¼ teaspoon olive oil
1 clove garlic, minced
¼ cup soy sauce
½ lemon, juiced
1 teaspoon honey
½ teaspoon olive oil
⅓ teaspoon packed brown sugar
¼ teaspoon sea salt, plus more for garnish
¼ teaspoon ground black pepper, plus more for garnish
¼ teaspoon red pepper flakes
4 (6 ounce) fillets salmon
1 tablespoon olive oil

Steps:

  • Heat 1/4 teaspoon olive oil in a small skillet over medium-high heat. Saute garlic in hot oil until just beginning to brown.
  • Mix sauteed garlic, soy sauce, lemon juice, honey, 1/2 teaspoon olive oil, brown sugar, sea salt, black pepper, and red pepper flakes together in a bowl; pour into a large resealable plastic bag. Add salmon fillets, turning to coat with the marinade, squeeze bag to remove excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
  • Remove salmon from the marinade and shake to remove excess liquid. Reserve 3 tablespoons marinade and discard remainder.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Arrange salmon fillets in the hot skillet, pour reserved marinade over the salmon, and place a lid on the skillet; cook until salmon is browned on each side and flakes easily with a fork, occasionally spooning liquid from the pan over the fillets, 2 to 3 minutes per side. Garnish salmon with additional sea salt and black pepper.

I looked for a recipe for glazed salmon and didn't find one that used the ingredients I had on hand. So I threw together what I had and came up with this tangy, spicy sweet marinade that adds flavor, but doesn't mask the flavor of the salmon. My kids and sister loved it. They said it was better than 'restaurant salmon' It's great served with wild rice and stir fried veggies.

1 ½ pounds fresh salmon fillet with skin removed
¼ cup red wine vinegar
¼ cup olive oil
¼ cup soy sauce
¼ cup water
1 tablespoon lemon juice
½ teaspoon red pepper flakes, or to taste
1 teaspoon onion powder
1 teaspoon garlic powder
2 teaspoons chopped fresh cilantro
⅓ cup brown sugar, packed
salt and ground black pepper to taste

Steps:

  • Place salmon in a shallow, flat dish, and set aside. Combine the vinegar, olive oil, soy sauce, water, lemon juice, red pepper flakes, onion powder, garlic powder, cilantro, and brown sugar in a blender. Blend until brown sugar dissolves. Pour the marinade over the salmon to cover evenly. Cover the dish, and refrigerate at least 2 hours.
  • Line a broiling pan with foil. Remove salmon from marinade, and place on prepared broiling pan; season to taste with salt and pepper. Transfer remaining marinade to a saucepan.
  • Turn on broiler to low.
  • Broil salmon about 6 inches from the heat for 5 minutes; brush with remaining marinade. Broil an additional 5 to 10 minutes, brushing 2 or 3 more times with additional marinade. Salmon is done when fish is no longer bright red and can be flaked with a fork.
  • Meanwhile, cook the remaining marinade over low heat until it thickens and reduces by one-third, 5 to 10 minutes. Use cooked marinade as a dipping sauce or drizzle over salmon just before serving.

2 tablespoons honey
1 tablespoon rice vinegar

1 tablespoon minced garlic
1 pound wild salmon fillet, cut into 4 (4-ounce) pieces
1 1/2 teaspoons sesame oil
2 tablespoons finely chopped scallions, for garnish

Steps:

  • In a 1-gallon zip-top plastic bag, combine the soy sauce, honey, vinegar, Sriracha, ginger, and garlic. Add the salmon, toss to coat evenly, and refrigerate for at least 1 hour, or up to 8 hours, turning the fish once.
  • Remove the salmon from the bag, reserving the marinade. Heat a large sauté pan over medium-high heat and add the sesame oil. Rotate the pan to coat the bottom evenly and add the salmon. Cook until one side of the fish is browned, about 2 minutes. Flip the salmon and cook until the other side browns, 2 more minutes. Reduce the heat to low and pour in the reserved marinade. 1 tablespoon olive oil
2 tablespoons fresh lemon juice

2 whole red bell peppers

Steps:

