Three Cheese Crostini with Honey image

Number Of Ingredients 8

1 French baguette, sliced on an angle
Olive oil, for drizzling
4 ounces goat cheese
4 ounces mascarpone
4 ounces ricotta
1 teaspoon lemon zest
Kosher salt and cracked black pepper
Acacia honey, for drizzling

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the baguette slices on a sheet tray and drizzle with olive oil. Toast just until crispy and golden brown, about 5 minutes.
  • Meanwhile, in a mixing bowl, combine the goat cheese, mascarpone, ricotta and lemon zest, and season with salt and pepper.
  • Remove the toasts from the oven and spread the herbed cheese generously over each toast. Drizzle with honey and serve warm.

1 French bread baguette (1 pound), cut into 36 slices
2 cups shredded Monterey Jack cheese
2/3 cup mayonnaise
1/2 cup sliced almonds, toasted
6 bacon strips, cooked and crumbled
1 green onion, chopped
Dash salt
Additional toasted almonds, optional

Steps:

  • Place bread slices on an ungreased baking sheet. Bake at 400° until lightly browned, 8-9 minutes. , Meanwhile, in a large bowl, combine the cheese, mayonnaise, almonds, bacon, onion and salt. Spread over bread. Bake until cheese is melted, 7-8 minutes. Sprinkle with additional almonds if desired. Serve warm.

3/4 pound fresh Brussels sprouts, trimmed and thinly sliced
1/4 cup olive oil, divided
1/4 teaspoon ground nutmeg
1/4 teaspoon sea salt
1/4 teaspoon pepper
1 package (4 ounces) crumbled feta cheese
1/3 cup whipped cream cheese
1 French bread baguette (10-1/2 ounces), cut in 1/2-inch slices
1 cup shredded Gruyere cheese
Garlic oil, optional

Steps:

  • Preheat oven to 400°. Toss together Brussels sprouts, 2 tablespoons olive oil, nutmeg, salt and pepper; place on a foil-lined 15x10-in. baking pan. Roast, stirring once, until tender and browned, about 20 minutes., Process feta and cream cheese in food processor until smooth. Place bread slices on a foil-lined baking sheet. Brush with remaining olive oil; broil until just golden, 1-2 minutes. Spread bread slices with feta cheese mixture; top with Brussels sprouts. Sprinkle with Gruyere cheese. Broil 5-6 in. from heat until cheese is melted and starting to brown, 1-2 minutes. If desired, drizzle with garlic oil. Serve immediately.
