30 MINUTE THAI PEANUT CHICKEN RAMEN



30 Minute Thai Peanut Chicken Ramen image

All made in one pot, using healthy, pantry staple, ingredients. It's creamy, spicy, filled with veggies, lean chicken, and ramen noodles. Perfect for a cold night in, after a long busy day!

Number Of Ingredients 17

4 cups low sodium chicken broth
1 can (14 ounce) coconut milk
1/4 cup low sodium soy sauce
2 tablespoons fish sauce
2 tablespoons honey
1/3 cup creamy peanut butter
1/4 cup Thai red curry paste
3/4 pound boneless, skinless chicken breasts
8 ounces cremini mushrooms, sliced
2 red bell peppers, chopped
1 inch fresh ginger, grated
1 clove garlic, minced or grated
2-4 squares ramen noodles
juice of 1 lime
3 cups fresh baby spinach
1/3 cup fresh basil or cilantro, roughly chopped, plus more for serving
chopped peanuts and toasted sesame oil, for serving

Steps:

  • 1. In the bowl of the instant pot, combine the chicken broth, coconut milk, soy sauce, fish sauce, honey, peanut butter, and curry paste. Add the chicken, cremini mushrooms, red peppers, ginger, and garlic. Cover and cook on high pressure for 10 minutes.2. Once done cooking, use the natural or quick release and release the steam. 3. Set the Instant pot to sauté. Shred the chicken, it should fall apart. Stir in the noodles, lime juice, spinach, and cilantro. Let sit 5 minutes or until the noodles are soft. 4. Ladle the soup into bowls and top with peanuts and toasted sesame oil. Enjoy!

Set over medium heat on the stove and bring to a simmer, reduce the heat to medium-low and simmer 15 minutes or until the chicken is cooked through and shreds easily.2. Thai Chicken Ramen image

This Chicken Ramen so easy to throw and it's packed with flavor! It's a comforting Thai flavored soup that's packed with veggies, tender pieces of chicken and a creamy coconut broth. Then it's finished with peanuts and sesame seeds for a delicious crunch for contrast.

1 Tbsp vegetable oil
1 red bell pepper (, thinly sliced then diced into 1 1/2-inch pieces)
1 cup matchstick carrots
4 green onions (, divided, sliced)
1 Tbsp Thai green curry paste
4 cups water
1 (14 oz.) can can light coconut milk
1 Tbsp fish sauce
2 (3.53 oz) pkgs. Nissin RAOH Umami Tonkotsu Flavor
10 oz cooked chicken breast (, shredded (from 1 lb raw, once cooked it reduces to 10 oz))
1 Tbsp fresh lime juice
1/2 cup roughly chopped cilantro (, divided)
1/3 cup Unsalted peanuts, (chopped (optional))
1 tsp Sesame seeds ((optional))

Steps:

  • Heat oil in a large pot over medium-high heat. Add bell pepper, carrots and 3 of the green onions, saute 1 minute.
  • Add Thai green curry paste and saute 1 minute longer. Stir in water and coconut milk and fish sauce and bring mixture to a boil.
  • Add in ramen, cover pot and boil 4 minutes, stirring once halfway through. Meanwhile add seasoning packets from ramen to a bowl.
  • Ladle out 1 cup of the water mixture from soup and stir into seasonings in bowl then return to pot.
  • Stir in shredded chicken lime juice and 1/4 cup of the cilantro.
  • Divide among 4 bowls then top with more cilantro, remaining green onion, peanuts and sesame seeds. Serve immediately.

1/4 cup(s) fish sauce
3 slice(s) ginger
4 clove(s) garlic
2 stalk(s) lemon grass bruised
6 - red chili peppers
1 - boneless skinless chicken breast cut thin
1/2 cup(s) brown sugar
1 cup(s) bean sprouts
1/2 cup(s) daikon radish cut into matchsticks
1 bunch(es) green onions chopped
1 cup(s) fresh cilantro chopped
1 package(s) ramen noodles

Steps:

  • Place the chicken stock, fish sauce, ginger garlic, lemongrass and red chilies in a large pot. Bring to a boil and reduce to a simmer and simmer 15 minutes. Strain the broth and discard the solids.
  • Add the brown sugar and chicken cook 2 minutes. Add the ramen noodles if it comes with a packet you can use it or not. Cook until noodles done. Top with remaining ingredients and serve.

TOP RAMEN WITH CHICKEN



Top Ramen With Chicken image

This is how I make Top Ramen. For some reason, I like the texture of Top Ramen better than proper soba noodles.

2 boneless skinless chicken breasts
2 tablespoons sesame oil
3 tablespoons shoyu
1 tablespoon rice vinegar
1 garlic clove, minced
2 teaspoons honey
2 (3 ounce) packages Top Ramen noodles
1/3 cup shoyu or 1/3 cup dark soy sauce
1/3 cup rice vinegar, unseasoned
2 teaspoons ground ginger
2 tablespoons honey
1 piece konbu, about 2 inches square
1 cup frozen broccoli or 1 cup mixed vegetables

Steps:

  • Cut the chicken into chunks, or thin slices, depending on how you like it to look. This is easiest if the chicken is still half frozen.
  • Heat a skillet slightly. Add the first set of oil, shoyu, vinegar, garlic, and honey. Once it is warm enough that the honey melts, add the chicken. Cook over medium heat.
  • Brown chicken until it is very dark. I like mine just before it burns.
  • Once the meat starts to brown, let it cook for a while. Meanwhile, make the soup.
  • Add the second set of shoyu, vinegar, ginger, and honey to a sauce pan. Add enough water that noodles will just be covered. Heat water until the honey is mixed in completely.
  • This is when you want to adjust to taste. I find the soup is different every time. Partly because I don't measure, but partly because it depends on the honey.
  • Add the konbu (a type of seaweed) to the soup, if desired.
  • Add the frozen veggies.
  • Heat to a boil. Remove konbu.
  • Add noodles (but throw away the icky spice packet) and boil for three minutes. If the chicken isn't done, hold off on adding the noodles to the water. They'll get soggy otherwise.
  • Place noodles in two bowls with a small amount of broth. Add chicken on top. Garnish with chopped peanuts or pickled ginger.