  • For the Marinade: Put the filets into a large ziploc bag. In a small bowl whisk together the marinade ingredients. Pour the mixture into the bag with the salmon and message the pieces of fish until thoroughly coated. Cover and refrigerate for at least an hour.
  • For the Rice: In a small pot, heat 2 teaspoons of olive oil. Add the minced onion and garlic and saute until the garlic is light golden brown. Add the turmeric, salt and pepper; stir. .
  • Add the rice and stir to coat the rice with the onion. Lightly brown the rice. Pour the cold water over the rice and cover. Over high heat, bring to a boil, then reduce heat to a simmer for about 20 minutes until water is absorbed and rice is done.
  • For the Peppers: Cut the peppers in half lengthwise. Remove the stems, seeds and membrane. Cut the peppers into thin strips. Drizzle over with olive oil and season with salt and pepper.
  • For the Fish: reheat oven to 350 degrees. Remove the fish filets from the marinade; reserve the marinade for later use.
  • In a saute pan, add 1 tablespoon of olive oil. Heat on a high fire. Place the fish filets, two at a time, in the pan with the side that the filet will be served showing, face down. Quickly sear to light golden. Do this on both sides of each filet.
  • To Finish: Place the seared fish in a baking dish. Top with the chopped and seasoned peppers. Roast in the oven for about 2 minutes. The peppers should still be crunchy. (The internal temperature for the salmon should be about 145 degrees.)
  • For the Glaze: In a saucepan, heat the reserved marinade. Add the sugar and stir to dissolve. Whisk in soy sauce and the optional chili flakes or chopped jalapeno. Let boil, then reduce the heat to simmer until a thin syrup consistency is achieved. Strain, if desired. Add warm water if needed to thin.
  • To Serve: Serve the salmon topped with red and green peppers over the yellow rice. Drizzle over with the dark glaze.

1 tablespoon vegetable oil
1 yellow onion, diced
4 ounces guava paste, cut into chunks
2 tablespoons ketchup
1 tablespoon apple cider vinegar
1 tablespoon sugar
1/2 teaspoon sea salt (or regular)
1/4 teaspoon ground allspice
1/4 teaspoon curry powder
1/4 teaspoon cumin
1/4 teaspoon fresh cracked pepper
2 tablespoons lime juice
1 tablespoon dark rum
1 1/2 lbs salmon fillets (enough for two)
1 mango, diced
1 avocado, diced
1 small yellow onion, diced
1/4 cup fresh cilantro, chopped
3 dashes cumin
3 dashes dried chipotle powder (or regular)
1 lime, juice of

Steps:

  • Sauté only one half of the onion in oil over medium heat for 7-10 minutes until they become kind of brown.
  • Add in everything except the rum, lime and salmon. Stir together, breaking up the guava paste. Once smooth, stir in the rum and lime juice then remove from heat. Allow to cool while cutting up the salad.
  • Cube the mango, avocado, and onion. Toss with the spices and lime juice.
  • Take the remaining half of the diced onion and cover top of salmon, placed skin side down in a foil covered pan. Pour the slightly cooled glaze over the top and broil for 8 - 12 minutes depending on how you like your salmon cooked.
  • Split in half and serve on top of the salad. Squeeze half a lemon over top of entire dish.

3 tablespoons dark brown sugar
1 tablespoon low-sodium soy sauce
4 teaspoons Chinese-style hot mustard
1 teaspoon rice vinegar
4 (6-ounce) salmon fillets about 1 inch thick
Cooking Spray
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 425 degrees. Combine first 4 ingredients in a saucepan; bring to a boil. Remove from heat. Place fish on a foil-lined jelly-roll pan coated with cooking spray; sprinkle with salt and pepper. Bake at 425 degrees for 10 minutes. Remove from oven. Preheat broiler. Brush sugar mixture over fish; broil 3 inches from heat 3 minutes or until fish flakes easily when tested wit a fork or until desired doneness.

1 1/2 pounds Salmon fillet with skin removed
1/4 cup Red wine vinegar
1/4 cup Olive oil
1/4 cup Soy sauce
1/4 cup Water
1 tablespoon Lemon juice
1/2 tablespoon Red pepper flakes
1 teaspoon Onion powder
1 teaspoon Garlic powder
1/3 cup Brown sugar
2 teaspoons Fresh cilantro

Steps:

  • Place salmon in a shallow, flat dish, and set aside. Combine the rest of the ingredients in a blender. Blend until brown sugar dissolves.
  • Pour the marinade over the salmon to cover evenly. Cover the dish, and refrigerate at least 2 hours.
  • Line a broiling pan with foil. Remove salmon from marinade, and place on prepared broiling pan; season with salt and pepper.. Transfer remaining marinade to a saucepan. Turn broiler to low.
  • Broil salmon about 6 inches from the heat for 5 minutes; brush with marinade. Broil an additional 5-10 minutes, brushing 2 or 3 more times with additional marinade. Salmon is done when fish is no longer bright red and can be flaked with a fork.
  • Cook the remaining marinade over low heat until it thickens and reduces by one-third; 5-10 minutes. Use cooked marinade as a dipping sauce or drizzle over salmon just before serving.

2 skin-on salmon fillets (1/2 lb.)
2 Tbsp. apricot preserves
1/2 cup slivered red onions
1/2 cup red pepper strips
1/2 cup snow peas, trimmed
3/4 cup fat-free reduced-sodium vegetable broth
1 cup hot cooked long-grain white rice

Steps:

  • Heat 1 Tbsp. dressing in medium skillet on medium-high heat. Add fish; cook 5 min. on each side or until fish flakes easily with fork. Transfer fish to plate. Add preserves to skillet; stir until melted. Spoon over fish; cover to keep warm.
  • Add remaining dressing and vegetables to skillet; cook and stir on medium heat 2 min. or until crisp-tender.
