1 jar (24 ounces) garden-style spaghetti sauce
1/2 cup water
1 teaspoon Italian seasoning
1/2 teaspoon salt
1 carton (15 ounces) ricotta cheese
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2 cups shredded part-skim mozzarella cheese, divided
9 no-cook lasagna noodles
Grated Parmesan cheese

Steps:

  • Cook sausage in a large skillet over medium heat until no longer pink; drain. Stir in the spaghetti sauce, water, Italian seasoning and salt. Combine ricotta, spinach and 1 cup mozzarella cheese in a small bowl., Spread 1 cup sauce mixture in a greased oval 5-qt. slow cooker. Layer with three noodles (breaking noodles if necessary to fit), 1-1/4 cups sauce mixture and half of the cheese mixture. Repeat layers. Layer with remaining noodles and sauce mixture; sprinkle with remaining mozzarella cheese., Cover and cook on low for 3-4 hours or until noodles are tender. Sprinkle servings with Parmesan cheese.

1 tablespoon olive oil
1 1/4 pounds hot Italian turkey sausages, casings removed
Spicy Tomato Sauce
1 15-ounce container ricotta cheese
1 10-ounce package frozen chopped spinach, thawed, squeezed dry
1 3/4 cups grated Parmesan cheese
2 large eggs
3 tablespoons whipping cream
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon ground black pepper
9 uncooked lasagna noodles
3 cups shredded provolone cheese (about 12 ounces)

Steps:

  • Heat oil in large skillet over medium heat. Add sausages; sauté until brown, using fork to break up meat into coarse pieces, about 7 minutes. Add Spicy Tomato Sauce. Simmer 5 minutes.
  • Position rack in center of oven; preheat to 375°F. Whisk ricotta, spinach, 1 cup Parmesan, eggs, cream, basil, oregano and pepper in large bowl. Set aside. Spoon 1 cup sauce over bottom of 13 x 9 x 2-inch glass baking dish. Place 3 noodles over sauce in single layer. Spread 1 cup sauce over noodles. Spoon 1 cup ricotta mixture over sauce. Sprinkle 1/4 cup Parmesan and 1 cup provolone over ricotta mixture. Repeat layering with 3 noodles, 1 cup sauce, 1 cup ricotta mixture, 1/4 cup Parmesan and 1 cup provolone. Arrange remaining 3 noodles over cheese. Spoon 1 cup sauce over noodles. Sprinkle remaining 1/4 cup Parmesan and 1 cup provolone over lasagna. Dollop remaining ricotta mixture atop lasagna. Spoon 2 1/2 cups sauce around ricotta dollops. Tightly cover baking dish with foil.
  • Bake lasagna 50 minutes; uncover and continue baking until noodles are tender and lasagna is hot and bubbly, about 25 minutes longer. Let lasagna stand 15 minutes before serving. (Can be prepared 1 day ahead. Cool slightly. Cover and refrigerate. Rewarm, covered with foil, in 350°F. oven about 45 minutes.)
  • Meanwhile, rewarm remaining sauce in small saucepan over medium heat. Serve lasagna, passing remaining sauce.

6 (3.5 ounce) links hot Italian sausage links, casings removed
2 large onions, sliced
1 (16 ounce) package sliced fresh mushrooms
1 (10 ounce) package fresh spinach
1 (16 ounce) container part-skim ricotta cheese
1 large egg, beaten
2 (15 ounce) jars Alfredo sauce
½ cup milk
1 (8 ounce) package no-boil lasagna noodles
1 (16 ounce) package shredded mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 10x15-inch baking dish with cooking spray. Slice sausage links.
  • Heat a large skillet over medium heat. Cook and stir sausage and onions in the hot skillet until sausage is browned, 5 to 7 minutes. Add mushrooms and continue cooking until soft and browned, about 5 minutes. Remove from heat. Drain excess grease.
  • Place spinach in a medium bowl. Microwave, uncovered, for 3 1/2 minutes. Pour in ricotta cheese and beaten egg. Stir well until blended.
  • Combine Alfredo sauce and milk in a medium bowl. Mix well.
  • Spread about 1/2 cup sauce evenly on the bottom of the prepared baking dish. Place 3 uncooked noodles over sauce. Spread 1/2 of the spinach mixture over the noodles followed by 1/2 of the sausage mixture. Sprinkle with 1/3 of the mozzarella cheese. Place 3 more noodles on top and pour 1 1/2 cups sauce over noodles. Spread remaining spinach mixture over top of noodles followed by remaining sausage mixture. Sprinkle with another 1/3 of mozzarella. Place 3 more noodles over the mozzarella and pour remaining sauce evenly on top. Sprinkle with remaining mozzarella.
  • Spray a sheet of aluminum foil with cooking spray and cover the dish tightly, sprayed-side down.
  • Bake in the preheated oven for 45 minutes. Remove aluminum foil and continue to bake until noodles are soft and lasagna is bubbly, 10 to 15 minutes. Let rest for 10 minutes before serving.

