Number Of Ingredients 13

4 medium tomatoes, chopped
1 medium mango, peeled and chopped
1 medium ripe avocado, peeled and cubed
3/4 cup fresh or frozen corn, thawed
1/2 cup minced fresh cilantro
1/2 cup canned black beans, rinsed and drained
1/4 cup chopped red onion
1 jalapeno pepper, seeded and chopped
3 tablespoons lime juice
1 tablespoon olive oil
2 garlic cloves, minced
1/4 teaspoon salt
Baked tortilla chip scoops

Steps:

  • In a large bowl, combine the first 12 ingredients. Chill until serving. Serve with tortilla chips.

This makes a big batch that will keep in the fridge for 1 week, but it has never lasted that long! I grow everything except the garlic in my garden so we always have the ingredients on hand.

Number Of Ingredients 9

3 -4 lbs tomatoes
1 small chopped onion
1 chopped green pepper
1 chopped sweet red pepper
1 serrano pepper, finely chopped
1/4 cup chopped cilantro
4 fresh minced garlic cloves
1/4 cup sugar
salt and pepper

Steps:

  • Submerge the tomatoes into boiling water for 30 seconds and then plunge into cold water to remove the skins.
  • Squeeze the tomato over the sink to remove excess juice (if you don't your salsa will be watery).
  • Place in a large bowl and using your hands or potato masher smash the tomato up till no big chunks.
  • Stir in onion, peppers (you may wish to taste the salsa as you add the serrano to control the heat), cilantro, and garlic.
  • Add sugar, then salt and pepper to taste.
  • Chill 1/2 hour before serving to incorporate the flavors. time includes chill time.

4 medium cucumbers, diced finely
1 red pepper, diced finely
1 yellow pepper, diced finely
1 medium onion, diced finely
3 medium tomatoes, seeds removed, diced finely
1/2 c apple cider vinegar
4 Tbsp Mrs. Dash Salt Free Garlic & Herb Seasoning blend
2 tsp salt or more to taste
1 tsp ground pepper
2 tsp sugar
1 tsp garlic powder
1 pinch red pepper flakes, if desired

Steps:

  • 1. Chop all vegetables very fine and place in a bowl.
  • 2. Add remaining ingredients.
  • 3. Stir completely.
  • 4. Place in a bowl with airtight lid and let marinate all day. Stir once in a while to distribute all the vegetables in the vinegar.
  • 5. Enjoy with tortilla chips, over tacos, or in a taco salad.

I made this up today. It may be spicy for some but just right if you like a bit of a kick and like to use fresh grilled veggies. I used elephant garlic because that's what I had available. I like how this salsa turned out with it. This garlic is milder than it's smaller companion and does not overpower the dip. I just love this...

4 jalapenos, fresh and whole
4-5 onions, small white
1/2 bunch cilantro, fresh
3-4 medium tomatoes, fresh and peeled
1 lime
1/2 clove elephant garlic
1 1/2 tsp salt
1 tsp white pepper

Steps:

  • 1. Half the onions. Place the onions and jalapenos in a foil boat and place on the grill. I usually will do this when something else is on the grill so not to waste fuel. Leave the top of you foil boat open and cook for about an hour, until the onions are soft. Jalapenos will be crinkled. Cool.
  • 2. Meanwhile, blanch your tomatoes until the skin is ready to be peeled. You can also put them on the grill as well. I have done both. Let the tomatoes cool then put in food processor. Puree your tomatoes.
  • 3. In the food processor, chop up your onions, jalapenos, garlic and cilantro until they are chopped fine. Add mixture to your tomatoes.
  • 4. Add juice from one lime, salt and pepper and mix. Let stand in the frig for about an hour. The grill really gives your salsa a wonderful flavor. It's my favorite way to do this dip. Enjoy!

2 tablespoons chopped cilantro leaves
1/4 teaspoon cumin powder
1/4 teaspoon oregano

1 avocado
1/4 cup corn
3 tablespoons red wine vinegar
3 tablespoons olive oil
salt and pepper
1 jalapeno, minced (or more, to taste)

Steps:

  • Chop all vegetables, and toss together with remaining ingredients.

1 small onion, finely chopped
1 small spanish (red) onion, finely chopped
1 garlic clove, finely chopped
1 lime, zest & juice
pinch of salt
drizzle of olive oil
4 roma tomatoes, chopped
1/2 cup celery, finely chopped
1/4 orange bell pepper, chopped
1/4 red bell pepper, chopped
1/4 yellow bell pepper, chopped
1/4 green bell pepper
1 jalapeno, seeded & diced (optional)
1/2 cucumber, chopped
1 cup black beans
1 cup frozen corn kernels
1/4 cup black and green olives finely sliced (optional)
1/2 cup chopped cilantro

Steps:

  • In a large bowl, combine the chopped onions, garlic, lime zest & juice, and salt. Stir to mix well and let sit while the rest of the ingredients are chopped. This will soften the bite of the onion and garlic. Add the rest of the ingredients and mix well. Serve immediately or refrigerate until ready to serve. Keeps well for several days refrigerated. Serve wrapped in lettuce leaves or with rice crackers for a low carb low calories snack.
