3 cups strawberries, hulled and sliced
¼ cup confectioners' sugar
1 tablespoon brandy
1 ½ cups chilled sparkling wine
3 large strawberries

Steps:

  • Blend 3 cups strawberries, confectioners' sugar, and brandy together in a blender until smooth. Chill in refrigerator for 10 minutes.
  • Divide the strawberry mixture among 3 champagne flutes; top each with about 1/2 cup sparkling wine; stir. Garnish each glass with 1 strawberry.

1 pint strawberries, stemmed, plus 8 long-stemmed strawberries, for garnish
2 tablespoons simple syrup, recipe follows
Champagne
2 parts sugar
2 parts water

Steps:

  • Place strawberries and simple syrup into a blender. Strain strawberry mixture. Pour into glasses and top with Champagne. Garnish each with a long-stemmed strawberry.;
  • Bring sugar and water to a boil. Simmer until the sugar dissolves. Remove from the heat and allow to cool.

1 cup sugar
1 pound frozen strawberries
2 tablespoons lemon juice
Chilled sparkling rose, for serving

Steps:

  • Make a simple syrup: Add the sugar and 1 cup water to a small saucepan and heat over low heat until the sugar is dissolved. Transfer to a container and allow to cool completely in the fridge, about 45 minutes.
  • Add the strawberries and lemon juice to a blender with the cold simple syrup; blend until smooth. Strain through a fine-mesh strainer to remove the seeds. Transfer to a pitcher and chill until ready to use.
  • To serve, add about 2 tablespoons of the strawberry puree to a champagne flute and top off with the chilled rose.

2 cups fresh strawberries, pureed and strained
1 (750 liter) bottle sparkling apple cider (or use 3 cups sparkling water)

Steps:

  • Place 8 Champagne flutes in the freezer for 20 minutes.
  • Open the sparkling cider and let it stand in an ice bucket for 5 minutes(or place in freezer for about 15-20 minutes).
  • Into a pitcher, pour the 2 cups pureed strawberries. Gently pour in the bottle of sparkling cider, stir gently to combine.
  • Divide among Champagne flutes and serve. Enjoy!