1 (16 ounce) jar Alfredo sauce

1 egg, lightly beaten

1/3 cup all-purpose flour
1/2 teaspoon salt

3 cups fat-free milk

1 pound Italian turkey sausage links, casings removed and crumbled
1 medium onion, chopped
4 garlic cloves, minced
1 teaspoon dried oregano

1/2 cup white wine or reduced-sodium chicken broth

I don't like lasagna!!! But, I do like this one. It took me a good 10 years to come up with a lasagna recipe that I lilke. I happen to like cottage cheese in my lasagna, but if you prefer ricotta, substitute. All four food groups are in this recipe. Hope that you enjoy it as much as I do!

12 ounces dried lasagna noodles, cooked in boiling water
3 tablespoons oil
1 onion, diced
1/2 green bell pepper, diced
1 lb mild Italian sausage, casings removed
1 teaspoon minced garlic
30 ounces diced tomatoes, canned
6 ounces tomato paste
1/4 cup parsley, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon salt
10 ounces frozen chopped spinach, thawed
16 ounces small curd cottage cheese
1 egg, beaten
1/4 cup parmesan cheese
1 teaspoon salt
1/4 teaspoon black pepper
1 lb mozzarella cheese, grated
1/4 cup parmesan cheese

Steps:

  • Rinse cooked lasagna noodles and set aside. Be sure that you don't use more than 12 oz. or the lasagna will be too dry.
  • Meanwhile, in a dutch oven or other large vessel, put the oil, onion and green bell pepper. Saute over medium heat until the onion is tender.
  • Add the sausage and garlic and stir-fry until well browned, chopping up the meat as you stir, to make sure all of the pieces are small.
  • Add the diced tomatoes, tomato paste, parsley, oregano, basil and 1 teaspoons salt. Reduce heat to low and simmer for about 15 minutes, stirring occasionally.
  • Meanwhile, press out the water from the thawed spinach so that it is very dry. Put the spinach into a medium-size mixing bowl.
  • Add the cottage cheese, egg, 1/4 cup Parmesan cheese, 1 teaspoons salt and black pepper to the spinach. Stir until well mixed.
  • In another medium-size bowl put the grated Mozzarella cheese.
  • In a lasagna pan that you have oiled, put down 1/3 of the tomato-meat sauce.
  • Cover with 1/2 of the lasagna noodles.
  • Top with 1/2 of the spinach-cottage cheese filling.
  • Top with half of the mozzarella cheese.
  • Repeat using 1/3 of the tomato-meat sauce, remaining noodles, remaining spinach filling and mozzarella cheese.
  • Top with the remaining 1/3 of the tomato-meat sauce and sprinkle 1/4 cup Parmesan cheese over the very top.
  • Bake in a 350 degrees oven for 45 minutes.
  • You might wonder whether or not there is enough tomato sauce, but once the lasagna heats up and the cheese gets gooey, there is enough sauce. I don't like a a lasagna with lots of runny heavy tomato sauce that covers the taste of everything else in the lasagna. If you feel like you need a bit more, add an 8 oz. can of tomato sauce to the tomato-meat sauce.

