4 tablespoons (1/2 stick) unsalted butter
1/2 teaspoon crushed red pepper
1 medium shallot, thinly sliced
24 ounces cremini mushrooms, halved
Kosher salt and freshly ground black pepper
1 tablespoon minced fresh thyme
2 cloves garlic, grated on a rasp grater
1/2 cup dry red wine

Steps:

  • Heat 2 tablespoons of the butter in large skillet over medium heat until melted. Add the red pepper and shallots and gently cook until the shallots soften, about 3 minutes. Add the mushrooms and season with salt and pepper. Cover and cook for 10 minutes, then take off the cover and cook until the mushrooms are golden brown, another 10 minutes. Add the thyme and garlic and cook until fragrant, then deglaze with the wine and cook until the alcohol scent dissipates, another 2 to 3 minutes. Add the remaining 2 tablespoons butter and cook until melted; season again. Serve over steak, pork chops or chicken.

One of my favorite meals to eat, this is sooo easy and can be done in about 30 minutes. Goes great with mashed potatoes and rolls of some kind are a MUST to sop up the extra mushroom sauce.

4 minute steaks (if you don't see this cut of meat, ask the butcher)
oil, for frying
salt
self-rising flour, for dredging
2 (10 ounce) cans cream of mushroom soup
1 (10 ounce) can milk
1 (4 ounce) can mushrooms or 1/2 lb fresh mushrooms, sliced
1 tablespoon butter

Steps:

  • Slice mushrooms (if using fresh) and saute in butter until tender.
  • If using a can, drain well.
  • Set aside.
  • In a large skillet, heat oil.
  • Salt minute steaks and dredge in flour.
  • Fry until breading is brown.
  • **Make sure when frying you leave the meat long enough for the breading to fry until it sets, as it will fall off if not fried long enough.
  • This is what makes it GOOOOD!
  • When the meat is fried, place on paper towels to drain excess oil.
  • Place in a 2 quart casserole dish and keep warm.
  • Leave 2 tablespoons of oil in the skillet and remove the rest.
  • Add cream of mushroom soup, milk, and mushrooms, stirring constantly.
  • Let soup simmer on med-low heat until throughly heated.
  • Pour over warm meat and serve.

6 cloves garlic, coarsely chopped
1 ancho chile, coarsely chopped
1 New Mexican chile, coarsely chopped
1 lime, zested and coarsely chopped
1 pound flank steak

12 (6-inch) flour tortillas
1 pound white cheddar, coarsely grated
Grilled Onions, recipe follows
8 ounces blue cheese, crumbled
Ancho chile powder
Wild Mushroom Relish, recipe follows
Chopped cilantro
Roasted Red Pepper Sauce, recipe follows
Olive oil
2 red onions, peeled and thinly sliced
Salt and pepper
3 tablespoons olive oil
1 1/2 pounds mushrooms (cremini, shiitake, oyster) coarsely chopped
2 cloves garlic, finely chopped
1/2 cup dry white wine
2 tablespoons balsamic vinegar
1 tablespoon finely chopped fresh thyme
3 tablespoons finely chopped parsley
Salt and freshly ground pepper, to taste
2 red bell peppers, roasted, peeled, seeded and coarsely chopped
3 tablespoons chopped red onion
2 teaspoons chipotle puree
2 tablespoons fresh lime juice
2 tablespoons honey
3/4 cup olive oil
Salt and freshly ground pepper, to taste

Steps:

  • Combine oil, garlic, chiles, and lime zest in a large shallow baking dish. Add steak and turn to coat. Cover and refrigerate for at least 4 hours or overnight. Preheat grill or grill pan over high heat. Remove steak from marinade, season with salt and pepper and grill for 2 to 3 minutes on either side until golden brown and cooked to medium-rare doneness. Let rest 5 minutes and slice on the bias into 1/2 inch thick slices. Preheat oven to 425 degrees F.
  • Place 8 tortillas on a flat work surface. Top each tortilla with 2 ounces of the cheddar. Divide the onions and steak over the cheese. Crumble 1 ounce of the blue cheese on top of the steak. Stack the tortillas to make 4 (2-layer) quesadillas and top each with the remaining tortillas. Brush the tops with olive oil and sprinkle with about 1/2 teaspoon of ancho chile powder. Carefully transfer the quesadillas to a baking sheet and bake in the oven until golden brown and the cheese has melted, about 5 to 7 minutes. Serve each with a large dollop of the Mushroom Relish on top and garnish with chopped cilantro and Roasted Red Pepper Sauce.
  • For the grilled onions: Heat oil in a large saute pan over medium heat. Add the onions, season with salt and pepper and cook until soft and caramelized, about 25 to 30 minutes. For the wild mushroom relish: Heat oil in a large saute pan over high heat. Add the mushrooms and cook until golden brown. Add the garlic and cook for 1 minute. Add the wine and cook until completely reduced. Stir in the vinegar, thyme and parsley and season with salt and pepper, to taste.
  • Place peppers, onion, chipotle, lime juice and honey in a blender and blend until smooth. With the motor running, slowly add the oil and blend until emulsified. Season with salt and pepper, to taste.

