32 jumbo pasta shells
2 cups ricotta cheese
2 (10 ounce) packages frozen chopped spinach, thawed and drained
1 cup grated Parmesan cheese
2 tablespoons fennel seed
2 teaspoons dried basil
4 cloves garlic, minced
salt and pepper to taste
3 ½ cups spaghetti sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to boil, gently place pasta shells in boiling water; bring water back to boil. Cook until noodles are just tender; drain well.
  • Squeeze spinach dry. Combine spinach, ricotta, 1/3 cup Parmesan cheese, fennel, basil and garlic in a large mixing bowl. Season with salt and pepper; mix well.
  • Spread 1/2 cup marinara sauce evenly over the bottom of a 9x13 inch baking dish.
  • Fill each pasta shell with the spinach cheese mixture. Arrange the shells, filling side up in the baking dish. Spoon remaining marinara sauce over the shells. Sprinkle remaining Parmesan cheese on top of the shells.
  • Cover the pan loosely with aluminum foil and bake in preheated oven until heated through; about 30 minutes.

1 teaspoon olive oil
1 onion, chopped
3 cups chopped cooked chicken
1 (14 ounce) can Italian-style diced tomatoes
1 (10 ounce) package spinach
1 (8 ounce) package cream cheese, softened
1 ½ cups shredded mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Heat olive oil in a skillet over medium-high heat. Saute onion in hot oil until tender, 5 to 7 minutes.
  • Mix penne pasta, onion, chicken, diced tomatoes, spinach, and cream cheese together in a baking dish until the cream cheese melts and coats everything. Sprinkle mozzarella cheese over the pasta mixture. Cover baking dish with aluminum foil.

1 lb pasta, any kind
2 cups mushrooms, chopped in half
1 medium onion
1 cup cooked chopped spinach, from frozen or fresh
2 ounces blue cheese
10 ounces low-fat sour cream or 10 ounces yoghurt

1 tablespoon olive oil

Steps:

  • Prepare the pasta, according to package directions, while you make the rest of the meal.
  • Put half the olive oil in a large pan, add the diced chicken and brown- set aside.
  • Put the rest of the olive oil in the pan and add the onions and mushrooms.
  • Cook until the juices from the mushrooms disappear (about 5- 7 mins) Add the chicken and spinach and mix thoroughly.
  • Add the sour cream and blue cheese and stir over a low heat until the blue cheese is melted.
  • Add the cooked pasta and stir to mix.
  • Add salt and pepper to taste and serve.

cooking spray
1 teaspoon seasoned salt, or to taste
3 skinless, boneless chicken breasts
¼ cup butter
1 cup chopped fresh spinach

3 sprigs fresh thyme, leaves removed
½ cup grated Mizithra cheese
¼ cup pine nuts
freshly ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes; drain.
  • Spray a grill pan lightly with cooking spray; heat over medium heat. Sprinkle seasoned salt on both sides of chicken and cook until no longer pink in the center and the juices run clear, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Let cool slightly.
  • Melt butter in a small saucepan over medium heat; bring to a low simmer and cook until butter has a caramel fragrance and is almost done foaming, 5 to 10 minutes.

200 g frozen spinach
85 g blue cheese, of choice (I use Blaukrantz a local blue cheese in S. Africa)
250 g mascarpone cheese
25 g freshly grated parmesan cheese
1 pinch chili flakes (optional)
freshly ground salt and black pepper, for seasoning

Steps:

  • Bring a large pan of salted water to the boil.
  • Add pasta and cook for 10-12 minutes, adding the spinach to the pan for the last 3 minutes of cooking time.
  • Drain well then tip the pasta and spinach into a shallow baking dish along with the crumbled blue cheese,pinch of chili flakes if using and seasoning to taste.
  • Put spoonfuls of the mascarpone cheese all over the top of the pasta.
  • Sprinkle with the parmesan then grill for 5 minutes until the mascarpone melts and the top turns a golden brown.
  • Serve with grilled tomatoes and a green salad.

This is lovely served on any pasta. I think it originally came from an old WW Pasta Cookbook, so it's fairly low in calories and it's so simple that even my boyfriend cooks it. It makes quite a 'dry' pasta sauce.

1 teaspoon olive oil
1 small onion, finely chopped
500 g fresh spinach, chopped
1/2 teaspoon fresh thyme, chopped
120 g ricotta cheese
1/2 teaspoon nutmeg, freshly grated
15 g pine nuts, toasted
salt, to taste
fresh ground black pepper
1 teaspoon vegetable stock, powdered (optional)
1 garlic clove, minced (optional)

Steps:

  • Heat the oil in a pan and fry the onion on a gentle heat until soft but not browned.
  • Add the thyme, garlic (if using) and spinach.
  • Continue to cook on low heat until the spinach leaves have wilted, approximately 2-3 minutes. If you're spinach was very wet and there is a lot of water in the pan, drain some off otherwise the sauce will be very runny. If you're not sure drain it into a separate bowl you can always add some later if you feel it's too thick.
  • Add the ricotta cheese and mix, using a wooden spoon, until it forms a smooth sauce.
  • Season, using nutmeg (I use more than stated above, but then I really like nutmeg), salt, freshly ground pepper and powdered vegetable stock to taste.
  • Sprinkle with toasted pine nuts and serve straight away on your favourite pasta.