1 cup finely chopped yellow onion
3 tablespoons minced garlic
1/2 cup all-purpose flour
7 cups milk
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon freshly grated nutmeg
2 (10 oz.) boxes or bags frozen chopped organic spinach, defrosted and wrung dry
3 cups grated Parmesan
2 tablespoons olive oil, plus more for coating baking dish
1 1/2 lbs. chicken sausage
2 (14-ounce) cans quartered artichoke hearts, drained and chopped
1 pound oven-ready Lasagna sheets
1 tablespoon butter, cut into 8 pieces

Steps:

  • Melt the butter in a large saucepan over medium heat. Add the onions and garlic to the pan and saute until soft and translucent, 3 to 4 minutes. Add the flour and cook, stirring with a wooden spoon, to make a light roux, about 2 minutes. Whisking constantly, slowly add the milk and continue to cook, stirring occasionally until thickened, 5 minutes. Add the salt, pepper, nutmeg, spinach and 1 1/2 cups of the Parmesan and cook, stirring, until thickened, about 2 minutes.
  • Remove from the heat. Place a piece of plastic wrap directly on the surface of the creamy sauce until ready to assemble the lasagna.
  • Set a large, 12-inch saute pan over medium heat and add the olive oil. Brown the sausage until golden brown and cooked through, about 4 to 5 minutes. Stir in artichokes. Transfer to a plate to cool and set aside.
  • Preheat the oven to 375 degrees F.
  • Coat a 9-by-13 inch baking dish with olive oil, and spread about 1/2 cup of the bechamel sauce on the bottom of the dish. Lay 3 sheets of pasta across the bottom of the dish and spread 3/4 cup of the bechamel sauce over the pasta. Sprinkle 1/4 of the chicken and artichoke mixture over the bechamel sauce, then sprinkle with 1/4 cup of the remaining Parmesan. Lay another 3 sheets of pasta over the chicken and artichokes. Repeat 2 additional times with the remaining bechamel sauce, chicken and artichokes, Parmesan, and pasta, ending with a layer of pasta covered with bechamel sauce. Sprinkle the remaining 1/2 cup of Parmesan over the bechamel sauce and scatter the butter pieces over the top. Place the casserole on a lined baking sheet and bake, uncovered, until bubbly and beginning to brown, about 45 minutes.
  • Remove from the oven and cool for at least 20 minutes before serving.

Making lasagna from scratch, including the pasta, is a time-consuming project that is absolutely worth the effort, especially for a holiday dinner. If you have a friend to help you in the kitchen, so much the better; or, spread the work over a couple of days. Of course, you may use store-bought fresh or dried lasagna noodles instead of making the pasta yourself, or use a favorite tomato sauce recipe of your own. This lasagna is delicate and rich, best served in small portions.

3 ounces raw washed and stemmed spinach leaves, shredded (2 cups packed)
2 eggs
1/2 teaspoon salt
2 tablespoons olive oil
3 cups all-purpose flour
2 pounds washed and stemmed spinach leaves
12 ounces fresh ricotta cheese
1 teaspoon freshly grated lemon zest
1 teaspoon fennel seed, crushed
Salt and pepper
1 1/4 pounds Italian fennel sausage, sweet or hot, removed from casings
2 1/2 cups grated Parmesan cheese
4 tablespoons unsalted butter, plus more for pan
1/4 cup all-purpose flour
5 cups whole milk or half-and-half, plus more as needed
1 bay leaf
Pinch of cayenne
Pinch of grated nutmeg
1 tablespoon olive oil
2 small garlic cloves, grated
A small handful fresh basil leaves or sprigs, more for garnish
3 cups tomato purée, preferably Italian
4 tablespoons unsalted butter, diced in small pieces

Steps:

