SPICY SWEET POTATO, SQUASH AND CARROT SOUP



Spicy Sweet Potato, Squash and Carrot Soup image

Delightfully spicy, deliciously warming.

Steps:

  • Peel and chop the garlic, chop three spring onions and the coriander stems, dice half the chilli and add to a large pot. Add the curry powder and fry in one teaspoon oil for 2 minutes.
  • Add the sweet potato, squash and carrots and fry for a few more seconds before adding the stock. Boil for 15-20 minutes.
  • Put the cashews in a freezer bag and bash a few times with a rolling pin. Toast the crushed nuts in a dry frying pan over a low heat for approximately 3-4 minutes.
  • Chop the remaining spring onions, coriander leaves and spring onions.
  • When all the vegetables are completely softened, blend the soup together. Ladle into bowls and garnish with the crushed nuts, chilli, coriander and spring onions.

1/3 cup olive oil
1/4 cup torn cilantro
1/4 cup honey
3 tablespoons fresh lime juice
1 teaspoon thyme leaves
6 cloves garlic, smashed
2 jalapenos, seeded
Kosher salt and freshly ground black pepper
1 1/2 pounds boneless skinless chicken breasts
2 tablespoons olive oil
1 medium zucchini, cut into 1/4-inch half-moons
Kosher salt.
1 medium yellow squash, cut into 1/4-inch half-moons
1 bunch scallions, cut into 1-inch lengths
1 large tomato, chopped
1 red jalapeno, seeded and thinly sliced
1/2 cup roughly chopped cilantro
Neutral oil, for oiling the grill grates
Warm tortillas, for serving
Suggested toppings: guacamole, sliced pickled jalapenos, lime wedges, tomatillo salsa, chopped scallions, shredded Cheddar

Steps:

  • For the sweet and spicy marinade: Put the olive oil, cilantro, honey, lime juice, thyme, garlic, jalapenos, 1 teaspoon salt and 1 teaspoon pepper in a food processor and pulse to puree. Transfer the mixture to a nonreactive container, add the chicken and toss to combine. Cover and refrigerate for at least 30 minutes and up to 2 hours before cooking
  • For the squash and zucchini: Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. Add the zucchini and a pinch of salt and cook until the zucchini is light brown and tender, about 3 minutes. Transfer to a plate. Repeat with the remaining 1 tablespoon olive oil, yellow squash and a pinch of salt, then transfer the cooked squash to the plate. Add the scallions to the skillet and cook, stirring once or twice, until lightly charred. Add the tomato, jalapeno and the cooked zucchini and squash and stir to combine. Add the cilantro and season with salt. Set aside.
  • Prepare a grill for medium-high heat and brush the grill grates with oil.
  • Grill the chicken breasts until marked and cooked through, 5 to 6 minutes per side. Transfer to a cutting board and thinly slice.

A Melissa Clark recipe, as published in the NYTimes, 1/7/2014. Delicious! It's a keeper. I used Asian chile-garlic sauce instead of sriracha. Clark says, "This is a meal with complex flavors and a variety of textures: velvety from the honey-roasted squash, tender and juicy from the tofu, with the occasional crunch from the sesame-seed garnish and a slight chew from the squash peel. I like to serve this dish with more hot sauce on the side, preferably over brown rice or lightly dressed baby spinach, though it's also good served all alone. As long as the squash and the tofu have each other, that's all they really need."

1 (14 ounce) package extra firm tofu, drained
2 lbs winter squash (dumpling, delicata or acorn squash, halved and seeded, unpeeled)
1 1/2 tablespoons soy sauce, more to taste
1/2 teaspoon hot sauce (sriracha, use more if you like it spicier)
kosher salt, and black pepper
1/4 cup peanut oil
1 tablespoon honey
1 tablespoon toasted sesame seeds
2 tablespoons chopped celery leaves or 2 tablespoons cilantro

Steps:

  • Drain tofu and slice into 1/2-inch-thick slabs. Cut each slab in half. Arrange tofu on a large baking sheet or several plates lined with several layers of paper towels. Place another layer of paper towels on top and weigh down tofu with another baking sheet or more plates topped with a heavy cookbook or cans. Let stand for 20 minutes. Pat tofu dry.
  • While tofu drains, heat oven to 425 degrees. Cut squash into 1/2-inch-thick half-moons. Cut each slice in half again.
  • In a small bowl, whisk together soy sauce, sriracha and a pinch of salt. Whisk in peanut oil. Spoon 3 tablespoons of the mixture into a separate bowl and reserve. Whisk honey into the original mixture. Spread squash out on a large baking sheet and pour honey-soy mixture over it. Sprinkle squash lightly with salt and pepper and toss well. My new favorite way to make butternut squash! I was recently craving something sweet and salty. Instead of snacking on something I would later regret, I added the flavors to my veggies and it was a huge hit!

1-2 pound(s) butternut squash, cubed
2-3 tablespoon(s) olive oil
2 pinch(es) red pepper flakes (adjust to taste)
1/4 cup(s) honey
1 pinch(es) salt & pepper (adjust to taste)

Steps:

  • Preheat oven to 425 degrees Costco sells organic cubed butternut squash. I use it all the time and its a great time saver.
  • Place cubed squash in your roasting pan and drizzle with olive oil. Bake for about 15 min, then remove from oven to add honey and red pepper. Give a toss and return to oven until tender. (If you prefer a bolder flavor, add more honey and red pepper after about 10 minutes)
  • Roasting time will vary, depending on what size pan you have and how much is in it. My pan was a 9x9 roaster, so it took about 35-40 minutes to cook. If were in a larger pan and more spread out, it would have cooked a little faster. Check periodically to see if the squash is tender.

SWEET AND SPICY SQUASH

Most recipes out there for using winter squash seem to involve pureeing them, but I rather like them when they are in chunks or slices. This roasted squash has a sweet, spicy and salty glaze of sorts on them, which brings out the dense sweetness of the fruit. Cut into fairly thin slices like this, it makes interesting finger food. You can vary the sugar and spice to your taste, though too much of either may overwhelm it. I used kabocha-type squash for this, though butternut should work too. You will need a dense, starchy and sweet squash

1/2 medium kabocha squash (or butternut)
3 tablespoon(s) light brown sugar
1/2 teaspoon(s) cayenne pepper
1/2 teaspoon(s) cumin
1/4 teaspoon(s) cinnamon
1/4 teaspoon(s) nutmeg
1/4 teaspoon(s) salt
1 tablespoon(s) soy sauce

Steps:

  • Preheat the oven to 400°F. Line a baking sheet or two with tin foil, silicon baking liner or parchment paper.
  • De-seed and cut the squash into slices about 1/2 inch or 1/4 inch thick. (Use a sturdy knife for cutting squash or pumpkin, on a stable surface, and be careful!)
  • Combine all the dry ingredients add Soy sauce. using your fingers coat squash slices in this until thoroughly covered with mix.
  • Spread the slices in a singler layer on the baking sheet. Drizzle over them with the oil, and optionally sprinkle more sugar on them. Bake in the preheated oven for 15 minutes, then turn over, drizzle with more oil and sprinkle more sugar, and bake for an additional 10-15 minutes. Serve hot or at room temperature.