1 tablespoon Dijon mustard
2 tablespoons green peppercorns, packed in brine

2 (12 to 16-ounce) boneless New York cut shell steaks, tenderized
2 tablespoons Dijon mustard
Coarsely ground black pepper, to cover both sides of steak
Olive oil, for sauteing
Salt, to taste
4 tablespoons whole, unsalted butter
2 cloves garlic, minced
1/4 cup shallots, minced
8 ounces white mushrooms, sliced
1 cup beef stock
Garlic Aioli Sauce, recipe follows
Fresh Vegetable Relish, recipe follows
2 to 3 large russet potatoes
Vegetable oil, for frying
Salt and pepper to taste
1 to 2 cloves garlic, minced
2 lemons, halved
4 to 6 egg yolks*
Olive oil
1 to 2 celery stalks, diced
4 Roma tomatoes, diced
1 cucumber, diced
1 red onion, diced
1 to 2 carrots, diced
Feta cheese, crumbled
Fresh dill, chopped

Steps:

  • Use a meat mallet to slightly reduce the thickness of each steak. Spread both sides of each steak with a thin coating of Dijon mustard. Sprinkle with salt and cover both sides with coarsely ground black pepper. Heat olive oil in a large, heavy skillet over medium-high heat and cook the steaks 3 to 4 minutes on each side. The steaks should be rare at this point. Set them aside and lightly cover them so they stay warm. Do not wash out the pan.
  • Mushroom, Green Peppercorn and Dijon sauce: Heat the butter in a medium sized saute pan over medium-high heat and saute the garlic and shallots for approximately 1 minute. Add the mushrooms, raise the heat to high, and cook for an additional 5 minutes. Add beef stock, cream, and mustard, and then reduce the sauce by 1/2. Once the sauce is made, reheat the skillet, in which the steaks were cooked, to medium-high heat. Add the steaks and cook for another 2 minutes on each side for a medium-rare steak. Transfer them to dinner plates, which have been coated with the mushroom Dijon sauce. Once you plate the steaks, spoon more of the sauce on top of each steak. Serve with Pommes Frites, Aioli, and Vegetable Relish.
  • Thoroughly clean the outer surface of the russets and peel the skin using a vegetable peeler. Slice the potatoes lengthwise into thick strips. Pour enough vegetable oil in a pot to cover the potato slices. Once the oil is hot, carefully put the potato strips into the pot and fry them until they are brown and crispy. Remove the potatoes from the pot and drain the excess oil onto paper towels. Salt and pepper, to taste, while the potatoes are still hot. Serve with a fresh Garlic Aioli Dipping Sauce.
  • Finely mince 1 or 2 cloves of garlic in a food processor. Add in the egg yolks and then squeeze the juice from a couple of lemons into the processor bowl. Blend the ingredients together until they fully integrate. While the mixture processes, slowly drizzle in olive oil until the sauce emulsifies.
  • Dice all of the ingredients and combine them in a medium sized bowl. Stir the diced vegetables together, until they are fully integrated.

2 thyme sprigs, leaves removed
150ml red wine

  • Heat the oil in a pan. Season the steaks, then fry for 2-3 mins each side for medium rare, or cook more to your liking. Remove from the pan, then set aside to rest.
  • Add the mushrooms and thyme leaves to the pan, then cook for a couple of mins until softened and golden. Pour in the wine and bubble until syrupy, then turn off the heat and stir in the butter. Season.

3 tablespoons butter or 3 tablespoons margarine, divided
1/4 cup onion, chopped
1 clove garlic, minced
1 (10 ounce) can condensed beef broth
1 1/2 teaspoons tomato paste
1/8 teaspoon ground pepper
2 teaspoons cornstarch
1 tablespoon cold water
2 tablespoons dry red wine

Steps:

  • Melt butter in a saucepan.
  • Add mushrooms, onion and garlic.
  • Saute until golden, about 5 minutes.
  • Stir in broth, tomato paste and black pepper.
  • Bring to the boiling point.
  • Reduce heat and simmer, covered, for 10 minutes.
  • Blend cornstarch with water.

