The secret to these super-crispy waffles is using a little vegetable shortening. Make a large batch on the weekend, then grab and reheat on a rushed morning.

2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1 teaspoon fine salt
1 1/2 cups milk
4 tablespoons melted unsalted butter, plus more for brushing waffle iron
4 tablespoons vegetable shortening, melted
2 large eggs
Pure maple syrup, soft unsalted butter, confectioners' sugar or fruit preserves, for topping

Steps:

  • Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F (to keep cooked waffles warm). Whisk together the flour, sugar, baking powder and salt in a large bowl. Whisk together the milk, butter, shortening and eggs in another bowl. Pour the milk mixture into the flour mixture and gently stir until just incorporated (it's okay if there are some lumps).
  • Lightly brush the top and bottom of the waffle iron with butter. Fill the waffle iron about three-quarters of the way full (some waffle iron should still be showing). Close the lid gently and cook until the waffles are golden brown and crisp, 6 to 7 minutes. Keep the cooked waffles warm in the oven or covered with foil on a plate while you make the remaining waffles.
  • Serve with maple syrup, butter, sugar or fruit preserves.

EASY EINKORN WAFFLES (FREEZER-FRIENDLY)

2 cups all-purpose einkorn flour (If using whole wheat einkorn flour, decrease by 1/4 cup.)
2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp salt
1 3/4 cups whole milk (Almond milk will also work.)
4 TB pure maple syrup (or honey)
4 TB butter (melted--Salted or unsalted will work.)
1 egg
1 1/2 tsp pure vanilla extract

Steps:

  • In a large bowl, whisk the dry ingredients together. Then add the wet ingredients directly to the bowl. Whisk to combine all the ingredients. Let the batter rest for 10 minutes on the counter, as einkorn needs time to slowly absorb liquids. Grease a waffle maker, then pour 1/4- 1/2 cup of batter into the waffle maker at a time. I use 1/2 cup since my waffle maker is very deep. Cook until crispy on the outside. I use a .
  • To freeze the waffles, cut the waffles into smaller pieces so they'll fit in your toaster. Freeze the waffles in a freezer baggie or container in one single layer. I like to line my bag with parchment paper first to give the bag a bit of structure. Freeze the waffles for up to 2 months. Simply pop the waffles in the toaster, and enjoy!

3 teaspoons (1 Tbsp) baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 large eggs, at room temperature
6 Tablespoons (85g) unsalted butter, melted and slightly cooled
2 Tablespoons brown sugar*
1 and 3/4 cup (420ml) buttermilk
1 teaspoon pure vanilla extract

Steps:

  • Preheat waffle maker on medium-high heat.
  • Whisk the flour, baking powder, cinnamon, and salt together in a large bowl. Whisk the remaining ingredients in a medium bowl until combined. Pour into dry ingredients and whisk until combined and no large lumps remain.
  • Pour 1/3 cup of the batter into each well of the waffle maker (or less if your waffle maker is on the smaller side) and close the lid. Cook the waffles util golden brown and crisp, 5-6 minutes. (You can keep waffles warm in a 200°F (93°C) preheated oven until all are finished!)
  • Serve warm waffles with your favorite toppings!

1 cup whole-wheat flour
1 tablespoon plus 1 1/2 teaspoons baking powder
1/2 teaspoon plus 1/8 teaspoon ground cinnamon
1/4 teaspoon plus pinch of freshly grated nutmeg
1/4 cup plus 1 1/2 teaspoons vegetable oil
3 tablespoons honey
5 large eggs
2 cups milk, plus more as needed
1 1/2 teaspoons pure vanilla extract
1 tablespoon molasses
Nonstick cooking spray, for waffle iron
Pure maple syrup, for serving (optional)
Blueberries, for serving (optional)

Steps:

  • Preheat waffle iron. Sift together both flours, baking powder, cinnamon, and nutmeg three times; set aside.
  • In a large bowl, whisk together oil and honey. Add eggs, milk, vanilla, and molasses; whisk well to combine. Add flour mixture and stir to combine; mixture should be easily pourable, but not too thick. If mixture seems too thick, add a little more milk.
  • Spray waffle iron with cooking spray. Pour 1/2 cup batter into waffle iron. Cook until golden brown, about 1 1/2 minutes. Carefully remove waffle from iron and repeat process with remaining batter. Serve immediately.

2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
3 large eggs, separated
2 cups milk
1/4 cup canola oil
CINNAMON CREAM SYRUP:
1 cup sugar
1/2 cup light corn syrup
1/4 cup water
1 can (5 ounces) evaporated milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
Mixed fresh berries, optional

Steps:

  • In a bowl, combine the flour, sugar, baking powder and salt. Combine the egg yolks, milk and oil; stir into dry ingredients just until moistened. In a small bowl, beat egg whites until stiff peaks form; fold into batter. Bake in a preheated waffle iron according to manufacturer's directions., Meanwhile, for syrup, combine sugar, corn syrup and water in a saucepan. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in the milk, vanilla and cinnamon. Serve with waffles. If desired, serve with fresh berries.Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in a resealable plastic freezer bag. Reheat waffles in a toaster on medium setting. Or, microwave each waffle on high for 30-60 seconds or until heated through.
