When co-workers hear I've baked these melt-in-your-mouth cookies, they make a special trip to my floor to sample them. Number Of Ingredients 6

1 cup butter, cubed
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1 cup confectioners' sugar
1 cup miniature semisweet chocolate chips
Melted semisweet and/or white chocolate, optional

Steps:

  • Melt butter in a microwave; stir in vanilla. Cool completely. In a large bowl, combine flour and confectioners' sugar; stir in butter mixture and chocolate chips (mixture will be crumbly). , Shape into 1-in. balls. Place 2 in. apart on ungreased baking sheets; flatten slightly. Bake at 375° for 12 minutes or until edges begin to brown. Cool on wire racks. Dip or drizzle with chocolate if desired.

1 cup butter
2/3 cup brown sugar, packed
1 teaspoon vanilla
1 egg, beaten
2 cups flour
1/8 teaspoon salt
1/2 cup cocoa
2 cups chocolate chips

Steps:

  • Cream butter and brown sugar.
  • Beat in vanilla and eggs.
  • Sift together flour,salt and cocoa.
  • Stir dry ingredients into creamed mixture,then fold in chocolate chips.
  • With damp hands,roll dough from a rounded teaspoon into 1" balls.
  • Place on greased baking sheet @ 350F for 20 minutes.

2/3 cup (1 1/3 sticks) butter, room temperature
3/4 cup granulated sugar
1/4 cup dark brown sugar, packed
1/4 cup applesauce
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mini semisweet chocolate chips
12 ounces dark chocolate wafers or semisweet chocolate chips
6 blocks chocolate-almond bark, such as CandyQuik

Steps:

  • For the cookie dough balls: In an electric mixer, beat the butter, granulated sugar, brown sugar, applesauce and vanilla together until smooth. Sift the flour, baking soda and salt together, and with the mixer running, slowly add to the butter mixture. Mix in the chocolate chips. Scoop out the batter using a mini ice cream scoop and roll it into balls. Place the dough balls about an inch apart on a baking sheet lined with wax paper and transfer them to the freezer for 30 minutes to let the dough set up.
  • For the dipping chocolate: While the dough is chilling, melt the chocolate wafers and chocolate-almond bark together in a heavy-bottomed saucepan over low heat, stirring constantly. Remove the chilled dough balls from the freezer. Using two spoons, dip the balls one at a time in the melted chocolate, rolling them to coat fully. Returned the dough balls to the wax paper-lined baking sheet and refrigerate until set, about 30 minutes. Store in the fridge for up to 2 weeks.

1 cup butter, softened
1 cup packed brown sugar
3/4 cup sugar
2 large eggs, room temperature
1-1/2 teaspoons vanilla extract
2-2/3 cups all-purpose flour
1-1/4 teaspoons baking soda
1 teaspoon salt
1 package (12 ounces) semisweet chocolate chips
2 cups coarsely chopped walnuts, toasted

Steps:

  • In a large bowl, beat butter and sugars until blended. Beat in eggs and vanilla. In a small bowl, whisk flour, baking soda and salt; gradually beat into butter mixture. Stir in chocolate chips and walnuts., Shape 1/4 cupfuls of dough into balls. Flatten each to 3/4-in. thickness (2-1/2-in. diameter), smoothing edges as necessary. Place in an airtight container, separating layers with waxed paper or parchment; refrigerate, covered, overnight., To bake, place dough portions 2 in. apart on parchment-lined baking sheets; let stand at room temperature 30 minutes before baking. These wonderful cookies stay in a ball shape and are fantastic! My sister shared this recipe with me and her hint was to keep them stored in the refrigerator, which I have to agree- almost tastes like candy! Very good! We both double this recipe each time we make it.

1 cup flour
1/2 cup white sugar
1/2 cup brown sugar
1 cup peanut butter
2 cups chocolate chips
1 egg
granulated sugar, for rolling

Steps:

  • Combine all the above ingredients (we do it by hand, but I am sure a mixer is fine) and roll into balls, then roll into sugar.
  • Place on cookie sheet.
  • Bake at 350 for 10 minutes, no longer!