2 tablespoons butter

Steps:

  • Season the steaks with salt and pepper. Heat the oil in a heavy skillet on medium-high heat. Add the steaks and sear on high heat until done to your preference, about 2-4 minutes per side for rare to medium rare.

2 teaspoons dried oregano
1/2 teaspoon crushed red pepper flakes
1 large dried bay leaf
Kosher salt
Four 8-ounce boneless strip steaks, each about 1 inch thick
1 1/2 pounds russet potatoes, peeled and cut into 1/2-inch pieces
6 tablespoons unsalted butter
1 tablespoon whole-grain mustard
3/4 cup chicken broth
3 tablespoons vegetable oil
12 ounces button or cremini mushrooms, quartered
1 cup red wine
Sprigs of fresh oregano, for serving

Steps:

  • Combine the dried oregano, red pepper flakes, bay leaf and 1 tablespoon salt in a coffee or spice grinder and pulse until finely ground. Rub evenly over both sides of the steaks. Set aside to marinate at room temperature for 15 minutes.
  • Meanwhile, put the potatoes in a heavy-bottomed saucepan with enough cold water to cover by 1/2 inch. Salt the water generously, bring to a simmer and cook, covered, until the potatoes are fork tender, about 10 minutes. Drain, return to the pot with 3 tablespoons of the butter and mash with a fork or potato masher. Stir in the mustard and 1/4 cup of the chicken broth until creamy. Season with salt.

Flip and cook, adding the remaining 1 tablespoon oil if needed, until browned on the other side, about 3 minutes more for medium-rare. Remove the steaks and set aside to rest.
  • Add the mushrooms to the skillet and cook until browned, about 3 minutes. Add the red wine and the remaining 1/2 cup chicken broth and cook until reduced by half, about 5 minutes. Swirl in the remaining 3 tablespoons butter until the sauce is glossy and thick.
  • Transfer the steaks to a serving plate and transfer the potatoes to a serving bowl. Spoon the sauce over the steaks and top with fresh oregano. Serve with the potatoes.

1/2 cup ruby Port
1/2 cup low-salt chicken broth
1 1 1/4-pound top sirloin steak, about 3/4 to 1 inch thick
3/4 teaspoon ground black pepper
1/2 teaspoon salt

Steps:

  • Melt 2 tablespoons butter in heavy large nonstick skillet over medium-high heat. Add shallots; sauté 2 minutes. Add mushrooms; cover and cook 5 minutes. Uncover and sauté until mushrooms are browned, about 10 minutes. Add flour and stir 1 minute. Add Zinfandel, Port, and broth. Boil until sauce thickens enough to coat spoon thinly, stirring occasionally, about 10 minutes. Season sauce to taste with salt and pepper. Set aside.
  • Meanwhile, place steak between sheets of waxed paper. Using mallet or rolling pin, pound steak to 1/2-inch thickness. Coat both sides of steak with 3/4 teaspoon pepper and 1/2 teaspoon salt. 8 shallots, finely diced
4 cloves garlic, crushed
14 ounces Worcestershire sauce
14 ounces veal jus or beef stock

Steps:

  • In a large skillet, heat the olive oil on high heat, and saute the mushrooms, shallots, and garlic until softened and starting to brown. Deglaze the pan with the Worcestershire sauce, scraping up any browned bits from the bottom of the pan. Then add the veal jus or beef stock. Cook for 5 minutes and remove from the heat.

1 1/2 teaspoons fresh coarse ground black pepper
6 center-cut steak fillets, 1 1/2 " thick
1/2 cup Bourbon
1 1/2 ounces dried porcini mushrooms
1 cup boiling water
1 tablespoon vegetable oil
2 tablespoons unsalted butter
1/2 cup minced shallot
1 clove garlic, minced
3/4 cup heavy cream
salt

Steps:

