This is our busy family's go-to recipe for delicious chicken meat that can be used to make enchiladas, tacos, burritos, nachos, even over rice and beans. So easy to prepare, and the enchilada sauce is to die for. I normally put this together at lunch and serve it after work. Use in your favorite Mexican recipes. Pork or beef can be substituted for the chicken.

2 cups chicken broth
1 (14.5 ounce) can diced tomatoes
⅓ cup chili powder
½ cup all-purpose flour
1 clove garlic
2 teaspoons ground cumin
1 teaspoon oregano
1 teaspoon salt, or to taste
1 pinch cayenne pepper, or more to taste
4 skinless, boneless chicken breast halves

Steps:

  • Blend chicken broth, tomatoes, chili powder, flour, garlic, cumin, oregano, salt, and cayenne pepper in a blender until smooth.
  • Put chicken breast in bottom of a slow cooker; pour blended enchilada sauce over the chicken.
  • Cook on Low 8 to 9 hours (or 4 to 6 hours on High). Shred the chicken with 2 large forks and stir into the sauce.

1 (10.75 ounce) can condensed low fat cream of chicken and herbs soup
1 (4 ounce) can mushroom pieces, drained
½ red onion, chopped
1 ½ pounds skinless, boneless chicken breast halves - cut into strips
1 dash Marsala wine

Steps:

  • Combine soup, mushroom pieces, onion, chicken, and wine in slow cooker.
  • Cook on Low setting for 2 1/2 to 3 hours.

4 boneless, skinless, chicken breasts
salt & pepper to taste
1/4 c (1/2 stick) butter
1 small onion, chopped
2 medium carrots, scraped and diced
2 stalk(s) celery, diced
1 can(s) chicken broth
2 can(s) cream of chicken soup
1/2 c frozen peas
1/2 c frozen corn
hot cooked biscuits, rice, egg noodles or mashed potatoes
2-3 Tbsp fresh, chopped parsley

Steps:

  • 1. Place chicken breasts in slow cooker. Sprinkle with salt & pepper. Top with pats of butter equaling to 1/4 cup.
  • 2. Add carrots, celery and onion to pot. Pour in 1 can chicken broth. Stir in 2 cans cream of chicken soup.
  • 3. Slow cook on high for 4 hours or on low for 8 hours.
  • 4. Remove chicken to plate. Shred chicken and add back into slow cooker along with frozen peas and corn. Slow cook another 20 minutes or until frozen peas and corn are thawed and hot.
  • 5. Serve over hot biscuits, egg noodles, white rice, or mashed potatoes! Sprinkle with a bit of fresh parsley before serving!
