1/4 pound ground pork
2 thin onion slices
2 tablespoons stir-fry sauce
1 teaspoon minced fresh cilantro
1/8 teaspoon crushed red pepper flakes
3/4 cup coleslaw mix
1 to 2 flour tortillas (7 inches)

Steps:

  • In a large skillet, cook pork over medium heat until no longer pink; drain. Add onion; saute for 1 minute or until crisp-tender. Add the stir-fry sauce, cilantro and red pepper flakes; cook for 1 minute. Add coleslaw mix; cook 2 minutes longer or until crisp-tender. Spoon filling down the center of tortilla. Fold end and sides over filling.

DH and I are eating much healthier now days and this recipe totally fits the bill. I found the basic ingredients on a package of lean ground pork. (which by the way is lower in fat then ground turkey or chicken and delicious) Quick, easy, healthy and full of flavor!

Number Of Ingredients 14

1 1/4 lbs ground lean pork
1 tablespoon fresh gingerroot, grated (I used jarred)
1 garlic clove, peeled and crushed
1 small onion, thinly sliced
2 cups coleslaw mix
3 tablespoons soy sauce
1 teaspoon sesame oil
2 tablespoons lime juice
1 tablespoon honey
2 teaspoons ground coriander
1/2 teaspoon crushed red pepper flakes
1 tablespoon hot chili sauce (optional)
4 burrito-size flour tortillas, warmed
chopped fresh cilantro

Steps:

  • Brown pork in a non-stick skillet over high heat until it is no longer pink, about 3 to 4 minutes. (no need to oil skillet, make sure it's hot) Add ginger, garlic, onion and cole slaw mix and stir fry with pork until vegetables are wilted, about 2 minutes.
  • Combine all remaining ingredients except tortillas and cilantro in a small bowl and add to skillet. Cook and stir until all is coated, about a minute.
  • Spoon equal portions of mixture onto warm tortillas sprinkled with about a Tbs. of cilantro, or to taste. Roll up to encase filling and serve.

When two cultures collide, you get tempting Thai Pork Burritos. One part Mexican, two parts Thai, these simple stuffed burritos make for a great meal.

1 garlic clove
1 lb. lean ground pork
1 small onion, diced
1 tbsp. honey
1 tsp. olive oil
1/2 tsp. crushed red pepper flakes
2 cups coleslaw mix with carrots
2 tbsp. grated ginger
2 tbsp. lime juice
2 tsp. ground coriander
3 tbsp. soy sauce
4 10-inch flour tortillas
1 tbsp. fresh cilantro

Steps:

  • Heat large nonstick skillet over high heat. Add pork, cook, crumble and stir until pork is no longer pink, about 3-4 minutes. Add ginger, garlic, onion and coleslaw mix and stir-fry with pork for 2 minutes, until vegetables are wilted. Stir constantly for about 1 minute. Heat tortillas in the microwave for 30 seconds. Spoon equal portions of pork mixture onto tortillas, top with cilantro and roll up burrito.