  • Rub the steaks with the pepper.
  • (The chef recommends coarsely ground versus cracked pepper so that it is less hot and spicy but I've used cracked pepper-in fact more than the recipe calls for-it's your call).
  • Put the steaks in a shallow dish and pour 1/4 cup of the bourbon on them.
  • Cover with plastic and let sit at room temp for 1-2 hours.
  • Put the mushrooms in a small bowl, pour the boiling water over them and let them sit for 20 minutes.
  • Preheat the oven to 225 degrees.
  • Remove the mushrooms but save the liquid.
  • Rinse the mushrooms well, cut off any tough bits and discard.
  • Finely chop the mushrooms.
  • Strain the liquid through a sieve lined with cheesecloth and save 1/2 cup of it.
  • In a large heavy skillet, heat the oil and butter over high heat until just beginning to glisten.
  • Add steaks and cook until browned, about 2 minutes a side.
  • Remove from heat and add the other 1/4 cup of bourbon.
  • Stand back, ignite with a long match, then shake the pan until the flames die down.
  • Transfer the filets to a heatproof platter and cook in the oven until done, about 15 min.

  • Add the garlic and shallots to pan and cook over moderate heat, covered, until soft (about 6-8 min.).
  • Increase the heat to high, add the 1/2 cup of reserved liquid.
  • Cook, stirring constantly, until syrupy, about 2 min.
  • Sir in the cream and cook until slightly reduced, 2-3 min.
  • Stir in the reserved mushrooms, reduce heat to low, and cook 2 more min.
  • Season with salt to taste.
  • Transfer steaks to warmed plates.
  • Stir any juices from the meat into the sauce and spoon over the steaks.
  • Serve immediately.

4 thin slices provolone cheese, trimmed to fit steaks
4 small Italian parsley sprigs
1/2 cup dry Marsala

Steps:

  • Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add mushrooms, shallot and garlic and sauté until mushrooms are brown and tender, about 10 minutes. Season with salt and pepper. Transfer mixture to small bowl.
  • Heat remaining 1 tablespoon oil in same skillet over medium-high heat. Sprinkle steaks with salt and pepper. Add steaks to skillet and sauté just until brown, about 1 1/2 minutes per side. 4 club steaks, 1 inch thick (each 4 to 5 ounces)
1/2 teaspoon salt
1/4 teaspoon black pepper

1 tablespoon vegetable oil
2/3 cup finely chopped shallot OR: white part green onion
1 clove garlic, finely chopped
1/4 pound fresh shiitake mushrooms OR: cultivated mushrooms, sliced
1/2 cup dry white wine
1 can (13% ounces) beef broth
1 large sweet red pepper, roasted, peeled and sliced* OR: 7-ounce jar roasted red peppers, drained and sliced
1 tablespoon tomato paste
1/2 teaspoon leaf thyme, crumbled
1/4 cup snipped fresh chives OR: green onion tops, for garnish (optional)

Steps:

  • Bring water to boiling in small saucepan. Add dried mushrooms and remove from heat. Let stand 20 minutes. Drain mushrooms through sieve lined with double thickness of dampened paper toweling; reserve soaking "quid. Remove and discard any tough stems. Slice mushrooms. Pat steaks dry with paper toweling. Season with salt and pepper. Heat 1/2 tablespoon butter and the oil in large skillet over medium-high heat. Add steaks; cook 1 to 2 minutes on each side for rare(or to your liking). Transfer steaks to platter. Pour off fat from skillet. Heat remaining 1 1/2 tablespoons butter in skillet over medium heat. Add shallot and garlic to skillet; cook, stirring, 1 minute. Add dried and fresh mushrooms; cook, stirring, 3 minutes. Add wine; boil 1 minute. Add broth, reserved mushroom soaking liquid, red pepper, tomato paste and thyme; simmer, stirring occasionally, 5 minutes. Add steaks to skillet; simmer until heated through, 1 to 2 minutes. Sprinkle with chives, if you wish. 'Note: Broil pepper about 5 inches from heat, turning frequently, until charred on all sides, about 15 minutes. Place in paper bag and close. 30 g unsalted butter
1 tablespoon oil
1 potato, peeled and cut into 1 . 5cm dice
1 tablespoon olive oil
110 g wild mushrooms, sliced
1 cooking apple, peeled, cored and diced
1 glass red wine
2 tablespoons olive oil
2 venison steak

Steps:

  • Gently heat the butter and oil in a frying pan and sauté the potatoes over a low heat, for 6-8 minutes or until soft.
  • Heat the oil in a large frying pan and sauté the mushrooms and apples for a few minutes until soft. Remove from the heat and keep warm.
  • In the same pan, reduce the red wine for 3-4 minutes.
  • Return the mushroom and apple mixture to the pan and simmer for two minutes.
  • Heat the oil in a separate pan and fry the venison steaks for 3-4 minutes on either side, or according to personal taste.
  • Remove from the heat and serve with the sautéed potatoes and mushroom and apple mixture.

