GERMAN-STYLE SWEET AND SOUR RED CABBAGE SOUP

German-Style Sweet and Sour Red Cabbage Soup image

Provided by Rachael Ray : Food Network

Time 3h

Yield 4 to 6 servings

Number Of Ingredients 19

1 tablespoon extra-virgin olive oil
6 slices good quality smoky bacon, chopped or very thinly sliced across
1 large onion, finely chopped
1 large carrot, peeled and finely chopped
1 1/2 teaspoons caraway or cumin seed
1 Braeburn, Northern Spy apple or other firm slightly tart variety, finely chopped
1 small red cabbage, quartered, cored and very thinly sliced (about 1 1/2 pounds)
Freshly ground black pepper
Freshly grated nutmeg
5 to 6 juniper berries
3 to 4 whole cloves
2 fresh bay leaves
Curl orange rind
1 small cinnamon stick
1/4 cup cider vinegar or wine vinegar
2 rounded tablespoons dark brown sugar
6 cups chicken stock
Kosher salt
Special equipment: Kitchen twine

Steps:

  • Serve with grilled Swiss or extra-sharp white Cheddar cheese on pumpernickel or whole grain bread.;
  • Heat a large Dutch oven or soup pot over medium-high heat. Add 1 tablespoon extra-virgin olive oil, and bacon. Brown and crisp bacon and remove to a plate, draining off some fat if you have more than enough to lightly coat the bottom of the pot.
  • Add the onions, carrots, caraway, and apples, and stir a few minutes. Then wilt in the cabbage and season with black pepper and some freshly grated nutmeg. Cover with the lid slightly ajar and wilt cabbage while you prepare the sachet. Fill the cheesecloth with the juniper berries, cloves, bay leaves, orange rind, and cinnamon, and use kitchen twine to tie it to the side of the pot. Drop it into the pot and stir into the cabbage. Add the vinegar, keeping your head back from the hot pot, brown sugar, stock, and water, and bring the soup to a boil. Reduce heat and simmer 1 to 1 1/2 hours, until cabbage is very tender and soup has thickened. Stir the bacon bits back in, then adjust the salt to your taste.
  • Cool and store for a make-ahead meal, or serve with grilled cheese sandwiches.

SWEET AND SOUR CABBAGE SOUP

Sweet and Sour Cabbage Soup image

My version of an old favorite Ashkenazi Jewish recipe. I make a stock first, then make the soup. This allows for de-fatting for a healthier soup, but you need to make this on two days, so time accordingly. For a healthier version, use sucralose instead of sugar - there is virtually no taste difference in sweet and sour recipes such as this one. Using Savoy cabbage gives the soup superlative texture and flavor.

Time P1DT7h

Yield 12

Number Of Ingredients 17

4 pounds bone-in beef shank
12 cups water
3 carrots, peeled and cut into 3-inch pieces
3 onions, peeled
4 stalks celery with leaves
1 bay leaf
16 peppercorns
2 tablespoons vegetable oil
1 onion, peeled and diced
2 cloves garlic, minced
1 tablespoon sweet Hungarian paprika
1 head Savoy cabbage, coarsely chopped
1 (14.5 ounce) can diced tomatoes with juice
1 lemon, juiced
¼ cup white sugar
¼ cup chopped fresh dill
salt and freshly ground black pepper to taste

Steps:

  • Combine the beef shanks and water in a large stock pot. Bring to a boil and reduce the heat to a very low simmer. Use a strainer to skim off any foam on the surface. Add the carrot pieces, whole onions, celery stalks, bay leaf, and peppercorns. Simmer for 4 hours, skimming the surface occasionally.
  • Strain the stock. Discard the vegetables but reserve the meat. Allow the stock to cool to room temperature, then transfer to a covered container and refrigerate overnight. When the beef shanks are cool, remove the meat from the bones. Discard bones and gristle. Dice the meat and any remaining marrow into small cubes. Cover the container and refrigerate overnight.
  • The next day, heat the vegetable oil in a stock pot or Dutch oven over medium heat. Stir in the garlic and 1 diced onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the paprika and cook 1 additional minute, stirring constantly. Gradually add the cabbage and cook, stirring occasionally, until slightly wilted and reduced in bulk, about 8 minutes.
  • Remove the beef stock from the refrigerator; skim and discard any fat. Pour the stock into the pot; stir in the reserved chopped beef. Add the tomatoes with their juice. Bring the soup to a boil, and then reduce the heat to a simmer. Cook the soup, partially covered, until the cabbage is quite soft, about 1 hour.
  • Stir in the lemon juice, sugar, dill, salt, and pepper. Add more water, if desired, for a thinner soup. Cook for 5 minutes, uncovered. Taste and adjust the seasonings before serving.

