T-BONE STEAK WITH BACON-MUSHROOM SAUCE
Some say there's nothing better than a straight-up T-bone steak-but they've never tried our sherry-spiked T-Bone Steak with Bacon-Mushroom Sauce.

Steps:
- Heat grill to medium heat.
- Grill steaks 7 to 8 min. on each side or to medium doneness (160ºF).
- Meanwhile, cook bacon in large skillet until crisp. Remove bacon from skilllet; drain on paper towels. Discard drippings from skillet. Add mushrooms to skillet; cook 5 min., stirring occasionally. Stir in bacon, steak sauce, sherry and sugar. Bring to boil; simmer on medium-low heat 5 min., stirring occasionally.
- Serve steaks topped with mushroom sauce.

SUNNY'S T-BONE STEAK WITH EASY BEARNAISE SAUCE
Steps:
- For the T-bone steaks: Heat a large cast-iron griddle or skillet over medium-high heat. Generously sprinkle both sides of the steaks with salt and pepper.
- Add the oil to the griddle. Add the steaks and cook until nicely browned, 3 to 4 minutes per side for medium-rare. Remove from the heat, then tent with foil and let rest for 5 minutes before slicing.
- For the easy bearnaise sauce: Add the yolks and lemon juice to a blender. Turn on the blender and slowly stream in the melted butter. Once all the butter is incorporated, season with salt and pepper. Remove the sauce to a bowl over a bain marie (hot water) and keep warm. Add the chives, red onion and thyme and stir to combine. Taste and adjust the seasoning with a little more salt and pepper. Remove from the heat and add to a serving bowl.
- Serve the bearnaise sauce over the steaks.

- In a large nonstick skillet, heat butter over medium-high heat. Add mushrooms and shallot; cook and stir 4-6 minutes or until tender. Add garlic and pepper; cook 1 minute longer. Remove from pan; keep warm. Wipe skillet clean., In same skillet, cook ham over medium heat 3 minutes. Turn; sprinkle with cheese and bacon. Cook, covered, 2-4 minutes longer or until cheese is melted and ham is heated through. Serve with mushroom mixture. If desired, sprinkle with parsley.

Steps:
- Cook bacon in large skillet on medium heat until crisp.
- Remove bacon from skillet, reserving 2 tablespoons of the drippings in skillet.
- Place bacon on paper towels to drain.
- Add mushrooms to drippings in skillet; cook 5 minutes or until tender, stirring occasionally.
- Add bacon, steak sauce, sherry and sugar; mix well.
- Bring to boil.
- Reduce heat to medium-low; simmer 5 minutes.
- Cover to keep warm.
- Grill or broil steaks 14 to 16 minutes for medium-rare to medium doneness, turning occasionally.
- Serve topped with mushroom sauce.
