TACO TATER TOT CASSEROLE

This Taco Tater Tot Taco Casserole is a delightful combination of classic taco flavors and tater tots! Loaded with all the good stuff like taco meat, beans, cheese, salsa, and topped with cheese and crispy tater tots, this easy casserole recipe is a dinner that the whole family will love!

2 pounds lean ground beef
1 onion (diced)
1 yellow or orange bell pepper (diced)
1 ½ cups salsa
15 ounce can black beans (drained and rinsed thoroughly)
4 ounces diced green chiles
2 tablespoons taco seasoning (or 1 packet)
½ teaspoon coarse salt
1/2 teaspoon black pepper
4 oz cream cheese (softened)
8 ounces shredded cheese (cheddar, Mexican blend, Monterey Jack, Pepper Jack)
32 ounces tater tots
3 green onions (sliced)
toppings

Steps:

  • Preheat oven to 375 degrees.
  • In a large pan, brown the ground beef until cooked through. Remove beef from skillet and drain any excess grease.
  • Add the onions and bell peppers to the pan, saute on medium high heat for 2-3 minutes, until vegetables are softened.
  • Transfer the ground beef back to the pan, along with the salsa, green chiles, taco seasoning, black beans, salt and pepper. Mix well. Add the softened cream cheese and stir until well combined.
  • Spread the meat mixture evenly into the bottom of a 9x13 casserole dish. Pour the shredded cheese evenly across the top. Line tater tots in rows on top of the cheese until completely covered.
  • Bake in the oven at 375 degrees for 25-30 minutes, or until tater tots are cooked through and slightly crispy on top. Top with the sliced green onions. Serve hot as is or garnish with toppings. Enjoy!

1 (16 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
1 pound ground beef
1 (1 ounce) packet taco seasoning
1 cup water
1 (15 ounce) jar nacho cheese dip
1 (10 ounce) can canned diced tomatoes and green chiles, drained
¼ cup sliced black olives
½ cup shredded Cheddar cheese
2 tablespoons taco sauce
½ cup shredded Cheddar cheese
1 (10 ounce) bag shredded lettuce
¼ cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place potato nuggets in the bottom of a glass baking dish. Bake in the preheated oven until cooked through and crisp, about 20 minutes.
  • Cook ground beef in a large skillet over medium heat until no longer pink, 10 to 12 minutes. Drain off fat and discard. Stir in taco seasoning and water. Reduce heat to low and simmer until sauce is reduced and thick, about 10 minutes.
  • Spoon cooked beef mixture over the potato nuggets. Pour nacho cheese dip evenly over the beef. Top with canned tomatoes, olives, 1/2 cup shredded Cheddar cheese, and taco sauce. Bake in the oven until cheese is melted and the casserole is warmed through, about 10 minutes. Remove from oven and top with 1/2 cup shredded Cheddar cheese. Serve atop shredded lettuce and garnished with sour cream.

This quick dinner was inspired by many other posts while looking for easy, gluten-free meal idea for a large crowd. It got such rave reviews i had to post for future meal. I failed to take a picture though.

1 pound ground beef
1 (15.25 ounce) can corn
1 (8 ounce) jar salsa
1 ounce processed cheese (such as Velveeta®)
1 ounce cream cheese
1 package taco seasoning mix
1 (16 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
1 (4 ounce) can sliced black olives
1 (4 ounce) can diced jalapeno peppers
4 ounces shredded Cheddar cheese
1 (8 ounce) container sour cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add corn, salsa, processed cheese, cream cheese, and taco seasoning to ground beef and stir until combined.
  • Spread beef mixture over bottom of 9x13-inch baking dish. Arrange potato nuggets over beef mixture, sprinkle black olives, jalapenos, and Cheddar cheese on top.

1 can (16 oz) Old El Paso™ traditional refried beans
1 lb lean (at least 80%) ground beef
1 cup chopped onions
1 medium jalapeño chile, seeded, finely chopped
1 package (1 oz) Old El Paso™ original taco seasoning mix
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
2 cups shredded Cheddar cheese (8 oz)
1 bag (32 oz) Ore-Ida™ Tater Tots™ frozen potatoes
1/2 cup pickled sliced jalapeño chiles
1 can (2.25 oz) sliced ripe olives, drained
1/2 cup sliced green onions
1 cup sour cream

Steps:

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Spread refried beans evenly in bottom of baking dish.
  • In 12-inch nonstick skillet, cook beef, onions and jalapeño chile over medium-high heat 7 to 9 minutes, stirring frequently, until beef is brown; drain, and return to skillet. Stir in taco seasoning mix and tomatoes; cook and stir until heated through.
  • Spoon beef mixture on top of beans. Sprinkle 1 cup of the cheese over beef. Top with frozen potatoes.
  • Bake 35 to 40 minutes or until heated through and potatoes are golden brown. Top with remaining 1 cup cheese. Bake 3 to 4 minutes or until cheese is melted. Let stand 10 minutes. Garnish with pickled jalapeños, olives and green onions. Serve with sour cream.
