FETA-SPINACH STUFFED SALMON
Simple, quick and delicious recipe. High protein. Love serving it with green beans and a baked potato for a special meal.

- Preheat the oven to 350 degrees F (175 degrees C). Coat a large baking dish with cooking spray.
- Combine cream cheese, feta cheese, spinach, and scallions in a small mixing bowl. Mash ingredients until well blended.
- Cut salmon fillet into 2 equal pieces. Brush the top of one piece with olive oil and place oiled side down in the prepared baking dish. Spread filling evenly over top; it will be about 3/4 inch thick. Place the second piece of salmon on the filling and brush the top with olive oil.
- Bake in the preheated oven until fish flakes evenly with a fork and filling is hot, 20 to 30 minutes. The time will depend on the size and weight of salmon used; check progress at 20 minutes to determine if additional baking time is needed.
- Remove from the oven and slice into 2 pieces to serve.

BAKED SALMON STUFFED WITH MASCARPONE SPINACH

- Cook spinach in large pot of boiling water just until wilted, about 30 seconds. Drain; rinse with cold water. Squeeze spinach dry, then finely chop. Place in small bowl. Mix in cream cheese, mascarpone, and ground nutmeg. Season to taste with salt and pepper. Cut one 3/4-inch-deep, 2 1/2-inch-long slit down center of top side of each salmon fillet, forming pocket for spinach mixture. Fill each slit with spinach mixture, dividing equally among salmon fillets. (Can be made 4 hours ahead. Cover and chill.)
- Preheat oven to 450°F. Brush rimmed baking sheet with olive oil. Sprinkle salmon fillets with salt and pepper. Mix breadcrumbs, melted butter, and Parmesan cheese in medium bowl. Top each salmon fillet with breadcrumb mixture, pressing to adhere. Place salmon fillets, skin side down, on prepared baking sheet. Bake salmon until opaque in center, about 12 minutes. Transfer to plates and serve.

RICOTTA, FETA AND SPINACH STUFFED SALMON

Steps:
- Butterfly salmon fillet by inserting knife into side of fillet and running it lengthwise to cut salmon open like a bun making sure not to cut all the way through(salmon should remain in one piece).
- In small bowl mix cheeses and pepper till smooth. Spread on one half of salmon. Layer spinach on top of cheese mixture and fold t op half of fillet over filling.
- Spoon miracle whip on top of fillet and squeeze lemon juice over top.
- Bake at 375F in a greased and covered casserole dish for 15-20 minutes until fish is cooked through and flakes easily with a fork.

- Salmon Spinach Mixture:.
- *Soften cream cheese then mix in shredded/chopped spinach and sun dried tomatoes.
- Prepare Salmon:.
- 1. Pre-heat oven at 400 degrees.
- 2. Take Salmon Fillet and slice a center cut for filling Salmon.
- 3. Sprinkle Adobo seasoning and Creole seasoning and rub onto all sides of fillet.
- 4. Take butter knife and spread Spinach stuffing mixture inside slice cut previously. (You can also spread some on top of Salmon if you like).
- 5. Place Salmon Fillets on greased casserole dish.
- 6. Bake at 400 degrees for 20 minutes.

- Heat oven to 400°F.
- Mix mayo, lemon zest, lemon juice and 1 tsp. dill until blended. Reserve half the mayo mixture for later use.
- Mix remaining mayo mixture with cream cheese spread in medium bowl until blended. Add spinach and tomatoes; mix well.
- Use sharp knife to cut salmon fillet horizontally in half, being careful to not cut through to opposite side of fillet. Place on rimmed baking sheet sprayed with cooking spray.
- Open salmon fillet. Spoon spinach mixture onto bottom half of fillet; cover with top of fillet. Brush with reserved mayo mixture. Cover loosely with foil.

- In a skillet, saute celery and onion in butter until tender. Remove from heat; add bread, spinach, 1/4 teaspoon salt and pepper. , Combine oil and remaining salt; rub over salmon skin. Place one fillet, skin side down, in a greased roasting pan. Top with stuffing. Place second fillet over stuffing, skin side up. Tie with string if desired. - Preheat oven to 425 degrees and spray a baking sheet with vegetable spray.
- Heat the oil in a skillet and add the onion, let cook until just starting to soften, add the spinach, garlic, basil and oregano and cook for another 2 minutes. Remove from heat.

SPINACH STUFFED SALMON

- FOR STUFFING: Place the cream Cheese, Feta and mozzarella into a med. bowl. Roughly chop the spinach and add to the cheese. With your hands, massage the spinach and cheese until it looks like a thick paste.
- FOR THE SALMON: Cut a pocket in the center of each salmon fillet. Generously season with Cajun seasoning and brush them with olive oil on both sides.
- Divide the spinach stuffing into 4 equal parts and spoon into the pockets. Bake in a preheated 400*F for 15 to 20 minutes.