  • Cook pasta as directed on package, omitting salt.

1 pound spinach
1 pound spaghetti, linguine, or other pasta
2 tablespoons butter (preferred), or extra virgin olive oil
1/4 pound Roquefort, gorgonzola, or other good blue cheese, crumbled

Steps:

  • Set large pot of water to boil, and add salt. Remove largest, thickest stems from spinach; roughly chop leaves and remaining stems. Wash thoroughly.
  • When water comes to boil, add pasta and cook, stirring occasionally, until nearly tender. When just about done, add spinach. Stir. As soon as spinach wilts completely -- less than 30 seconds -- drain quickly.
  • Immediately return pasta and spinach to pot, with butter and cheese, over low heat. Cook, stirring occasionally, until cheese and butter melt, all water is absorbed, and pasta is tender. Add salt and pepper to taste and serve immediately.

1/2 c freshly chopped basil
italian dressing just enough to coat
1/2 c parmesan cheese

  • 1. Cook 1 bag of Barilla's Cheese and Spinach Tortellini, drain and allow to cool.

1 pound grape tomatoes, halved (3 cups)
4 cloves garlic, minced
10 ounces fresh baby spinach
3/4 cup crumbled feta cheese or goat cheese (chevre) (3 ounces)
3 tablespoons pine nuts, toasted

Steps:

  • Cook pasta according to package directions; drain.
  • Meanwhile, lightly coat the rack of an indoor electric grill with cooking spray. Preheat grill. Place chicken on grill rack. If using a grill with a cover, close lid. Grill until chicken is no longer pink (170 degrees F). (For a covered grill, allow about 6 minutes. For an uncovered grill, allow 12 to 15 minutes, turning once halfway through grilling.) Cut chicken into bite-size pieces.
  • For dressing, in a small bowl whisk together 3 tablespoons oil, vinegar, orange peel, orange juice, honey, mustard, salt, and pepper; set aside.

2 cups uncooked rotini pasta
1 pound bulk pork sausage
1 (10 ounce) bag baby spinach leaves
2 (14.5 ounce) cans Italian-style diced tomatoes with juice
2 cups shredded mozzarella cheese
2 tablespoons grated Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a boil. Stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through but is still slightly firm, about 8 minutes. Drain well.
  • Heat a large skillet over medium-high heat and stir in the sausage. Cook and stir until the sausage is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. I chose Cavatappi pasta for this recipe because the shape is not only fun, but it also helps to hold the sauce and other ingredients better. I selected those particular types of cheese because I feel like they take this recipe up a notch from being an average weeknight dinner to something you might even choose to make for company. I used fully cooked apple-smoked bacon, which I found at Trader Joe's along with the Havarti, Gruyere & Fontina cheeses. Since I used such rich and flavorful cheeses, I chose to use 2% greek yogurt and 2% milk instead of using sour cream and half & half so the recipe wouldn't be laden down with heavy ingredients.

1 (1 ounce) package Hidden Valley Original Ranch Seasoning Mix
16 ounces cavatappi pasta, cooked per package instructions
3 1/2-4 cups chicken, cooked and diced
12 ounces apple-smoked bacon, prepared accordingly drained & crumbled
6 ounces Baby Spinach, torn and stems removed
5 -6 garlic cloves, finely diced
2 shallots, finely diced
1 cup havarti cheese, grated (aged)
1 cup Fontina cheese, grated (semi-soft)
1/2 cup gruyere cheese, grated
1/2 cup parmesan cheese, grated
3 cups 2% low-fat milk
7 ounces 2% low-fat Greek yogurt
7 tablespoons butter
1/4 cup flour
2 cups panko breadcrumbs

Steps:

  • Pre-heat oven to 325 degrees. Melt 4 tbsps of butter in a large pan over medium heat. Add shallots and garlic and saute for 3 minutes, stirring constantly. Whisk in flour and blend thoroughly. Slowly add milk, whisking constantly until the mixture is well blended. Immediately add the yogurt and 1 oz packet of Hidden Valley Original Ranch Seasoning mix and continue to stir until mixture begins to thicken. Once mixture is smooth, add the Fontina, Havarti & Gruyere cheeses and blend until the cheese is melted. Turn off the heat and add the spinach. Once the spinach is wilted, carefully add in the diced chicken and bacon. Pour the mixture into a 13 x 9 dish that is coated with cooking spray and use a spatula to spread it evenly. Combine Panko breadcrumbs and 1/2 cup of Parmesan cheese in a bowl. Melt 3 tbsps. of butter and toss with the panko mixture until thoroughly combined. Spread mixture evenly on top of the casserole and bake on the middle rack for 25-35 minutes, or until the breadcrumbs are golden brown and mixture is bubbly.

3/4 cup sliced almonds, toasted
1 pound burrata cheese, cut into 1-inch chunks

Steps:

  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally.
  • Meanwhile, melt butter with oil in heavy large skillet over medium heat. Add garlic; sauté until soft, about 2 minutes. Add lemon juice and lemon peel. Drain pasta; transfer to large bowl. Place spinach and almonds atop hot pasta. Pour hot lemon mixture over spinach. Toss until spinach is wilted, about 1 minute. Divide pasta among plates. Top with burrata cheese, sprinkle with salt and pepper, and serve.
