketchup. Mix until just combined, do not over-mix.
  • Transfer the meatloaf mixture into your prepared loaf pan then shape so that the loaf is mounded at the top. Or transfer the loaf mixture to your baking sheet and form it into a loaf approximately the same size as a loaf pan (9x5-inch).
  • Bake at 350°F (175°C) for 50 minutes, remove from the oven and coat with an additional 1/3 cup of ketchup or BBQ sauce if desired. Return to the oven and finish cooking for an additional 10-20 minutes. Your meatloaf is done when it has an internal temperature of 160°F (71°C).
  • Remove from the oven when done, drain off the excess grease, and then allow your meatloaf to rest for 10 minutes before slicing and serving.

THROW-IT-TOGETHER MEATLOAF

Throw-It-Together Meatloaf image

This is a really easy meatloaf. I like it because it stands up well for sandwiches the next day. You can adjust the seasonings or meat combination, if you wish. I added diced tomato, because I had one I wasn't using, and it turned out pretty well. It really added to the flavor and appearance of the loaf. Great for a comfy dinner or make solely for sandwiches.

EASY CHEESY MEATLOAF

Easy Cheesy Meatloaf image

This recipe is so easy that I can put all the ingredients on the same shelf in the refrigerator and have my husband throw it together on soccer practice nights. It can also easily be assembled and refrigerated to pop into the oven after work. I keep wondering what it would be like as leftovers, but there is never any left!

Categories     Entree

Time 1h25m

Yield 4

Number Of Ingredients 12

1 lb lean (at least 80%) ground beef
1 clove garlic or 1/8 teaspoon garlic powder
1 small onion
2 slices bread with crust
1/4 cup milk
2 teaspoons Worcestershire sauce
1 teaspoon chopped fresh or 1/4 teaspoon dried sage leaves
1/4 teaspoon salt
1/4 teaspoon ground mustard
1/8 teaspoon pepper
1 large egg
1/3 cup ketchup, chili sauce or barbecue sauce

Steps:

  • Heat the oven to 350°F. In a large bowl, break up the beef into small pieces, using a fork or spoon.
  • Peel and finely chop the garlic. Peel the onion, and chop enough of the onion into small pieces to measure 3 tablespoons. Wrap remaining piece of onion, and refrigerate for another use. Add the garlic and onion to the beef.
  • Tear the bread into small pieces and add to beef mixture.
  • Add the milk, Worcestershire sauce, sage, salt, mustard, pepper and egg to the beef mixture. Mix with a fork, large spoon or your hands until the ingredients are well mixed.
  • Place the beef mixture in an ungreased baking pan. Shape the mixture into an 8x4-inch loaf in the pan, then spread the ketchup over the top.
  • Bake uncovered 50 to 60 minutes until meat and juices are no longer pink or until a meat thermometer inserted in the center of the loaf reads 160°F and center of loaf is no longer pink*. Let the loaf stand 5 minutes so it will be easier to remove from the pan. Remove loaf from pan and cut into slices.