  • Make the pasta: Combine spinach, eggs, salt and olive oil in a blender or food processor and purée until smooth. Transfer to a mixing bowl and stir in flour. Knead mixture into a soft dough. If sticky, add a little more flour. Form into a ball, wrap in plastic, and set aside to rest while you prepare the other elements.
  • Make the filling: Bring a large pot of salted water to a boil. Add spinach and let wilt for a few seconds. Drain spinach in a colander and rinse well with cold water. Squeeze spinach dry and chop roughly.
  • Put ricotta in a mixing bowl and stir in chopped spinach. Stir in lemon zest and crushed fennel seed. Season to taste with salt and pepper.
  • Set a large skillet over medium-high heat and add sausage meat. Cook, breaking up with a spatula, until crumbled. Cook for 3 to 4 minutes, stirring, until just cooked through. Transfer to a bowl and let cool.
  • For the béchamel, melt butter in a large saucepan over medium heat. Whisk in flour and let cook for about 1 minute, stirring; do not let mixture brown.
  • Whisk in milk 1/2 cup at a time, letting sauce thicken after each addition. Add bay leaf, cayenne and nutmeg and continue cooking over low heat, whisking frequently, for about 10 minutes, to create a smooth sauce. Season to taste with salt and pepper. Thin with a little more milk if necessary; consistency should be that of a not-too-thick milkshake. If needed, strain sauce to remove lumps. Keep warm in a double boiler to prevent thickening.
  • Make the tomato sauce: In a saucepan, heat the olive oil over medium heat. Add garlic and basil and let sizzle without browning, 1 minute or less. Add tomato purée and bring to a simmer. Season to taste with salt and pepper. Cook for about 5 minutes, until slightly thickened. Remove from heat, pull out the basil leaves, and whisk in butter. Set aside.
  • Roll out the pasta: Set up a pasta machine and divide the dough into 5 roughly equal pieces. Roll each piece into a thin sheet of pasta about 12 inches long. Rolling twice at the second-to-last setting on the machine should give you the right thickness. Set aside on baking sheets, dust lightly with flour and keep covered with a slightly damp kitchen towel to prevent them from drying out.
  • Butter a medium-large baking dish, not larger than 9 by 13 inches. Heat oven to 375 degrees.
  • Cook the pasta: Have a large pot of salted boiling water on the stove and a large bowl of ice water nearby. One by one, place pasta sheets in boiling water to par-cook for about 1 minute, leaving pasta quite firm. Using tongs or a spider, lift pasta out and plunge into ice water. Lift out and lay on a clean kitchen towel to blot. Cut into two pieces.
  • As the pasta is cooked, assemble the lasagna: Place 2 sheets cooked pasta side by side, in the bottom of the baking dish. Spread pasta with 1/2 cup béchamel and dot with one-quarter of the ricotta mixture. Sprinkle over one fourth of crumbled sausage and 1/2 cup grated Parmesan. Repeat process for each layer. You will have 4 layers. Finish with 2 sheets of pasta. Spread top with 1/2 cup béchamel and sprinkle with remaining Parmesan. (The lasagna can be made up to this point up to 1 day in advance, covered and refrigerated.)
  • Cover with foil and bake about 30 minutes, until lasagna is bubbling. (If baking a refrigerated lasagna, this will take longer, up to 60 minutes.) Remove foil and bake uncovered for about 15 minutes, until lightly browned on top. Let lasagna rest for 10 to 15 minutes before cutting.
  • Just before serving, reheat tomato sauce. To serve, cut lasagna into 3- or 4-inch squares. With a spatula, transfer each serving to individual plates. Spoon about ½ cup tomato sauce around each serving. Garnish with basil leaves.

1 pound lean spicy Italian turkey sausage, casings removed (see Variation)
4 cups sliced mushrooms, (10 ounces)
1/4 cup water
1 pound frozen spinach, thawed
1 28-ounce can crushed tomatoes, preferably chunky
1/4 cup chopped fresh basil
1/4 teaspoon salt
Freshly ground pepper, to taste
1 pound part-skim ricotta cheese, (2 cups)
8 ounces part-skim mozzarella cheese, shredded (about 2 cups), divided

Steps:

  • Preparation 1.Preheat oven to 350°F. Coat a 9-by-13-inch baking dish with cooking spray. 2.Bring a large pot of water to a boil. Add noodles and cook until not quite tender, about 2 minutes less than the package directions. Drain; return the noodles to the pot, cover with cool water and set aside. 3.Coat a large nonstick skillet with cooking spray and heat over medium-high heat. Add sausage; cook, crumbling with a wooden spoon, until browned, about 4 minutes. Add mushrooms and water; cook, stirring occasionally and crumbling the sausage more, until it is cooked through, the water has evaporated and the mushrooms are tender, 8 to 10 minutes. Squeeze spinach to remove excess water, then stir into the pan; remove from heat. 4.Mix tomatoes with basil, salt and pepper in a medium bowl. 5.To assemble lasagna: Spread 1/2 cup of the tomatoes in the prepared baking dish. Arrange a layer of noodles on top, trimming to fit if necessary. Evenly dollop half the ricotta over the noodles. Top with half the sausage mixture, one-third of the remaining tomatoes and one-third of the mozzarella. Continue with another layer of noodles, the remaining ricotta, the remaining sausage, half the remaining tomatoes and half the remaining mozzarella. Top with a third layer of noodles and the remaining tomatoes. 6.Cover the lasagna with foil and bake until bubbling and heated through, 1 hour to 1 hour 10 minutes. Remove the foil; sprinkle the remaining mozzarella on top. Return to the oven and bake until the cheese is just melted but not browned, 8 to 10 minutes. Let rest for 10 minutes before serving. 1 to 2 pkg turkey sausage ( remove the caseings from them )
2 pkg frozen spinach ( thawed and drained )
2 jar(s) spaghetti sauce ( u can use any kind u like ) i always use tomato and basil or i use a gluten free sauce )
1 large onion , diced
1 large red pepper , diced
1 large green pepper, diced
1 clove garlic , minced
2 dash(es) oregano, dried
2 dash(es) basil, dried
2 dash(es) bay leaves, dried
2 dash(es) parsley flakes
1 pkg spaghetti sauce mix ( optional)
1 large container of rocotta cheese i use sargentos whole milk kind
1 egg
2 pkg mozzarella cheese
2 Tbsp olive oil, extra virgin
1 box lasagna noodles, no boil or i use rice lasagna noodles
salt and pepper to taste

Steps:

  • 1. in a large pot heat your olive oil . once the oil is heated add your diced onions, and peppers to your oil add salt and pepper to taste and also add your minced garlic once your onions begin to soften add your turkey sausage. once your turkey sausage is fully cooked add your 2 jars of sauce . add all your seasonings and your spaghetti sauce mix to your sauce ( if you wish u may add a little bit of sugar to your sauce to help cut down on the acid of it ) bring your sauce to a simmer
  • 2. while your sauce is simmering . in a med size bowl take your rocotta cheese one egg and 2 dashes of parsley flakes and 2 big pinches of mozzarella cheese and your spinach and mix it all together . make sure that you have thawed and drained all the water from your spinach before adding it your rocotta cheese .
  • 3. pre heat your oven to 375
  • 4. in your biggest casserole dish put some of your sauce in the bottom of your dish then do a layer of your noddles layer of your rocotta mixture sprinkle with your mozzarella cheese and repeat . place your casserole dish onto a baking sheet and place it in the oven for 1 hr and 35 mins depending on if your have gas or an electric oven . u will know its ready when your cheese is all melted and bubbley and has a slight golden color to the cheese . remove from the oven once it done and place on a cooling rack for at least 20 to 30 minutes . and serve ... Enjoy !

3 lbs lean spicy Italian turkey sausage, casings removed
12 cups sliced mushrooms (about 2 pounds)
3/4 cup water
4 1/2 lbs fresh spinach, well rinsed
3 (28 ounce) cans crushed tomatoes, preferably chunky
3/4 cup chopped fresh basil
salt & freshly ground black pepper
3 lbs part-skim cottage cheese (6 cups)
1 1/2 lbs part-skim mozzarella cheese, shredded (about 6 cups)

Steps:

