3 tablespoons olive oil
4 skinless boneless chicken breast halves
3 tablespoons fresh lemon juice
4 garlic cloves, chopped
1 teaspoon (packed) grated lemon peel
1 cup canned low-salt chicken broth
1/2 cup chopped fresh basil or 1 tablespoon dried

Steps:

  • Heat olive oil in heavy large skillet over medium-high heat. Sprinkle chicken with salt and pepper. Add chicken to skillet and sauté until brown and cooked through, about 5 minutes Per side. Transfer chicken to platter; tent with foil.
  • Add lemon juice, garlic and lemon peel to same skillet. Stir over medium-high heat until fragrant, about 30 seconds. Add chicken broth; boil until reduced to sauce consistency, about 8 minutes. Mix basil into sauce. Season to taste with salt and pepper.
  • Spoon sauce over chicken and serve.

1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
3 teaspoons butter, divided
8 plum tomatoes, seeded and chopped
1 small onion, finely chopped
1 garlic clove, minced
1/2 cup reduced-sodium chicken broth
1 cup uncooked whole wheat orzo pasta
1 cup evaporated milk
1/2 cup loosely packed basil leaves, julienned
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup crumbled feta cheese

Steps:

  • In a large nonstick skillet coated with cooking spray, cook chicken in 2 teaspoons butter until no longer pink. Remove and keep warm. In the same skillet, saute tomatoes and onion in remaining butter until onion is softened. Add garlic; cook 1 minute longer., Stir in broth. Bring to a boil; add orzo. Reduce heat. Cover and simmer for 10-12 minutes or until orzo is tender. Stir in the chicken, milk, basil, salt and pepper; heat through (do not boil). Sprinkle with cheese just before serving.

6 chicken thigh fillets, cut into quarters
1 red onion, sliced into rings
4 bacon, rashers chopped
2 -3 garlic cloves, crushed
1 (13 1/2 ounce) can chopped tomatoes
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 teaspoon sugar
12 kalamata olives
1/4 cup fresh basil, chopped
salt and pepper

Steps:

  • Cook the chicken pieces for 5 minutes over moderate-high heat.Set aside.
  • Fry the onion with bacon and add the garlic.Cook for 5 minutes till bacon is browned.
  • Add tomatoes, dried basil and oregano and sugar.
  • Cook for 5 minutes or until slightly reduced .
  • Add the chicken to the pan,simmer for 10 minutes and add Kalamata olives with fresh basil.

2 shallots, chopped
3 cups chopped seeded tomatoes
1/2 cup dry white wine
2 tablespoons drained capers
2 teaspoons brine (RESERVED)
4 tablespoons chopped fresh basil

Steps:

  • Heat olive oil in a heavy medium skillet over medium-high heat.
  • Sprinkle chicken breast halves with salt and pepper.
  • Add chicken to skillet and cook until golden brown about 5 minutes per side.
  • Add chopped shallot to same skillet; saute 30 seconds.
  • Stir in tomatoes, white wine, capers, and caper brine.
