SUGAR COOKIE WITH ORANGE-CINNAMON ICING

Sugar Cookie with Orange-Cinnamon Icing image

Provided by Food Network

Categories     dessert

Time 1h50m

Yield 30 to 40 cookies

Number Of Ingredients 12

4 sticks (2 cups) salted butter, at room temperature
2 cups granulated sugar
2 large eggs
6 cups all-purpose flour, plus more for dusting
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 teaspoons vanilla extract
2 teaspoons lemon juice
1/4 teaspoon ground cinnamon
4 large egg whites
Grated zest of 1 orange
6 cups confectioners' sugar

Steps:

  • For the sugar cookie: Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment.
  • In a stand mixer, cream the butter and sugar together well. Add the eggs 1 at a time, mixing between each addition. On low speed, slowly add the flour, baking powder and salt and mix. Add the vanilla extract and 2 teaspoons water and mix just until combined; do not over mix! Refrigerate the dough for 30 minutes
  • Dust a work surface with flour. Roll out the dough about 1/4 inch thick and cut into shapes using your favorite cookie cutters. Transfer to the prepared baking sheets and bake until no longer translucent and just golden at the edges, 7 to 9 minutes. Cool slightly on the baking sheets, then transfer to a wire rack to cool completely. Continue rolling and baking any remaining dough, re-rolling scraps once.
  • For the icing: Whisk together the lemon juice, cinnamon, egg whites and orange zest in the bowl of a stand mixer. Using the paddle attachment and on medium speed, gradually add the confectioners' sugar and beat until the icing is the desired stiffness. Transfer the icing to a piping bag and pipe on the cookies in desired decorative patterns.

EASY SUGAR COOKIE ICING RECIPE

Easy Sugar Cookie Icing Recipe image

Easy Sugar Cookie Icing Recipe

Provided by @MakeItYours

Number Of Ingredients 7

2 cups powdered sugar
6 teaspoons water
4 teaspoons light corn syrup (Karo brand is best, see note below)
1/2-1 teaspoon vanilla extract, oil-free (start with 1/2 teaspoon and add more to your taste)
1/2-1 teaspoon almond extract, oil-free (start with 1/2 teaspoon and add more to your taste)
1/8 teaspoon salt (to help balance out the sweetness)
Food Coloring

Steps:

  • Pour all ingredients a medium sized mixing bowl. Using a rubber spatula, stir the sugar cookie icing for 1-2 minutes until it is smooth and glossy. When you start stirring, you may think it's never going to work because it looks chunky but keep stirring and it will get smoother.
  • Once smooth and glossy mix in a tiny bit of food coloring, as desired. If wanting to use multiple colors, this is when you will divide the icing into their own bowls before adding the color.
  • After adding the food coloring, your icing should be slightly runny, while still keeping its body. It will be at the correct consistency when you drive a knife through the center and the "crease" closes up in 15 seconds. If it takes longer than 15 seconds, you need to add more water (1/8 teaspoon at a time). If it takes shorter than 15 seconds, you need to add a little more powdered sugar (1 teaspoon at a time). *** SEE TUTORIAL VIDEO IN THE POST ABOVE TO WATCH HOW I DO IT ****Different climates and humidity levels can affect how dry the icing is, but this recipe can be adaptable by following the instructions above.
  • Spoon the icing into piping bags or squeeze bottles with #2 tips. Although harder to control, you can also spoon the sugar cookie icing into plastic ziploc bags and snip off one corner.
  • To decorate, first outline each cookie with the icing. Once outlined, fill in the rest of the cookie with the icing and use a toothpick to help spread the icing and fill in any holes.
  • Enjoy the cookies immediately OR allow the icing to harden for about 12 hours, uncovered. You do not need to cover the cookies while they're hardening. The cookies will stay soft for 4-5 days in an airtight container.

CUTOUT SUGAR COOKIE & ICING RECIPE RECIPE - (4.5/5)

Cutout Sugar Cookie & Icing Recipe Recipe - (4.5/5) image

Provided by Renna

Number Of Ingredients 15

ICING:
1 cup real butter, softened
1 cup sugar
2 eggs
1/2 teaspoon vanilla
1/2 teaspoon almond extract (can omit almond and add 1 teaspoon vanilla)
3 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups confectioners' sugar, sifted
1 or more tablespoon milk
1 tablespoon light corn syrup
1/4 teaspoon almond extract (can use 1/2 teaspoon vanilla in place of the almond)
Food coloring

Steps:

  • In large bowl with mixer, combine butter and sugar, add eggs and extracts; Beat on high until light and fluffy. In another bowl combine flour, baking powder, baking soda and salt; gradually stir into the butter mixture until well blended. Cover bowl with plastic wrap and chill for 2 hours. Set oven to 400°F. Line cookie sheets with parchment paper. On very lightly floured surface roll out the dough into about 1/4-inch thickness. Cut into desired shapes using cookie cutters. Place cookies 2-inches apart on cookie sheet. Bake 4-6 minutes. Remove cookies to wire racks to cool completely before icing. Icing: In a small bowl mix the confectioners sugar with milk (start with 1-2 tablespoons, you will likely need more milk for the perfect spreading consistency). Beat in corn syrup and almond extract until the icing is smooth and glossy (if the icing is too thick add in a small amount more of corn syrup). Divide into as many separate bowls as you wish for different colors. Add in food coloring until desired intensity is achieved. Decorate as desired....you can use small paint brushes, piping bags or dip the cookies in the icing to add detail. Allow to set on waxed paper until icing is set. Icing will harden. Amount of cookies depends on size of cutters you use.
