These are pretty to look at, but even better to eat! Enjoy!! I can't remember how many pinwheels you get, but I know it makes a lot.

2 (10 ounce) packages frozen chopped spinach, thawed drained & squeezed dry in paper towels
1 (8 ounce) package cream cheese, softened
1/2 cup mayonnaise
1/2 cup sour cream
1 envelope ranch dip mix
1 jar bacon bits (or to taste)
4 green onions, chopped
1 (8 count) package 10-inch flour tortillas

Steps:

  • In medium mixing bowl, combine cream cheese, sour cream and mayonnaise.
  • Beat in dip mix.
  • Add green onion, bacon bits and spinach (broken up into small clumps).
  • Mix thoroughly.
  • Spread mixture onto tortillas, leaving a 1/2" space around edge.
  • Roll up each tortilla tightly, and wrap each in plastic wrap.
  • Chill for several hours or overnight.
  • To serve, cut off ends and cut into 1/2" slices.

Instead of sausage balls, try these savory spinach treats -- they're great! The recipe was given to me while shopping by a lady at the grocery store. The formed balls may be stored frozen in airtight containers until ready for use.

1 (10 ounce) package frozen chopped spinach, thawed and drained
2 cups dry bread stuffing mix
3 eggs, beaten
¼ cup grated Parmesan cheese
½ onion, chopped
2 tablespoons melted butter
¼ cup shredded Cheddar cheese

Steps:

  • In a large bowl, mix together chopped spinach, dry bread stuffing mix, eggs, Parmesan cheese, onion, butter and Cheddar cheese. Cover and chill in the refrigerator approximately 30 minutes.
  • Drop the mixture by rounded spoonfuls onto a lightly greased large baking sheet. Place baking sheet in the freezer approximately 1 hour.
  • When ready to bake, allow the balls to partially thaw, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking sheet.
  • Bake the balls in the preheated oven 20 to 25 minutes, or until lightly browned.

1/2 cup butter, melted
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
3 large eggs
1 cup whole milk
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
4 cups shredded Monterey Jack cheese

Steps:

  • Pour butter into a 13x9-in. baking dish; tilt to coat. In a small bowl, combine the flour, salt and baking powder. Whisk eggs and milk; stir into dry ingredients just until blended. Fold in spinach and cheese. Pour into prepared dish., Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted in the center comes out clean. Cool for 5 minutes; cut into small squares. Serve immediately or transfer to a freezer container. May be frozen for up to 3 months., To use frozen appetizers: Thaw in the refrigerator overnight. Place on baking sheet. Bake, uncovered, at 350° for 25-30 minutes or until heated through. Let stand 5 minutes before serving.

1 (8 ounce) container cream cheese (with chive & onion optional)
1 (10 ounce) package frozen spinach, thawed and drained well
1/3 cup roasted red pepper, drained and chopped (fresh red pepper works nicely too)
1 1/2 teaspoons pepper
9 frozen phyllo pastry sheets, thawed
6 tablespoons margarine, melted

Steps:

  • Stir together cream cheese, spinach red pepper and pepper until well blended.
  • Lay one phyllo sheet on a flat surface and brush with margarine.
  • cut phyllo lengthwise into 4 long strips.
  • spoon approximately 1 tablespoon filling about an inch from the end of the phyllo strip.
  • Fold phyllo over filling at an angle and continue folding like folding a flag until you have a triangle. repeat with remaining phyllo and filling.
  • Place triangles on greased cookie sheet, brushtops with margarine and bake at 375, 12 -15 minutes until golden.

2 eggs
6 tablespoons whole-grain wheat flour
1 1/2 cups cheddar cheese, shredded
10 ounces frozen spinach, thawed drained
2 cups cottage cheese
1 pinch ground nutmeg
1 dash black pepper, fresh ground
1 dash cayenne pepper
3 tablespoons wheat germ

Steps:

  • In a large bowl, beat eggs (or egg substitute) with flour until smooth.
  • Squeeze spinach to dry then add to egg mixture along with cottage cheese, cheddar cheese, pepper, cayenne, and nutmeg.
  • Mix well.
  • Pour into 13 x 9 x 2-inch pan that has been sprayed with non-stick cooking spray.
  • Sprinkle with wheat germ and bake in preheated 350-degree oven for about 45 minutes.
  • Let stand 10 minutes then cut into 1-1/2 inch squares.

3 cans ref croissant dough
(keep cold)
1 10 oz pkg frozen chopped spinach (thaw and dry well)
1 pint ricotta cheese
1 lb turkey sausage
1 lb shredded cheddar cheese

Steps:

  • cook sausage thorougly, drain and set in large bowl. Add ricotta cheese, mix well. Add spinach, mix well. Add cheddar cheese, mix well. Remove one can of dough from fridge, separate triangles. Spread flat and add 1 TBSP of mixture to each triangle. Can either roll them up, or can fold up (like a diaper) I use the diaper method myself. Repeat with each can. Can cut triangles in half and use 1 tsp for smaller puffs (will double recipe)

4 c pepperidge farm herb stuffing
3/4 c butter, melted and cooled slightly
6 large eggs, beaten
1 small onion, grated
3/4 tsp pepper
1/2 Tbsp thyme, dried
1 Tbsp garlic powder
1/2 c parmesan cheese

Steps:

  • 1. Combine all ingredients in a large bowl and mix well.
  • 2. Shape balls using a medium ice cream scoop (about 2 tablespoons). Bake at 350 degrees on a greased cookie sheet for 20 minutes.
  • 3. If you plan on freezing place on cookie sheet lined with wax paper. Freeze for several hours, remove from pan and place in a resealable bag. Store in freezer until ready to use. Bake as directed.

3 (10 ounce) packages frozen chopped spinach
1/2 cup onion, finely chopped
2 tablespoons butter or 2 tablespoons margarine
4 eggs, beaten
2 cups milk
3 cups chopped cooked ham
1/2 teaspoon seasoning salt
2 1/4 ounces hollandaise sauce mix
4 hard-cooked eggs, chopped

Steps:

  • Cook frozen spinach according to package directions; drain well. Cook chopped onion in butter or margarine till onion is tender but not brown.
  • Combine beaten eggs and milk. Add bread crumbs, ham, cooked onion, spinach, and seasoning salt; mix well. Spread evenly in a 12 by 7 1/2 by 2" baking dish.
  • Bake, uncovered, at 350°F till set. 40 to 45 minutes.
  • Meanwhile, prepare hollandaise sauce mix according to package directions; stir in chopped hard-cooked eggs.
