Steamed Asparagus and Mushrooms With Danish Havarti Cheese image

Lunch, snack, starter or side dish, every bite is heaven for an asparagus lover!! Since this is steamed it is also lower in fat which makes it even nicer. Danish Havarti Cheese is a soft cheese that has a hint taste of Swiss cheese to it, yet creamy and melts nicely. This is good for a low carb diet as well.

1/2 lb asparagus
1/2 lb fresh mushrooms (I used button)
1/2 cup danish havarti cheese (shredded)
sea salt

Steps:

  • Fill steamer or steamer pot with water and bring to a boil.
  • Wash and slice mushrooms and place into colander of steamer.
  • Wash asparagus and snap off end of stalks.
  • Place on top of mushrooms in the colander.
  • Cover and steam until the asparagus is tender yet still a bit crisp.
  • Remove from colander to warm plate and immediately sprinkle cheese over top.
  • Sprinkle sea salt over top using your discretion.
  • Serve hot.

A fun way to get children to eat asparagus: roasted and paired with hummus and creamy melted Havarti cheese.

1/4 pound asparagus
2 teaspoons olive oil
pinch of salt
2 slices of bread
3 - 4 tablespoons of hummus
2 slices Arla Sliced Havarti

Steps:

  • Place rack towards the top of the oven and preheat the broiler. Trim about 1"from the ends of the asparagus then cut eat stalk in half then cut each half lengthwise. Place on a sheet tray and toss with olive oil and a pinch of salt. Roast the asparagus until slightly tender and beginning to char, 1 to 2 minutes. Keep a close eye on the asparagus as it will cook quickly.
  • Take two slices of spread and spread on the hummus. Divide the asparagus on top of each piece of bread and finish with a slice of Havarti. Return the tray to the oven and cook until the cheese is melted, 45 to 60 seconds.
