Perfect Roasted Sweet Potatoes image

Roasted sweet potatoes are truly delicious, and so easy to make! This healthy recipe will become your new favorite side dish. Recipe yields 4 side servings.

2 pounds sweet potatoes (3 to 4 medium sweet potatoes)
2 tablespoons extra-virgin olive oil
Optional: 1 teaspoon chili powder or freshly ground black pepper, to taste
¼ teaspoon fine sea salt

Steps:

  • Preheat the oven to 425 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy clean-up.
  • Either scrub the sweet potatoes clean and pat dry, or peel them (I generally peel mine). To slice, use a sharp chef's knife to cut them into 1-inch thick rounds. Then, cut up each round to make 1-inch cubes. The "cubes" won't be perfectly even, but that's ok.
  • Place the sweet potatoes on the prepared baking sheet. Drizzle the olive oil on top. If using, sprinkle the chili pepper or several twists of freshly ground black pepper on top, followed by the salt. Toss until the sweet potatoes are all evenly coated in oil, and arrange them in a single layer.
  • Bake for 30 to 40 minutes, tossing halfway, until the sweet potatoes are tender and caramelizing at the edges. Serve while warm. Leftover sweet potatoes will keep in the refrigerator, covered, for about 4 days. Gently reheat in the microwave or oven if desired.

1 cup hazelnuts
1 1/2 kg orange sweet potatoes, peeled, cut into 2cm (1 inch)
olive oil flavored cooking spray
125 ml olive oil
40 ml red wine vinegar
20 ml Dijon mustard
40 ml maple syrup

Steps:

  • Preheat oven to 220C (430F). Spread hazelnuts on a baking tray and roast for 10-15 minutes or until skins crack. Wrap nuts in a clean teatowel and rub to remove skins. Chop and set aside.
  • Line a large roasting pan with non-stick baking paper. Arrange sweet potato in a single layer, spray with oil and turn to coat. Season with salt and pepper.
  • Roast sweet potato, turning once, until golden and tender (15-20 minutes). Set aside to cool to room temperature.
  • Dressing: place oil, vinegar, mustard and maple syrup in a screw-top jar. Season with salt and pepper. Secure lid and shake well to combine.
  • Place sweet potato and hazelnuts in a large bowl. Drizzle with dressing and toss to combine. Serve.

1/4 cup extra-virgin olive oil, plus more for drizzling potatoes after cooked
1/4 cup honey
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 375 degrees F.
  • Lay the sweet potatoes out in a single layer on a roasting tray. Drizzle the oil, honey, cinnamon, salt and pepper over the potatoes. Roast for 25 to 30 minutes in oven or until tender.

3 large sweet potatoes (about 2-1/2 pounds), peeled and cubed
1/4 cup olive oil, divided
1-1/2 teaspoons herbes de Provence
3/4 teaspoon salt, divided
1/2 teaspoon pepper, divided
2 shallots, chopped
2 garlic cloves, minced
1 cup whole-milk ricotta cheese
1 tablespoon hazelnut liqueur
1/4 teaspoon ground nutmeg
72 wonton wrappers
3 quarts water
3/4 cup unsalted butter, cubed
3 tablespoons minced fresh sage
1/2 cup dried cherries, chopped
1/4 cup chopped hazelnuts, toasted
1 cup shaved Asiago cheese

Steps:

  • Preheat oven to 400°. Place sweet potatoes in a greased 15x10x1-in. baking pan; toss with 2 tablespoons oil, herbes de Provence, 1/2 teaspoon salt and 1/4 teaspoon pepper. Roast 25-30 minutes or until tender, stirring once. Cool slightly., In a small skillet, heat remaining oil over medium-high heat. Add shallots and garlic; cook and stir until tender. Transfer to a food processor. Add sweet potatoes, ricotta cheese, liqueur, nutmeg and the remaining salt and pepper; process until blended., Place 1 tablespoon filling in center of each wonton wrapper. ¼ cup toasted, ground hazelnuts
½ cup heavy cream
¼ cup sour cream
¼ cup apple cider

6 medium sweet potatoes or 6 medium yams
1 1/4 cups flaked hazelnuts
1/2 cup butter, melted

Steps:

  • Wash potatoes in cold water and cut off root ends. Place on sheet of aluminum foil or in a shallow baking pan in a 400 degrees F oven and bake until tender, 40-45 minutes.
  • While potatoes bake, thinly spread sliced or flaked hazelnuts on a shallow pa and place on top rack of oven.
  • Roast about 15 minutes or until golden brown, stirring 3very 5 minutes.
  • To serve, make a slit in the baked sweet potatoes and fill with hazelnuts and melted butter.
