TEXAS FRENCH TOAST BANANAS FOSTER

3 eggs
1/3 cup milk, preferably whole
1/3 cup heavy cream
1/4 teaspoon pure vanilla extract
1/4 teaspoon orange-flavored liqueur (recommended: Grand Marnier)
1/8 teaspoon sea salt
1/8 teaspoon ground cinnamon
1 cup unsalted butter
2 cups packed brown sugar
1/4 teaspoon ground cinnamon
1/2 cup orange juice
1/4 cup dark rum
1 tablespoon creme de banana liqueur, optional
3 bananas, peeled and sliced
6 thick bread slices, preferably French toast bread (brioche) or Texas toast

Steps:

  • Batter: In a large bowl, combine all of the ingredients until a smooth batter is formed.
  • Sauce: In a saucepan over medium-high heat, melt the butter, then add the brown sugar. Stir continuously until the sugar has dissolved. Add the cinnamon and orange juice and bring to a simmer. Remove the pan from the heat, pour in the rum and creme de banana, if using, then return the pan to the heat. Brush down the sides of the pan with water using a pastry brush. Remove from heat.
  • In a small saute pan, add 1/4 cup of the caramel sauce and the bananas. Saute over high heat until just warmed through. Keep warm.
  • Toast: Preheat a griddle or a nonstick pan over high heat. Dip the bread slices into the batter, then put them on the griddle, turning over after 2 minutes. To each serving plate, add 1/4 cup of the caramel sauce and top with the French toast. Spoon the bananas, over the toast and drizzle with some of the caramel sauce.

CINNAMON SUGAR FRENCH-STYLE TEXAS TOAST

1 cup milk
3 large eggs, beaten
1/4 cup sugar
2 teaspoons ground cinnamon
4 tablespoons unsalted butter
8 thick slices white bread (about 3/4 of a white sandwich or Pullman loaf, cut into 3/4-inch-thick slices)
Suggested servings: Jam or hot pure maple syrup

Steps:

  • Preheat an oven to 200 degrees F, and place a rack on a sheet pan.
  • Whisk the milk and eggs in a glass pie or casserole dish until evenly combined.
  • Whisk the sugar and cinnamon in a small bowl.
  • Heat a large skillet over medium heat. Add about 1/2 a tablespoon of butter to the skillet, swirling the pan to coat the surface. Dip 2 slices of bread into the egg mixture and immediately lay in the skillet. Sprinkle the cinnamon sugar on top and cook until the undersides are brown and crisp, about 4 minutes. Add a nut-sized bit of butter to the skillet, as needed, and flip the toast, cook until golden on the underside, about 3 minutes more.
  • Serve immediately or transfer to the rack in the oven to keep warm. Repeat with the remaining bread and batter. Serve with jam or maple syrup.

3 eggs
6 tablespoons half and half
1 tablespoon sugar
3 teaspoons ground cinnamon
1/4 teaspoon vanilla extract
4 3/4-inch-thick slices soft-crusted French bread or egg bread
2 tablespoons (1/4 stick) butter
1/4 cup powdered sugar
Warm maple syrup (optional)

Steps:

  • Beat eggs, half and half, sugar, 2 teaspoons cinnamon and vanilla extract in 13x9x2-inch glass baking dish to blend. Add bread and turn to coat. Cover and chill until bread absorbs egg mixture, at least 30 minutes and up to 1 day.
  • Melt butter in heavy large skillet over medium heat. Add bread and cook until golden and cooked through, about 3 minutes per side. Transfer to plates. Combine powdered sugar with remaining 1 teaspoon cinnamon and sift over toast. Serve with maple syrup, if desired.

1/4 teaspoon(s) vanilla extract
4 - (3/4inch thick) slices soft crusted french bread or egg bread
2 tablespoon(s) (1/4 stick) butter
1/4 cup(s) powdered sugar
- warm maple syrup

Steps:

  • Beat eggs,half and half,sugar, 2tsp cinnamon and vanilla extract in 13x9x2inch glass baking dish to blend. Add bread and turn to coat. Cover and chill until bread absorbs egg mixture at least 30 minutes and up to 1 day.

This is as easy as store bought french toast, but all the healthy ingredients of homemade. I've been making this since the boys were little, all they had to do was pop this in the toaster and bam breakfast was on the table or in had to eat on the mile walk to the bus stop.

4 - eggs, beaten
1 cup(s) milk
2 teaspoon(s) vanilla
1/2 teaspoon(s) ground cinnamon
1/4 teaspoon(s) nutmeg
8 - slices texas toast

Steps:

  • In a shallow bowl beat together eggs, milk, sugar, vanillaand cinnamon and nutmeg. Dip bread slices into egg mixture, coating both sides.
  • In a skillet or on a griddle melt 1 tablespoon of butter over medium heat; add half of the bread slices and cook for 2 to 3 minutes on each side or until golden brown. Repeat with remaining butter and bread slices. Serve warm.
  • TO FREEZE: place french toast on waxed paper on cookie sheets and place in freezer, when frozen transfer to zip lock freezer bags and when ready to eat place in toaster. I usually triple or more this recipe.

4 tablespoon(s) margerine

Steps:

  • beat eggs and stir in vanilla and cinnamon
  • heat two tablespoons margerine dip bread in egg mixture then place in pan and cook a few minutes each side till golden brown
  • add remaining margerine as needed. top with butter and choice of syrup * also good with powdered sugar instead of syrup
