Paper-thin slices of Vidalia and red onions figure prominently in this contemporary take on a traditional steak house salad.

1 small Vidalia onion, very thinly sliced with a sharp knife or a mandoline (about 1 1/2 cup)
1 small red onion, very thinly sliced with a sharp knife or a mandoline (about 1 1/2 cups)
3 tablespoon sherry vinegar
1 tablespoon honey
1 teaspoon fresh lemon juice
1 teaspoon Dijon mustard
1/4 teaspoon coarse salt
1/8 teaspoon freshly ground pepper
2 tablespoon extra-virgin olive oil, plus 1 1/2 teaspoons
1 medium head radicchio (about 8 ounces), cored, leaves separated and cut into 1/2-inch pieces (about 2 1/2 cups)
2 large leaves red-leaf lettuce, torn into small pieces (about 2 cups)
1 cup red and yellow grape tomatoes (about 5 ounces), halved if large
1 tablespoon finely chopped fresh flat-leaf parsley

Steps:

  • Put onions into a large bowl of cold water. Swish onions with your hands until water becomes cloudy. Transfer onions to a clean bowl of cold water, and let soak 15 minutes. Repeat twice. Drain, and pat dry. Transfer to a large bowl.
  • Whisk together vinegar, honey, lemon juice, mustard, salt, and pepper in a bowl. Add oil in a slow, steady stream, whisking until emulsified.
  • Add radicchio, lettuce, tomatoes, and parsley to bowl with onions. Drizzle with dressing to taste, and toss. Serve with remaining dressing on the side.

1/2 head romaine lettuce, cut into bite-size pieces
1 large head Belgian endive, thinly sliced crosswise (about 1 1/2 cups)
1/2 red onion, thinly sliced into rings
3 cups fresh baby arugula
12 cherry tomatoes, halved
4 ounces Gorgonzola, coarsely crumbled
Red Wine Vinaigrette, recipe follows
Salt and freshly ground black pepper
1 pound steak (such as New York, rib-eye or filet mignon), pan-fried or grilled and chilled
1/2 cup red wine vinegar
3 tablespoons lemon juice
2 teaspoons honey
2 teaspoons salt
Freshly ground black pepper
1 cup olive oil

Steps:

  • In a large bowl, combine the romaine lettuce, Belgian endive, red onion, baby arugula and cherry tomatoes, and half of the cheese. Toss the salad with enough vinaigrette to coat. Season the salad with salt and pepper, to taste. Arrange the salad on a platter.
  • Cut the steaks crosswise into thin slices. Arrange the steak slices atop the salad and sprinkle with the remaining cheese. Drizzle more vinaigrette over the steak slices and serve.
  • Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil.

SWEET ONION DRESSING

The dressing was a crowd-pleasing sweet onion recipe that we'd used at Old Lahaina Luau. It's made with a fresh, uncooked sweet onion, that gets puréed with cider vinegar, sugar, Dijon mustard, and oil. Try it on our Maui Kale Salad with cabbage, spicy peanuts, and potato chips.

¼ cup apple cider vinegar
½ cup sugar
1 medium sweet onion, quartered
2 teaspoons celery salt
2 tablespoons Dijon mustard
¼ teaspoon freshly ground black pepper
1 cup neutral oil

Steps:

  • In a blender, combine the vinegar, sugar, onion, celery salt, mustard, and black pepper and process until smooth. With the blender on its lowest speed, gradually add the oil in a steady stream until the dressing is thickened. Transfer to a jar or sealable container and store in the refrigerator for up to 2 weeks.

2 tablespoons cider vinegar
2 tablespoons ketchup
1 1/2 teaspoons sugar
1 teaspoon paprika
1/2 teaspoon Worcestershire sauce
Coarse salt
2 large tomatoes, cored and thickly sliced
1 sweet onion (such as Vidalia), halved and thinly sliced

Steps:

  • In a jar with a tight-fitting lid, combine olive oil, cider vinegar, ketchup, sugar, paprika, and Worcestershire sauce; season with coarse salt. Shake well to combine.
  • Arrange tomatoes and onion on a serving platter, alternating tomato and onion slices. Drizzle with some of the dressing; serve immediately with remaining dressing on the side.
