CHICKEN BACON RANCH TATER TOTS™ CASSEROLE

1 teaspoon vegetable oil
1/2 cup chopped onion
1 can (10.5 oz) condensed cream of chicken soup
1 cup sour cream
1/2 cup milk
2 cups shredded Colby-Monterey Jack cheese blend (8 oz)
1 package (1 oz) ranch dressing & seasoning mix
1/4 teaspoon black pepper
3 cups shredded cooked chicken
1 bag (32 oz) Ore-Ida™ Tater Tots™ frozen potatoes
1/2 cup chopped cooked bacon
1/2 cup chopped tomatoes
1/4 cup sliced green onions

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 8- or 10-inch nonstick skillet, heat oil over medium heat. Cook onion in oil 3 to 5 minutes, stirring occasionally, until tender.
  • In medium bowl, stir onion, condensed soup, sour cream, milk, 1 cup of the cheese, 2 tablespoons of the dressing mix and the black pepper until mixed well; stir in chicken.
  • Place half of the frozen potatoes in single layer on bottom of baking dish. Spoon and spread chicken mixture on top of potatoes; sprinkle 1/4 cup of the bacon on top.
  • In large resealable food-storage plastic bag, add remaining potatoes with remaining dressing mix; seal and shake bag to coat. Arrange on top of casserole.
  • Bake 40 minutes; top casserole with remaining 1 cup cheese and 1/4 cup bacon.
  • Bake 10 to 15 minutes or until cheese is melted and potatoes are lightly browned. Top with tomatoes and green onions.

1 tablespoon vegetable oil
1 large onion, sliced
1 medium red bell pepper, cut into 1/4-inch strips
1 medium green bell pepper, cut into 1/4-inch strips
1 jalapeño chile, seeded, finely chopped
1 tablespoon Gold Medal™ all-purpose flour
1 package (0.85 oz) Old El Paso™ chicken taco seasoning mix
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
1 can (4.5 oz) Old El Paso™ chopped green chiles
3 cups shredded cooked chicken
2 cups shredded Cheddar cheese (8 oz)
2 cups sour cream
1 bag (32 oz) Ore-Ida™ Tater Tots™ frozen potatoes
3 tablespoons chopped fresh cilantro leaves
1 cup Old El Paso™ Thick 'n Chunky medium salsa (from 16-oz jar)

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • In 5-quart Dutch oven, heat oil over medium-high heat. Add onion, bell peppers and jalapeño chile; cook 3 to 4 minutes, stirring frequently, until vegetables are just crisp-tender. Add flour and taco seasoning mix. Cook 1 minute, stirring constantly. Stir in tomatoes and green chiles. Heat to simmering. Remove from heat; stir in chicken, 1 cup of the cheese and 1 cup of the sour cream.
  • Place half of the frozen potatoes in single layer in baking dish. Spoon chicken mixture on top. Top with remaining frozen potatoes, then remaining 1 cup cheese.
  • Bake 40 to 45 minutes or until casserole edges are bubbly and potatoes are lightly browned. Sprinkle with cilantro. Serve with salsa and remaining 1 cup sour cream.

Our family enjoys this any time of year, but mostly during the summer when you don't want an oven heating up your house, but want a hot home-cooked meal.

4 ounces bacon, cut into 1-inch pieces
1 pound skinless chicken breasts, cut into bite size pieces
salt and freshly ground black pepper to taste
1 (16 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
1 ½ cups grated Colby cheese
1 ½ slices grated Monterey Jack cheese
¾ cup milk

Steps:

  • Place bacon pieces in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels. Crumble once cool enough to handle.
  • Season chicken pieces lightly with salt and pepper.
  • Grease the bottom of a slow cooker with bacon grease and layer 1/2 of the potato nuggets on the bottom. Sprinkle with 1/2 of the bacon bits. Mix Colby cheese and Monterey Jack cheese together in a bowl and sprinkle 1/3 of the cheese mixture on top. Add chicken in 1 layer and top with 1/2 of the remaining cheese mixture. Sprinkle with remaining bacon bits and top with remaining potato nuggets. Sprinkle rest of the cheese mixture on top and pour milk over everything.
  • Cover the slow cooker and cook on High until chicken is cooked though and cheese has melted, 3 to 5 hours.

2 lbs chicken, ground
1 medium onion, chopped
1/4 teaspoon pepper
1/2 cup water
1 (10 3/4 ounce) can cream of mushroom soup
2 cups frozen mixed vegetables
1 lb frozen tater tots

Steps:

  • Preheat oven to 375°F.
  • In a non-stick skillet over medium heat, brown the ground chicken and the onion until the chicken is no longer pink.
  • Stir in pepper, water and mushroom soup and heat till bubbling.
  • Add frozen vegetables and stir cook until the vegetables are warm.
  • Pour the mixture into a 2 quart (2L) casserole. Arrange tater gems in a single layer on top of the chicken mixture. Bake, uncovered, for 40 to 45 minutes or until the tater gems are crisp and the chicken mixture is bubbling.
