6 tablespoons butter, softened, divided
8 slices sourdough bread
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
4 ounces Brie cheese, rind removed and sliced

Steps:

  • Spread 3 tablespoons butter on 1 side of bread slices. Toast bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, mix together mayonnaise, Manchego cheese, onion powder and remaining 3 tablespoons butter. In another bowl, combine cheddar, Monterey Jack and Gruyere. , To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie. Sprinkle cheddar cheese mixture evenly over Brie. Top with remaining bread slices, toasted side facing inward. Spread mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until bread is golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.

2 slices white sandwich bread, such as country white bread
4 teaspoons salted butter, at room temperature
4 slices American cheese

Steps:

  • Preheat a griddle or nonstick skillet to medium-low. Spread 2 teaspoons of the butter on one side of a bread slice. Repeat with the remaining butter and bread. Place one of the slices butter-side down and shingle the cheese on top, covering the entire surface. Top with the other slice of bread, butter-side up.
  • Place the sandwich on the griddle and cook until the bottom is golden brown and crisp, 3 to 4 minutes. If the bread is browning too quickly, shift the griddle off the heat. Flip the sandwich, then cover with a small metal bowl and cook until the bottom is golden brown and the cheese is melted, 3 to 4 minutes. Once golden brown on both sides, toast the edges of the sandwich, if desired. Transfer to a cutting board, cut in half on the bias and serve immediately.

ΒΌ cup butter, softened
1 cup freshly grated Parmigiano-Reggiano cheese
8 slices cooked bacon
4 slices Cheddar cheese
8 slices sourdough bread

Steps:

  • In a small bowl, mash together the butter and Parmesan cheese until evenly blended. Make sandwiches by placing two slices of bacon and one slice of Cheddar cheese on half of the bread slices. Top with the remaining slices of bread.
  • Heat a large skillet over medium heat. Spread some of the butter mixture on the top of each sandwich. Place sandwiches butter side down in the skillet. There are times in our daily lives when we just have a case of the blues & nothing is as therapeuitc for it as a grilled cheese sandwich - the ultimate comfort food! This unique grilled cheese sandwich uses blue to cure the blues & puts a bit of an Italian twist on an otherwise British effort .. hence the Godfather title. I can't recall now where the idea originated, but I've been playing w/it for quite a while & have modified it from the original to suit our preferences. I suggest you try it - it may work well as a blues preventative for you too!

4 ounces cream cheese (softened)
2 ounces blue cheese (crumbled)
3 ounces bacon (cooked crisp & crumbled)
3 ounces fresh tomatoes (diced, use only tomato meat or pulp)
4 tablespoons Italian salad dressing
8 slices bread

Steps:

  • Combine the cream cheese w/the blue cheese & mix well to a smooth consistency.
  • Add crisped bacon pieces & diced tomato to the cheese mixture & mix just well enough to achieve a good distribution.
  • Put 8 slices sandwich bread on your cutting board or counter. Using a pastry brush, brush approx 1/2 tbsp of the Italian salad dressing on ea slice of bread.
  • Turn over 4 slices of the bread & spread 3 oz of the cheese mixture on those 4 slices (You should have 12 oz of cheese mixture for this).
  • Top ea of those slices w/the other 4 slices so all the exposed bread surfaces are the ones spread w/the Italian salad dressing.
  • Grill your sandwiches & enjoy!

More about process than ingredients, Dad very carefully taught me how to make his grilled cheese sandwiches this way so that they came out perfect every time. :)

2 pieces sourdough bread or 2 pieces potato bread
3 slices cheddar cheese (Tillamook or your favorite, but Tillamook is so darned good! Real Cheddar from England would be acc)
2 tablespoons butter

Steps:

  • Cut the slices of cheddar cheese; not too thick, but not skimpy, either; cut one slice in half.
  • Take the two slices of bread and generously butter each of them on one side.
  • Heat up a cast iron skillet over medium heat.
  • Get yourself the cover from a Revereware saucepan, or another cover of about the same size.
  • Place one of the slices of bread, butter side down, in the hot skillet.
  • Spread 2 and a half slices of cheese on the bread, then cover it butter-side-up with the other slice of bread; eat the extra, unused half of the cheese slice.
  • Push the bread down a little with the metal spatula, then cover the whole thing up with the saucepan lid (the idea is to heat the air up underneath the lid and melt the cheese faster as you're also browning the bread).
  • Uncover every minute and check the cooking bread color- you want it golden, not burnt (no matter what Mom says - she likes 'em black for some reason).
  • When it's to the color you like, carefully flip the sandwich over, press down on it with the spatula to squish the bread and cheese together, and re-cover with the saucepan to continue melting the cheese.
  • After about 3-5 minutes of slow cooking, you'll have a wonderfully golden, melty, gooey grilled cheese sandwich!
