½ cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon sugar
1 tablespoon grainy mustard
½ teaspoon salt
½ teaspoon celery seed
½ teaspoon black pepper
4 cups cabbage (shredded)
2 tart apples (cored julienned (or shredded))
1 cup carrots (shredded)

Steps:

  • Combine dressing ingredients in a small bowl & set aside
  • Toss with slaw ingredients
  • Allow to sit for at least 1 hour before serving

4 stalks celery, julienned
2 green apples, julienned
1 jalapeno, halved lengthwise and thinly sliced
1/2 head green cabbage, thinly sliced
1/2 head purple cabbage, thinly sliced
1/2 cup olive oil
1/2 tablespoon Dijon mustard
1 tablespoon sugar
1 teaspoon white vinegar
1/4 teaspoon cayenne pepper
1/8 teaspoon salt
1/8 teaspoon celery salt
2 cups fresh cilantro leaves, barely chopped

Steps:

  • Combine the celery, apples, jalapeno and green and purple cabbage in a bowl. In a separate bowl, mix the olive oil, mustard, sugar, vinegar, cayenne, salt and celery salt. Pour over the cabbage mix and toss to combine. Cover and refrigerate for 2 hours.
  • Before serving, toss in the cilantro leaves.

Hear the crunch of the ultimate crisp pork crackling when you slice into Marion's amazing roasted pork belly. Add a slaw of apple, Chinese cabbage, coriander and chilli as a fresh, crisp side to complement the delicious pork.

1 kg (about 2 lb) skin-on pork belly
sea salt
vegetable oil
Asian slaw:
1 green apple, cut into thin matchsticks
3 cups finely shredded Chinese cabbage (wombok)
½ cup coriander (cilantro) leaves
1 long red chilli, deseeded, finely chopped
2 tbsp fish sauce
2 tbsp lime juice
2 tsp caster sugar

Steps:

  • Step 1.First up, you need to prepare the pork belly...this is a crucial step to achieve crispy crackling. Pat dry your pork belly with paper towel. Take a very sharp knife (a sharp utility or stanley knife works well) and cut lines across the pork skin about 1 cm apart. You want to cut through the skin and but only a couple of millimeters into the fat underneath. Now rub the skin with about a tablespoon of salt. Sit your pork belly on a baking tray and chill in the fridge (uncovered) for at least 2 hours (overnight is even better).
  • Step 2.Preheat oven to 200°C/390°F.
  • Step 3.Pat dry the pork skin with paper towel. Rub the skin with a little oil and sprinkle with a little extra salt. Place the pork belly skin side down in a roasting dish. Top with baking paper and place an oven-proof weight on top (a cast iron pan or a heavy casserole dish will work well). Roast the pork belly for 1 hour. Then remove the weight and baking paper and turn pork belly over so it is skin-side up. Roast for a further 10 minutes.
  • Step 4.For the Asian slaw, mix all ingredients in a large bowl.
  • Step 4.Slice pork and serve with slaw.

STICKY MAPLE PORK WITH APPLES

Pork fillet makes a quick supper and is quite low in fat. Try this dish with crispy onion rice on the side

600g pork fillet
1 tbsp olive oil
2 eating apples , cored and cut into eighths
1 garlic , crushed
2 tbsp maple syrup
1 tbsp white or red wine vinegar
2 tbsp wholegrain mustard

Steps:

  • Cut the pork into 3cm thick slices. Heat the oil in a large, non-stick frying pan, add the pork, then fry on both sides until lightly browned, about 5 mins in total. Lift out of pan and set aside. Add apples to the pan, then cook for 3-4 mins until starting to soften.
  • Stir in the garlic, maple syrup, vinegar and 3 tbsp water, bring to the boil, then return the meat to the pan along with any juices. Simmer for a few more mins, stirring until the pork is cooked through and the sauce is thick and sticky. Stir in the wholegrain mustard, then serve with plain or Crispy onion rice (recipe below).

500g piece pork fillet
4 tbsp soy sauce
1 tbsp clear honey
finely grated zest and juice 1 orange
large knob of root ginger , finely grated

Steps:

  • Tip all the marinade ingredients into a shallow dish and stir to combine. Coat the pork in the marinade and, if you have time, leave for 1 hr or even better overnight. Heat oven to 200C/fan 180C/gas 6.
  • Heat an ovenproof pan and take the pork out of the marinade. Brown on all sides, then baste over the rest of the marinade and roast the pork for 20 mins until cooked all the way through, basting with its juices every 5 mins or so. Serve the pork sliced with rice and your favourite steamed greens.