Cream of Roasted Red Bell Pepper Soup with Roasted Sweet Corn and Cilantro- Lime Sour Cream image

Provided by Food Network

Categories     main-dish

Time 1h

Yield 6 servings

Number Of Ingredients 16

8 large red bell peppers
2 tablespoons unsalted butter
1 cup chopped onion
2 cloves minced garlic
1/4 cup tomato paste
6 cups chicken stock
2 cups heavy cream
2 tablespoons chopped fresh cilantro leaves

Cilantro Lime Sour Cream, recipe follows

Steps:

  • Slice the peppers in half lengthwise; remove stem, seeds and membrane. Place under the broiler skin side up until the skin turns black and blisters. Remove peppers and rub off the black skin with your fingers. Chop skinned peppers and set aside.
  • Saute the butter, onions, and garlic until soft in a heavy bottomed soup pot on medium-low heat. Add the reserved red peppers, tomato paste, and chicken stock. Bring to a low boil, reduce the heat, and then simmer for 10 minutes. Stir in the heavy cream, cilantro, salt, and pepper. Stir in the cornstarch mixed with a little cold water to thicken. Simmer 5 minutes. *Let the soup cool slightly, and then blend in batches in a blender, or use an immersion blender to puree. Sprinkle the roasted corn over the soup before serving and top with a dollop of Cilantro Lime Sour Cream.
  • In a mixing bowl, whisk all ingredients vigorously until light and creamy.

SWEET AND SOUR CABBAGE SOUP

Sweet and Sour Cabbage Soup image

One of my absolute favorite soups is sweet and sour cabbage soup. Since I haven't been able to get to my usual place lately to get my fix, I've been having a terrible craving. So I decided to do something about it. After going through recipe after recipe that didn't come close to what I have become accustomed to, I came to...

Provided by Robert Kimmons

Categories     Vegetable Soup

Time 6h15m

Number Of Ingredients 11

2 can(s) diced tomatoes with juice (14.5 oz)
1 can(s) tomato sauce (8 oz)
2 c baby carrots, halved
1 medium onion
1/2 c white vinegar
1/2 c white sugar
1 1/2 tsp salt
1/2 tsp ground black pepper
2 qt water or vegetable broth
3 Tbsp minced garlic
1 medium cabbage head

Steps:

  • 1. In a large crock pot or stock pot add all of the ingredients, except for the cabbage. Note that if you less of a tang to your soup, adjust the vinegar from ½ a cup to 1/3 of a cup. If you want a sweeter soup, just increase the measurement by a tablespoon at a time and taste test it until satisfied. Start heating all the ingredients on high if cooking in a crock pot and over medium heat if cooking on the stove top.
  • 2. Core the head of cabbage. Cut into quarters and slice the quarters into one inch segments, keeping the shape of the wedge. Then cut the wedge in the other direction so that you end up with spoon sized pieces of cabbage. Add the cut cabbage to the broth, working the cabbage down into the pot as much as possible.
  • 3. Cook until cabbage is soft. I cooked mine in the crock pot for six hours on the high setting. Four probably would have been enough, but you can try it and judge for yourself. If cooking on the stove top, this should be about an hour and a half to two hours over medium heat.

