This strawberry cobbler using fresh strawberries is a fantastic summer dessert. The strawberry filling is saucy without being runny, and the strawberries keep their shape and burst with flavor. ⅓ cup white sugar
⅓ cup water
2 ½ tablespoons cornstarch
2 pounds fresh strawberries, hulled and quartered
1 ⅓ cups all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
1 cup unsalted butter, softened
⅔ cup white sugar
2 eggs
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine sugar, water, and cornstarch in a saucepan. Cook over medium heat, stirring constantly, until very thick, about 5 minutes. Remove from heat and mix in strawberries. Pour mixture into a 9x13-inch baking dish.
  • Stir flour, baking powder, and salt together in a small bowl. Set aside.
  • Cream butter and sugar in a bowl with an electric mixer until light and fluffy. Beat in eggs and vanilla extract. Add flour mixture and stir with a spatula just until ingredients are combined. Drop batter by rounded tablespoons over the strawberry mixture. Try to cover as much filling as possible.

2/3 cup granulated sugar
6 tablespoons all-purpose flour
4 teaspoons lemon rind, grated
1 1/2 teaspoons cinnamon
4 cups apples, peeled and chopped
2 lbs strawberries (fresh or frozen)
1/4 cup lemon juice
2 cups flour
6 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons butter, chilled
1 1/3 cups buttermilk

Steps:

  • Preheat oven to 400°.
  • FRUIT MIXTURE: Combine sugar, flour, lemon rind, and cinnamon. Stir in apples, strawberries, and lemon juice.
  • Spread evenly in 13x9-inch baking dish.

3 tablespoons (24 grams) cornstarch
1 cup (200 grams) granulated sugar, divided
½ cup (113 grams) unsalted butter, divided
2 Granny Smith apples, peeled, cored, and sliced
1½ cups (188 grams) all-purpose flour
2 teaspoons (10 grams) baking powder
1 cup heavy whipping cream
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400°F.
  • In a 10-inch cast-iron skillet, combine strawberries, cornstarch, and ½ cup (100 grams) sugar. Cook over medium heat until bubbly and thickened, 3 to 4 minutes. Remove from heat, and stir in ¼ cup (57 grams) butter and apples.

1/2 pound cooking apples, like Granny Smith and Jonathan, peeled, cored, and sliced
3/4 cup granulated sugar
1/2 cup crushed walnut halves
1 teaspoon ground cinnamon
4 pre-baked (4-inch) tart shells, recipe follows
1 cup plus 2 tablespoons all-purpose flour
5 tablespoons unsalted butter
1/2 cup oatmeal
9 tablespoons packed brown sugar
Confectioners' sugar, for garnish
Serving suggestion: Vanilla ice cream
9 tablespoons unsalted butter, at room temperature
1 1/3 cups sifted confectioners' sugar
2 beaten egg yolks
1 dash cream

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the strawberries, apples, granulated sugar, walnuts, and cinnamon in a saucepan over medium heat and cook, stirring occasionally, until soft.
  • Divide the strawberry-apples mixture among the tart shells.
  • Sift the flour into a bowl, rub the butter in until it looks like fine bread crumbs and add the oatmeal. Gently mix in the brown sugar.
