FUDGY CHOCOLATE-SPINACH BROWNIES

6 tablespoons unsalted butter, plus more for greasing the pan
3 tablespoons cocoa powder, plus more for dusting the pan
3 ounces bittersweet chocolate, chopped
2 teaspoons instant espresso powder
1/2 cup sugar
1 cup frozen chopped spinach, thawed
2 teaspoons pure vanilla extract
2 large eggs, beaten
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 cup semi-sweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Butter an 8-inch square baking pan and dust it with the cocoa powder, tapping out the excess.
  • Fill a medium saucepan 1/3 full of water and bring it to a boil over medium-high heat. Put the butter, chocolate and espresso powder in a heatproof bowl, set it on the saucepan and turn off the heat. Let the bowl stand for about 5 minutes until the chocolate mixture is melted. Stir together until very smooth. Stir in the sugar until dissolved. Remove the bowl from the saucepan; let cool to room temperature.
  • Squeeze any excess moisture from the spinach and put it in a food processor. Add the vanilla and 1 tablespoon of water and puree until very smooth. Add the spinach puree and eggs to the cooled chocolate mixture and whisk until well combined.
  • Whisk together the flour, cocoa powder, baking powder and salt in a medium bowl until combined. Add the wet ingredients to the dry and fold with a rubber spatula until combined. Add the chocolate chips and stir to combine. Pour the batter into the prepared pan; use an offset spatula to spread the batter evenly. Bake until set and a toothpick inserted in the center still has a few moist crumbs stuck to it, about 25 minutes.
  • Cool the brownies completely in the pan before cutting.

21 ounces brownie mix, family sized box
10 ounces frozen chopped spinach, thawed
1/4 cup vegetable oil
1/3 cup carrot juice
1 tablespoon milk

Steps:

  • Heat oven to 350 degrees.
  • Line a 9"x13" pan with parchment paper or spray with cooking spray.
  • Squeeze out the liquid from the spinach.
  • Place spinach, vegetable oil, milk and carrot juice in a blender and puree until smooth.
  • In a large bowl, combine the brownie mix, 3 eggs, and the spinach mixture until well blended.
  • Spread batter into pan and bake 40 minutes.

3 ounces semisweet chocolate
1/2 cup carrot, puree
1/2 cup spinach, puree
1/2 cup light brown sugar, firmly packed (or dark)
1/4 cup unsweetened cocoa powder
2 tablespoons butter
2 teaspoons pure vanilla extract
2 large egg whites
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Preheat the oven to 350°. Coat an 8" x 8" baking pan with cooking spray.
  • Melt the chocolate in a double boiler or over a very low flame.
  • In a large bowl, combine the melted chocolate, vegetable purees, sugar, cocoa powder, margarine and vanilla and whisk until smooth and creamy, 1-2 minutes.
  • Whisk in egg whites. Stir in the flour, baking powder, and salt with a wooden spoon.
  • Pour the batter into the pan and bake 35-40 minutes. Cool completely in the pan before cutting into 12 bars.

1 cup flour
2 eggs
12 ounces sharp cheddar cheese, grated
1/2 teaspoon salt
1 teaspoon baking powder
1/2 cup chopped onion
1/4 cup melted butter
1 cup milk
1/2 lb bulk sausage
10 ounces frozen chopped spinach, thawed and drained

Steps:

  • Mix flour, salt and baking powder together in large bowl.
  • Brown the sausage and drain.
  • Beat the eggs, milk and butter together.
  • Mix the egg mixture into the flour mixture.
  • Add the cheese, onion, sausage and spinach.
  • Pour into a greased 9x13-inch pan.
  • Bake at 350°F for 30 minutes.
  • Cool the brownies slightly and then cut into squares to serve.

3 cups black beans, rinsed and drained
2 cups pitted medjool dates, soaked in 3/4 cup of water for at least 1 hour
1/2 cup unsalted almond butter
1/4 cup rolled oats (gluten-free if necessary)
1 teaspoon vanilla extract
1 tablespoon chia seeds
2 cups packed baby spinach leaves
1/3 cup carob powder or 1/3 cup cocoa powder
nonstick cooking spray
vanilla frosting
1/2 cup unsalted cashews
2/3 cup unsweetened soymilk
1 cup pitted medjool dates
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees.
  • Lightly spray a large baking dish (I recommend 13″x 9″) with non-stick cooking spray and set aside.
  • Combine all ingredients in a high-speed blender and process until smooth, adding a small amount of non-dairy milk if necessary to blend.
  • Pour batter into baking dish and bake for at least 45 minutes. If the top of the brownies begins to burn during the last 10-15 minutes of baking, drop the temperature to 350 degrees.
  • Let brownies chill completely before serving, preferably overnight in the refrigerator.
  • Alternatively, you can bake the brownies at 300 degrees for 1 hour and then an additional hour at 225 degrees.
  • Frosting: Combine ingredients in a high-speed blender and process until smooth. Note: it is not necessary to soak the dates for the frosting recipe.