SWEET-AND-SOUR SHRIMP SOUP

Sweet-and-Sour Shrimp Soup image

Provided by Molly O'Neill

Categories     one pot, soups and stews, appetizer

Time 1h30m

Yield About 7 cups

Number Of Ingredients 14

3 pounds medium shrimp, shells on
2 tablespoons vegetable oil
1 stalk lemongrass, smashed
1 2-inch piece ginger
1/2 teaspoon dried chili powder
1 cup tomatoes, chopped and stewed
1 tablespoon roasted sesame-seed oil
2 cups 1/2-inch chunks fresh pineapple
2 teaspoons Vietnamese fish sauce
4 scallions, julienned
2 1/2 teaspoons lime juice
3/4 teaspoons sugar
Salt and freshly ground black pepper to taste
1/2 cup cilantro leaves

Steps:

  • To make the broth, peel the shrimp, saving the shells (about 5 cups). Refrigerate the shrimp. In a heavy pot, heat the oil over high heat. When nearly smoking, add the shells, lemongrass, ginger and chili powder and toss for 3 minutes, or until the shells are toasted. Add 8 cups water and tomatoes and bring to a boil. Reduce heat and simmer uncovered for 1 hour, or until reduced by half. Strain the broth through a fine sieve, pressing down on the shells to extract liquid. (You should have 5 cups; if you have less add water to equal 5 cups.) Discard solids.
  • To make the soup, return the broth to the pot. Add the sesame oil, pineapple and fish sauce and simmer, uncovered, 10 minutes. Add the scallions, lime juice, sugar, and 1 pound of the reserved shrimp. (Save the rest for another use.) Heat until the shrimp are cooked through, about 5 minutes. Season with salt and pepper, stir in the cilantro and serve.

VEGETARIAN SWEET AND SOUR CABBAGE SOUP

SWEET AND SOUR CABBAGE SOUP WITH RAISINS

Sweet and Sour Cabbage Soup With Raisins image

This soup is simple and cheap to make, and a favorite comfort food in my family. My mother got the recipe from a former employer and friend, and passed it along to me. It is not a highly flavored soup, so feel free to add extra seasoning if you are eating it as a main dish. The cracked black pepper and fresh lemon juice are important to the flavor of the dish. I usually add extra raisins because I like them so well.

Provided by galponetta

Categories     Clear Soup

Time 1h5m

Yield 4-6 serving(s)

Number Of Ingredients 10

1 lb lean ground beef
1 medium onion, chopped
1/2 cabbage, thinly sliced
1 (15 ounce) can stewed tomatoes
4 cups water
2 tablespoons fresh lemon juice
2 tablespoons honey
1/4 cup golden raisin
1/2 teaspoon salt (to taste)
1/2 teaspoon black pepper, coarsly ground

Steps:

  • Brown the beef in in large dutch oven or stock pot over medium high heat.
  • After a few minutes, add the onion, and continue cooking until the onions are transparent, and most of the pink is gone from the meat, about 10 minutes total.
  • Drain any excess grease from the meat and onions, and return to the pan.
  • Add the cabbage and 1/4 cup of the water, cover, and cook over medium heat until the cabbage is limp and getting tender, but still holds its shape, stirring occasionally, about 15 minutes.
  • Add the remaining ingredients, and simmer until the vegetables in the soup are as tender as you would like, about 30 minutes.
  • Serve with additional lemon juice and fresh ground pepper, to taste.
  • Like many soups, this is much better the second day after the flavors have a chance to blend.

1 teaspoon thinly sliced fresh ginger root
2 parsnips, peeled and thinly sliced
2 sprigs fresh thyme
1 teaspoon crushed red pepper flakes
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon honey, or to taste
1 pound walleye fillets, cut into pieces

5 leaves fresh basil, chopped
2 green onions, chopped
1 sprig fresh mint leaves for garnish

Steps:

  • Stir the chicken stock, water, and lemon juice in a large pot with the onion, garlic, ginger, and parsnips. Season with thyme, red pepper flakes, salt, and pepper. Bring to a simmer over medium-high heat, and cook until the parsnips are tender and the onions are translucent, about 10 minutes.
  • Remove and discard the thyme sprigs. Stir in the honey to your desired level of sweetness. You don't want the broth too sweet. Lower the heat to a gentle simmer, and stir in the walleye and bean sprouts. Cook gently for 5 minutes, then add the basil and green onion. Continue cooking until the fish is flaky and opaque, about 5 minutes more. Season to taste with salt and pepper. Garnish with mint leaves to serve.