  • Preheat oven to 350 degrees. Coat a large baking dish with cooking spray. Put a large pot of water on to boil.
  • Cook noodles in boiling water until not quite al dente, about 2 minutes less than package directions. Drain; return the noodles to the pot, cover with cool water and set aside.
  • Coat a large nonstick skillet with cooking spray and heat over medium-high heat. Add sausage and cook, crumbling with a wooden spoon, until browned, about 4 minutes. Add mushrooms and water; cook, stirring occasionally and crumbling the sausage more, until the sausage is cooked through, the water has evaporated and the mushrooms are tender, 8 to 10 minutes. Stir spinach into pan; remove from heat.
  • Mix tomatoes with basil, salt and pepper in a medium bowl.
  • To assemble lasagna: Spread one-fourth of the tomatoes in prepared baking dish. Arrange a layer of noodles on top, trimming to fit if necessary. 1 medium onion, chopped

1 large ricotta cheese
1 lb italian blend cheese
2 lb italian sausage in bulk (marsh's)
8 oz frozen spinach, cooked
1 large jar pasta sauce
1 jar(s) alfredo sauce (classico garlic alfredo)

Steps:

  • 1. Cook and cool noodles. Cook and drain spinach WELL. Cook sausage with onion until cooked through and make extremely crumbly so that you can layer.
  • 2. Put a little of the combined sauces in the bottom of a 9x13 pan, then put a layer of noodles (this will prevent them from sticking). Cover with 1/3 of the ricotta, then cheese, spinach and a second layer of noodles.
  • 3. Layer second layer of ricotta, sausage, and drizzle with both sauces. Top with a layer of noodles, and layer remaining ricotta, sausage, second 1/3 Italian cheese blend, and a last layer of noodles. Sprinkle with Italian seasoning, cover with remaining cheese. Drizzle with remaining alfredo, then cover to edges of the pan with the pasta sauce. Use more if necessary to prevent noodles from burning.
  • 4. Bake at 350 degrees 45-55 min. Let stand 10 min.

1 1/4 pounds hot Italian turkey sausages, casings removed
Spicy Tomato Sauce
1 15-ounce container cottage cheese
1 10-ounce package frozen chopped spinach, thawed, squeezed dry
1 3/4 cups grated Parmesan cheese
2 large eggs
3 tablespoons whipping cream
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon ground black pepper
9 uncooked lasagna noodles
3 cups shredded provolone cheese (about 12 ounces)

Steps:

  • Heat oil in large skillet over medium heat. Add sausages; sauté until brown, using fork to break up meat into coarse pieces, about 7 minutes. Add Spicy Tomato Sauce. Simmer 5 minutes. Position rack in center of oven; preheat to 375°F. Whisk ricotta, spinach, 1 cup Parmesan, eggs, cream, basil, oregano and pepper in large bowl. Set aside. Spoon 1 cup sauce over bottom of 13 x 9 x 2-inch glass baking dish. Place 3 noodles over sauce in single layer. Spread 1 cup sauce over noodles. Spoon 1 cup ricotta mixture over sauce. Meat Sauce:
1 lb mild Italian sausage, casings removed
1 medium onion diced
14 oz can diced tomatoes
1 can tomato sauce
2 tbsp brown sugar
salt and pepper to taste
Bechamel Sauce:
1/4 c butter
1/4 c flour
4 c milk
2 c shredded Italian cheese blend
1/2 c shredded fresh parmesan
pinch nutmeg
salt and pepper to taste
2 c chopped fresh spinach
1 package fresh spinach and ricotta cannelloni

Steps:

  • Meat Sauce: In large saucepan saute onion and sausage over medium heat, breaking up sausage into small pieces. When sausage is browned, add remaining ingredients and simmer for 20 minutes. Bechamel Sauce: In large saucepan melt butter over medium heat. Add flour, whisking to make smooth. Gradually add milk and spices; whisking to avoid lumps. Once sauce has thickened, remove from heat and add cheese blend, stirring until melted. Add spinach. Assembly: In 9 X 13 casserole dish, add enough meat sauce to cover bottom of pan. Place cannelloni in single layer on top, cover with bechamel sauce, spoon remaining meat sauce over bechamel. Top with parmesan.
