STIR-FRIED SNOW PEAS AND WATER CHESTNUTS

Number Of Ingredients 6

1 tablespoon peanut oil
3 cloves garlic (sliced)
1 small carrot (sliced)
1.5 cups water chestnuts (peeled and sliced)
2 cups snow peas
1 teaspoon salt

Steps:

  • Heat a non-stick skillet on medium high heat, add peanut oil. When oil is hot, add garlic and stir until fragrant. Add carrot and keep stirring until carrot is half cooked, around 40 seconds. Add water chestnuts and snow peas, keep stir frying for around 2 minutes. Add salt and stir for another 1 minute, until all vegetables are cooked through but still crispy.
  • Place all vegetables on a plate and serve while warm.

1 pound fresh snow peas, trimmed
1 (8 ounce) can sliced water chestnuts, drained
1 tablespoon chopped fresh mint
2 tablespoons sesame seeds
salt and pepper to taste

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Stir in the snow peas, and cook for 2 minutes, then add the water chestnuts, mint, and sesame seeds. Cook and stir until the snow peas are tender, and the water chestnuts are hot, about 3 minutes longer. Season to taste with salt and pepper before serving.

2 tablespoons slivered almonds
2 tablespoons butter
1 package (6 ounces) fresh or frozen snow peas, thawed
1-1/2 cups sliced mushrooms
1-1/2 teaspoons cornstarch
1/4 teaspoon chicken bouillon granules
1/2 cup water
1 tablespoon soy sauce

Steps:

  • In a large skillet, stir-fry almonds in butter for 2 minutes or until lightly toasted. Add snow peas and mushrooms; stir-fry 2 minutes longer., In a small bowl, combine the cornstarch, bouillon, water and soy sauce until smooth. Add to skillet; bring to a boil. Cook and stir for 1-2 minutes or until thickened.

1/4 cup vegetable broth
1 lb snow peas, trimmed
1 teaspoon sesame oil
1 (5 ounce) can sliced water chestnuts

Steps:

  • Bring the broth to a boil in a wok or skillet.
  • Toss in the peas cover and cook for 1-2 minutes (do not over cook the peas), shake the pan a couple of times.
  • The peas should be crisp and bright green.
  • Add sesame oil and water chestnuts, continue to cook for 2 more minutes.
  • Serve immediately.

1 lb fresh shrimp (medium to large) or 1 lb frozen shrimp, cleaned, peeled and halved lengthwise (medium to large)
1 pinch salt
1 pinch crushed red pepper flakes
2 tablespoons shaoxing wine or 2 tablespoons dry sherry
oil, for stir-frying
1 tablespoon minced gingerroot
1/2 lb snow peas, stems and strings removed
1/2 cup sliced water chestnuts
1 tablespoon soy sauce
1/2 teaspoon cornstarch, dissolved in
1/4 cup water or 1/2 teaspoon stock
steamed rice

Steps:

  • Toss shrimp with salt, add wine or sherry and marinate for at least 20 minutes or up to 3 hours.
  • Drain shrimp; reserve marinade.
  • Heat large skillet or wok over high heat; add oil.
  • Add ginger & crushed red pepper, stir-fry until fragrant, and add shrimp.
  • Stir-fry until shrimp are mostly opaque (2 to 4 minutes, depending on size).
  • Add snow peas and water chestnuts; stir-fry until just heated through.
  • Add reserved marinade, soy sauce and cornstarch mixture.
  • Bring to a boil and cook until liquid thickens.
  • Serve immediately, accompanied by steamed rice.

1 (14 ounce) package chicken breast tenders, cut into bite-sized pieces
1 cup snow peas, trimmed, cut in half
½ cup sliced onion

1 (8 ounce) can sliced water chestnuts, drained
3 cups sliced bok choy

Steps:
