1 ½ cups white sugar
2 eggs
2 cups fruit cocktail
2 teaspoons baking soda
2 cups all-purpose flour
¼ cup packed brown sugar
1 cup chopped walnuts

Steps:

  • Grease and flour a 9 x 13 inch cake pan. Preheat oven to 325 degrees F (165 degrees C).
  • Mix together sugar, eggs, fruit cocktail, soda, and flour. Pour batter into prepared pan.
  • Mix the brown sugar and nuts together, and sprinkle mixture onto the batter.
  • Bake for 40 minutes, or until done.

Number Of Ingredients 13

2 large eggs
1 1/2 c sugar
1 can(s) fruit cocktail
1/2 tsp salt
2 c all purpose flour
2 tsp baking soda
2/3 c brown sugar
1 c chopped pecans
ICING
1 1/2 c sugar
1 c evaporated milk
1 stick butter
1 (7 ounce) can coconut

Steps:

  • 1. Preheat oven to 375. Butter a 9x13 inch baking dish.
  • 2. Beat eggs and sugar. Add fruit cocktail with the juice. Mix salt, flour and baking soda together and add to creamed mixture. Pour into pan.
  • 3. Sprinkle nuts over cake and pat down gently, Sprinkle the brown sugar over all. Bake at 375 for 30-45 minutes until down. Remove from Oven and sprinkle coconut in an even layer over cake.
  • 4. Bring icing ingredients to a boil, and pour icing over hot cake.

1 1/2 c sugar
2 eggs
2 c fruit cocktail including the liquid
2 c all purpose flour
2 tsp baking soda
1/4 c brown sugar, firmly packed
1 c chopped nuts (pecans or walnuts)
TOPPING
1/2 c butter
1/2 c evaporated milk
3/4 c sugar
1 c flaked coconut

Steps:

  • 1. In a large bowl, cream sugar and eggs together until fluffy.
  • 2. Mix in the fruit cocktail.
  • 3. In a separate bowl sift together flour and baking soda.
  • 4. Add the dry ingredients to the fruit cocktail mixture.
  • 5. Pour into a lightly greased & floured 13" X 9" cake pan. (I prefer using parchment paper in my pans.)Sprinkle brown sugar and nuts onto the surface of the batter. Put into a preheated 325F degree oven and cook for 40 minutes or until a toothpick inserted into the cake comes out clean.
  • 6. After about 30 minutes start the topping. Gently boil the butter, milk and sugar for 2 minutes then add the coconut. The cake should now be ready.
  • 7. Spoon hot topping over the cake as soon as it is removed from the oven. Let the cake cool before cutting it.

1 stick butter
1 c coconut
3/4 c brown sugar
1/2 c evaporated milk

Steps:

  • 1. PREHEAT OVEN TO 325 DEGREES. GREASE AND FLOUR A 9 X 13 PAN. MIX ALL INGREDIENTS EXCEPT BROWN SUGAR AND NUTS.
  • 2. POUR BATTER INTO THE 9 X 13 PAN. COMBINE BROWN SUGAR AND NUTS AND SPRINKLE OVER BATTER.
  • 3. BAKE FOR 40 MINUTES.
  • 4. REMOVE CAKE FROM OVEN. THEN FIX THE ICING. BOIL COCONUT ICING IN A SAUCE PAN FOR 2 MINUTES. SPOON OVER CAKE WHILE HOT.

1 cup chopped nuts
2 cups fruit cocktail with syrup (16-oz. can)
2 tsp. baking soda

  • Mix regular sugar, eggs, fruit cocktail, baking soda and flour. Pour into greased and floured 9x13" pan. Combine brown sugar and nuts; sprinkle over batter. Bake at 325° for 40 minutes. Spread icing on cake while hot.

butter sauce icing:
1 stick of butter
3/4 cups white sugar
1/2 cup evaporated milk
1 cup flaked coconut

Steps:

  • 1. Grease and flour a 9 x 13 inch cake pan. Preheat oven to 325 degrees Mix together sugar, eggs, fruit cocktail, soda, and flour. Pour batter into prepared pan. Mix the brown sugar and nuts together, and sprinkle mixture onto the batter. Bake for 40 minutes, or until done. To prepare Butter Icing: Boil sugar, butter and milk for 2 minutes. Add coconut. Spread icing on cake while icing and cake are hot. Enjoy! While baking prepare butter icing to top cake while both icing and cake are hot.

2 cups all-purpose flour
1 teaspoon baking soda
2 cups sugar
2 large eggs
1 teaspoon vanilla extract
20 oz can crushed pineapple
1/2 cup salted butter
1/2 teaspoon vanilla extract
2/3 cup evaporated milk
1 cup sugar
1 cup chopped pecans
1 cup sweetened coconut flakes

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Spray a 9 by 13 inch baking dish with nonstick spray.
  • In a large bowl, stir together all cake ingredients until blended.
  • Pour into prepared dish and bake 30-40 minutes or until toothpick inserted in the middle comes out clean. Remove to cooling rack and poke holes about 1 inch apart in the cake with a wooden skewer, chopstick, or handle of a wooden spoon.
  • Combine butter, vanilla, evaporated milk, and sugar in a medium saucepan. Heat over medium high heat, stirring often, until thickened, about 3-5 minutes.
  • Remove from heat and stir in nuts and coconut flakes. Pour mixture over the cake while it is still hot and spread evenly. Let topping set a few minutes before serving for best results.
