This is another recipe from Recipes for Life II.This cookbook has wonderful recipes and I have never been disappointed in any that I have tried.I have gotten to know many of the people that have submitted recipes,( me included ) for this fundraiser cookbook. I just did the Relay for Life walk last week-end got to know the faces with the names !!

1 (10 ounce) package frozen chopped spinach, drained and chopped
1 garlic clove, minced
1 (3 1/2 ounce) package goat cheese
2 teaspoons fresh lemon thyme
1 teaspoon lemon peel, grated
1/2 teaspoon salt
1/8 teaspoon pepper
1 dash hot pepper sauce

Steps:

  • In food processor while running, add all ingredients and process until well blended.
  • Let stand at room temperature 1 hour before serving.
  • Spread can be made one day ahead. Cover and refrigerate if so but make sure it stands out for 1 hour before serving.
  • Serve on crackers, baguette slices or vegetables that you can dip with.

Goat Cheese Spread With Fresh Spinach and Basil image

This is a yummy spread for crackers or toasted pita bread. Only use fresh spinach and basil. It makes a difference. Please note: Cooking time is chilling time!!

Number Of Ingredients 6

1/4 cup plain low-fat yogurt (I like to use greek yogurt)
8 ounces goat cheese
3 tablespoons olive oil
2 cups fresh spinach, torn, tightly packed
3 tablespoons fresh basil leaves, chopped (save one whole for garnish)
1/4 teaspoon dry crushed red pepper

Steps:

  • Spoon the yogurt onto several layers of heavy-duty paper towels; spread the yogurt to a 1/2 inch thickness. Cover with additional paper towels; let stand for 5 minutes to remove the excess moisture.
  • Position the knife blade in a food processor bowl; scrape yogurt into the bowl, using a rubber spatula. Add the goat cheese and olive oil; process until smooth, stopping once to scrape down the sides. Add the spinach, basil, and red pepper; process until the spinach is chopped.
  • Spoon the mixture into a bowl; cover and chill at least 2 hours. Serve with assorted crackers.
