Hummus is very easy to customize and make your own. As long as you use the base of garbanzo beans, tahini, lime/lemon juice, substitutions and customizations can be successfully made. This recipe makes a thai-curry-flavored hummus with a nice amount of heat. Very good with pita and fresh raw veggies such as carrots or broccoli.

1 (15 ounce) can garbanzo beans, drained and 1/4 cup liquid reserved
½ bunch fresh cilantro, stems removed
¼ cup coconut milk
2 tablespoons tahini
1 tablespoon lime juice
1 teaspoon ground cumin
1 teaspoon curry powder
1 teaspoon green curry paste

Steps:

  • Blend garbanzo beans, reserved liquid from beans, cilantro, coconut milk, tahini, lime juice, cumin, curry powder, and curry paste together in a food processor or blender until smooth.

2 - 15 ounce cans chickpeas, drained
3/4 cup unsweetened full-fat coconut milk
1/3 cup red curry paste (one 4 ounce jar)
3 garlic cloves
Zest of 2 limes
1 teaspoon salt
Garnish with fresh thai basil leaves

Steps:

  • Place the chickpeas, red curry paste, garlic, lime zest, and salt in the food processor. Pour a 1/2 cup of coconut milk over the top and cover. Puree until very smooth, then check the consistency. If you like your hummus a little more loose, add another ¼ coconut milk and puree again. Scoop into a bowl and sprinkle chopped thai basil over the top. Serve with endive, cut vegetables, or rice crackers.