SWEET AND SOUR EGG DROP SOUP

Sweet and Sour Egg Drop Soup image

For me, Chinese food is just as mysterious as it is delicious. One night I had a craving for Chinese restaurant soup, so I raided the pantry and refrigerator for leftovers and came up with this concoction. This soup is easy to make and a good starting point for brave Chinese cooking beginners. I'd definitely try making it again, only with more diverse vegetables to get different textures. Bamboo shoots, water chestnuts, mushrooms, bean sprouts, green onions, julienne carrot strips, the options are endless. (By the way, I don't measure when I cook so these measurements are approximated.)

Yield 1/2 cup, 8-10 serving(s)

Number Of Ingredients 17

5 cups water
1 (4 1/3 ounce) package lipton chicken noodles and sauce
1 whole chicken bouillon cube, soup base
1 (1 ounce) packet ramen noodle seasoning (I used mushroom)
1 dash black pepper
1 dash dried onion flakes
3 large egg whites
1 large egg yolk
1 piece imitation crabmeat, leg sliced into rounds
1/8 cup diced carrot
1 pinch ground ginger
1 teaspoon red French dressing (for sourness)
1 -2 tablespoon of your favorite sweet and sour sauce (for sweetness)
1 tablespoon ketchup (for tangyness)
5 -10 dashes of tabasco hot pepper sauce (for heat)
2 tablespoons cornstarch
4 -5 tablespoons cool water

Steps:

  • Bring water to a rumbling boil in a saucepan.
  • Stir in package of chicken noodles, soup base cube, Ramen seasoning packet, pepper, and dehydrated onion.
  • When seasonings are dissolved and noodles are tender but not too soft, beat egg whites and yolk with a whisk. Slowly add beaten eggs by swirling them into the broth with your whisk. It should take the whisk 4 or 5 trips to get them all inches.
  • When eggs are done, mix cornstarch and water. Slowly add cornstarch mixture while stirring to thicken soup. (Make sure there's enough water so you don't create a batter. You don't want lumps or dumplings forming.).
  • Add ginger, red French dressing, sweet and sour sauce, ketchup, and hot pepper sauce sauce to taste, stir well.
  • Add carrot and crab meat. (I used cooked, leftover carrots. If you only have fresh carrots, cut them and then microwave until tender with a bit of water in a glass dish covered with plastic wrap.).
  • Reduce heat to medium and cook a few minutes, until heated through.

Time 1h45m

Yield 4 servings

Number Of Ingredients 18

6 beefsteak tomatoes, halved
2 cloves garlic, crushed
1 red chile, seeds and ribs removed
4 tablespoons olive oil
Juice from 2 limes
1 English cucumber, peeled, seeds removed, coarsely chopped
1 tablespoon chopped fresh basil, plus more for garnish
1 tablespoon chopped fresh cilantro, plus more for garnish
Salt and freshly ground black pepper
2 tablespoons lemon juice
2 tablespoons granulated sugar
2 tablespoons red wine vinegar
1 tablespoon soy sauce
Eight to ten 21/25 count shrimp, cleaned, deveined, tails removed
Salt and freshly ground black pepper
2 tablespoons olive oil
2 cloves garlic, peeled and sliced
1 teaspoon sesame oil

Steps:

  • For the soup: Prepare a grill over high heat. Brush the tomatoes, garlic and chile with 2 tablespoons of the olive oil, then grill until softened and slightly charred, turning occasionally, 5 to 10 minutes. Transfer to a blender with the lime juice, cucumber and the remaining 2 tablespoons olive oil and puree in batches until smooth. Fold in the basil and cilantro. Season with salt and black pepper. Refrigerate until chilled, 1 to 2 hours.
  • For the shrimp: Combine the lemon juice, sugar, vinegar and soy sauce in a small saucepan. Bring to a boil over medium heat, and then reduce the heat and simmer for 5 minutes. Remove and let cool.
  • Sprinkle the shrimp with salt and black pepper. Heat the olive oil in a large saute pan over high heat. Add the garlic and saute until just golden. Remove the garlic and discard. Add the shrimp and saute until cooked through and opaque, about 1 minute per side. Add the sweet and sour sauce and bring to a boil. Remove from the heat, let cool and stir in the sesame oil.
  • To serve, divide the soup among 4 shallow soup bowls and place 2 shrimp in the center of each. Garnish with basil and cilantro.
