THAI SPICED CASHEW NUTS



Thai Spiced Cashew Nuts image

Roasted cashew nuts with fragrant Thai spices. The perfect snack food.

400 g cashew nuts (roasted or raw but not salted)
10 lime leaves (finely chopped or blended )
15 g red curry paste
2 g salt
10 g egg white
30 g powdered sugar
5 g lime juice
5 g soy sauce
10 g fish sauce

Steps:

  • Turn the oven to 150°C or 302°F and roast the cashews for 10 minutes. This step is mainly to dry them out a bit as sometimes cashews are quite moist. Alternatively, you could also use pre-roasted cashews with no salt or anything added. Just make sure to keep an even closer look at them when roasting to make sure they don't burn.
  • Blend the lime leaves in a spice grinder or chop very finely with a super sharp knife.
  • Mix together all the ingredients in a bowl and spread out onto a baking tray lined with good quality parchment paper or a silicone baking mat.
  • Turn the oven up to 165°C or 338°F and bake for about 25 minutes or until deep golden brown while giving the nuts a mix every 5 minutes or so. This is to make sure they brown evenly.
  • When you are happy with the colour, remove and let them cool down completely before storing in an airtight container in a cool dry place.

Tamarind Spiced Nuts With Mint image

The addition of tamarind and mint to what might otherwise be simply sweet and spicy cashews elevates these nuts beyond simple bar snacks designed to encourage thirst. They're sophisticated and exciting, while remaining quite simple to make.

4 tablespoons unsalted butter
3 tablespoons honey
2 tablespoons light brown sugar
1 teaspoon tomato paste
1 1/2 teaspoons tamarind concentrate or paste
1 pound roasted unsalted cashews
70 grams unsweetened coconut flakes (about 1 cup)
Large pinch cayenne, plus more to taste
10 grams ground garam masala, preferably freshly toasted and ground (about 1 tablespoon)
8 grams coarse kosher salt, plus more for sprinkling (about 1 1/4 teaspoons)
Chopped fresh mint, for serving

Steps:

  • Heat oven to 300 degrees.
  • In a medium pot, melt butter, honey, brown sugar, tomato paste and tamarind. Add nuts, coconut, cayenne, garam masala and salt and toss until coated. Spread on baking sheet.
  • Bake for about 25 minutes, stirring occasionally, until mixture is toasted and sugars have begun to caramelize. Sprinkle nuts lightly with salt and let cool completely. Before serving, break up nuts and sprinkle with mint. (Nuts can be stored in an airtight container up to 2 weeks, but don't add mint until serving.)

Number Of Ingredients 5

6 cups whole almonds with skin (a scant 2 lb)
1/2 cup tamari (wheat-free soy sauce; preferably San-J)
1/2 teaspoon sugar
Special Equipment
2 large (17- by 12-inch) shallow baking pans

Steps:

  • Put oven racks in upper and lower thirds of oven and preheat oven to 300°F.
  • Divide almonds between baking pans, spreading in 1 layer, and bake 15 minutes. Stir together tamari and sugar in a large heatproof bowl until sugar is dissolved. Add hot almonds and stir until coated well. Let stand, stirring occasionally, 5 minutes. Return almonds to baking pans with a slotted spoon, spreading them evenly. Discard any liquid remaining in bowl.
  • Bake almonds, stirring and switching position of pans halfway through baking, until almonds are dark brown outside and golden inside, about 25 minutes (cut an almond in half to check color).
  • Cool almonds completely in pans on racks, stirring occasionally, about 20 minutes, then transfer to an airtight container.

TAMARI ROASTED NUTS

These nuts can be either a snack, or used as a garnish for a saute. Posted for Zaar World Tour 2005...haven't tried it yet.

2 cups walnuts or 2 cups hazelnuts
3 tablespoons tamari soy sauce

Steps:

  • Preheat oven to 350°F.
  • Spread the nuts on a baking sheet and bakd for 5 minutes.
  • Drizzle soy sauce on nuts and stir well.
  • Bake for 5 more minutes.
  • Turn off the oven, stir the nuts again, and leave them in the oven for an additional 5 minutes.
  • The nuts will be dry and crisp.
  • Allow nuts to cool.