I was watching diners,drive-in and dives and Guy Fieri visited North Pole Alaska, and one of the diners feature this recipe it looked very good so, I'm posting it so I don't lose it. I have already made this and it was easy and tasty. Recipe called for fillet mignon I used petite sirloin steaks about 1 1/2 inch thick. I also used Knorr bernaise sauce mix and brown gravy mix, mushrooms of your choice I used baby bella because I like the flavor.

12 ounces sirloin or 12 ounces filet mignon steaks
4 tablespoons butter
2 tablespoons olive oil
2/3 cup panko breadcrumbs
1/3 cup almonds, chopped
1/2 cup buttermilk
3/4 cup flour
1 cup bearnaise sauce
1/2 cup beef gravy
1/2 cup au jus sauce
1 cup mushroom, sliced
1/4 cup cream sherry

Steps:

  • make your sauces set the bernaise aside while you saute mushrooms in 2 tablespoons of butter for 4 minutes.
  • add brown gravy and au jus ,simmer to reduce
  • add cream sherry and ignite set aside.
  • mix panko crumbs and chopped almonds.
  • season each steak with salt and pepper and garlic powder on both sides.
  • grill steaks or fillet on each side to your desired doneness 3 minutes for rare, 5 minutes for medium and so on.
  • remove from heat dredge steaks in flour
  • dip in buttermilk and then in panko and almond mixture.
  • fry on all sides in remaining butter and olive oil.
  • plate your steaks and top with mushroom gravy then with bernaise sauce and enjoy.

The natural flavors of the mushrooms and rum, as well as the small amount of alcohol will enhance the flavor of the meat. My preference is the Chuck Eye Steak, but any tender cut of meat could be used including a ground beef patty or even a chicken breast. Cooking is a Creative Sport.

2 (5 ounce) chuck eye steak or 2 (5 ounce) top sirloin steaks
1 (4 ounce) can mushroom stems and pieces, reserve 1/4 cup liquid
1/4 cup rum
1/4 cup water
1 tablespoon butter
1 tablespoon flour
1/4 teaspoon black pepper
1/4 teaspoon salt
1/2 tablespoon olive oil

Steps:

  • Rub both sides of the steak, first with the pepper, and then the olive oil.
  • Sear the meat in a dry frying pan for 3 1/2 minutes per side or until you are happy with the doneness.
  • Remove the meat, add the butter and stir until it is melted and starts to turn brown.
  • Reduce the heat, add the flour, rum, liquid from the mushroom can, and the mushrooms.
  • Stir until the sauce thickens.
  • If the sauce is too thick, add the water.
  • Adjust taste with the salt.
  • Serve with a baked potato, or another option is to add cooked pasta to the mushroom sauce while it is still in the pan.

A recipe for Mushroom and Peppercorn Crusted Steak in a Creamy Brie Mushroom Sauce : Pan seared steak crusted in fresh cracked peppercorns and dried mushroom served topped with a velvety creamy brie and mushroom sauce!

1 tablespoon butter
1 tablespoon oil
1/4 ounce dried mushrooms, coarsely chopped in food processor
1 teaspoon fresh crack peppercorns
salt to taste
1 pound ribeye steak (or tenderloin, or your favourite cut)
2 tablespoons butter
1 small onion, diced
8 ounces various mushrooms, sliced
2 cloves garlic, chopped
1 teaspoon thyme, chopped
1/4 cup dry white wine (or broth)
1/4 cup beef broth
1/4 cup cream
4 ounces brie
1/2 cup parmigiano reggiano (parmesan), grated
1 tablespoon white miso paste (optional, gluten-free for gluten-free)
salt and pepper to taste

Steps:

  • Melt the butter and heat the oil in a pan over medium high heat, press the mixture of the dried mushrooms, peppercorns and salt into the steak(s), and cook in the pan to the desired level of doneness, about 2-4 minutes per side.
  • Let sit for 5 minutes before optionally slicing and serve topped with the mushroom sauce!
  • Add the onions and mushrooms and cook until the mushrooms release their liquids and it's absorbed, about 10 minutes.
  • Add the garlic and thyme and cook for a minute.
  • Add the wine and deglaze the pan.
  • Add the broth and cream, bring to a boil and simmer to thicken, about 2-4 minutes, before mixing in the cheeses and miso and removing from the heat.
  • Season with salt and pepper to taste.
