2 tablespoons extra-virgin olive oil
Pinch red pepper flakes
2 cloves garlic, minced
1 bunch Swiss chard, stems removed and leaves chopped into thin strips
Splash white wine
1 tablespoon sugar
Salt

Steps:

  • In a large skillet over high heat, add oil, red pepper flakes and garlic and toast the garlic until golden brown. Add chard and toss quickly. Stir in a splash of white wine. Cook and toss until liquid evaporates and chard is wilted. Add the sugar, season with salt and serve.

1 tablespoon olive oil
1 bunch rainbow chard - leaves and stems separated and chopped
⅓ cup chopped yellow onion
2 (1/4 inch thick) slices fresh ginger root, peeled and julienned
salt and pepper to taste
1 tablespoon maple syrup

Steps:

  • Heat the oil in a large skillet over medium heat. Cook the chopped chard stems, onion, and ginger in the hot oil until they begin to soften; season with salt and pepper. Add the chopped chard leaves to the skillet; reduce heat to low. Continue cooking until the leaves have wilted, about 2 minutes more. Drizzle the maple syrup over the mixture; stir to coat evenly. Remove from heat and serve.

4 tablespoons unsalted butter, plus more for greasing the baking dish
2 tablespoons minced garlic
4 slices thick-cut applewood-smoked bacon, diced
8 cups (lightly packed) roughly chopped Swiss chard, stems removed
One 14-ounce can artichoke hearts, drained, rinsed, roughly chopped
1/4 cup sliced pickled jalapenos, drained
1/4 cup sun-dried tomatoes, drained and finely chopped
4 tablespoons all-purpose flour
2 cups milk
1/4 cup ricotta cheese
1/2 cup cream cheese, softened
1 cup shredded sharp white cheddar
1/4 cup grated Parmesan, plus extra for topping
Kosher salt and freshly ground black pepper
Tortilla chips, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat 1 tablespoon of the butter in a medium saute pan over medium heat. Add the garlic and cook until fragrant, 1 to 2 minutes. Add the bacon and cook until crispy and browned, another 5 minutes. Add the Swiss chard and cook until wilted, stirring occasionally, 4 to 5 minutes. Stir in the artichoke hearts, pickled jalapenos and sun-dried tomatoes and heat through, 1 minute.
  • In a deep pot, melt the remaining 3 tablespoons butter over medium-high heat. Add the flour and cook, whisking, until golden, 2 minutes. Lower the heat to medium and slowly pour in the milk while whisking; cook, whisking constantly, for 5 minutes. Add the sauce to the chard mixture. Stir in the ricotta, cream cheese, cheddar and Parmesan. Taste and add salt and pepper as needed.
  • Transfer the mixture to a greased 9-by-13-inch baking dish. Sprinkle with some grated Parmesan and bake until golden brown and bubbly, 20 minutes. Serve warm with tortilla chips for dipping.

1 tablespoon sugar

  • In a large skillet over high heat, add oil, red pepper flakes and garlic and toast the garlic until golden brown(watch carefully, don't let it burn!).
  • Add the chard or spinach and toss quickly.
  • Stir in a splash of white wine.
  • Cook and toss until liquid evaporates and greens are wilted.
  • Add the sugar, season with salt and serve. Enjoy!

1 (15 ounce) can butter beans or 1 (15 ounce) can white kidney beans, drained and rinsed
2 tablespoons green hot pepper sauce

  • Remove stems from swiss chard; coarsely chop swiss chard leaves.
  • Heat oil in 5-quart dutch oven over medium-high heat until hot.
  • Add swiss chard.
  • Cook until wilted, but still bright green, stirring frequently.
  • Stir in beans, green pepper sauce and salt.
  • Cook over medium heat until mixture is heated through.

1 tablespoon chipotle peppers
1 tablespoon chopped garlic
1 teaspoon cumin seed, toasted and ground
1 teaspoon coriander seed, toasted
3 ounces plus 1-ounce canola oil
2 (6-ounce) salmon fillets, cut thick
1/2 cup red onion, sliced thin
1/2 cup red bell pepper
1 bunch scallions, sliced lengthwise
Salt, to taste
Pepper, to taste
1 cup fresh cilantro, chopped and packed
1 tablespoon extra virgin olive oil
2 cup loose chard, chopped
1 teaspoon garlic
1 teaspoon green hot pepper sauce
1 teapoon jalepeno, deviened, deseeded and roasted
1 (8-ounce) can, cooked black beans, drained
1 large red bell pepper, roasted and diced
1 large red onion, peeled and diced
1 tablespoon chili powder, mild
1 tablespoon butter
2 (10-inch) light flour tortillas
5 lime wedges
4 tablespoons sour cream

Steps:

  • In blender combine chipotle, garlic, cumin, coriander, 3 ounces canola oil. Puree. Paint salmon fillets with puree, reserving 1 tablespoon, let sit 10 minutes. In very hot cast iron skillet, sear 2 minutes each side. Remove fish fillets and reserve. In a separate, clean, very hot skillet, place 1-ounce of canola oil. Add red onion, red bell pepper, and scallions. Season with salt and pepper. Cook 2 minutes. Add remaining tablespoon of blender puree and cilantro. Cook 2 minutes more. Remove from skillet. In same skillet, add 1 tablespoon extra olive oil, chard, garlic, hot pepper sauce and jalapeno. Cook for 3 minutes. While that is cooking, in a small pot heat beans with roasted red peppers, onions, chili and butter.
  • Assembly: Toast tortillas lightly in skillet and put on plate. Mash salmon fillets with fork and place in toasted tortilla, top with red onion/scallion/cilantro mixture, and sprinkle with lime juice. Roll up into burrito and serve with cooked chard and black beans on the side, as well as limes wedges and sour cream.

SWISS CHARD RICE WITH SPICY CHILI SAUCE

Swiss chard is common in the Northeastern part of Korea. This recipe can be eaten vegetarian as shown here, but you can easily add cooked ground meat as well.

2 cups long grain rice, rinsed
1 small bunch swiss chard, trimmed and chopped into bite size pieces
2 large piece dried sea kelp
3 cups water
1 tablespoon sesame oil
2 tablespoons korean chili flakes (gochugaru)
4 tablespoons soy sauce
1 garlic clove, finely minced
1 tablespoon sesame oil
2 teaspoons toasted sesame seeds
1 dash black pepper
1 green onion, finely chopped

Steps:

  • To make stock, boil 3 cups of water and add the sea kelp. Remove from the heat and let it sit for 10 minutes for the flavor to release. Reserve 2 cups of stock.
  • In a heavy bottom pot, heat the sesame oil over medium heat, add the Swiss chard and saute until soft. Add the rinsed rice and continue to saute for 2 more minutes. Pour the reserved 2 cups of sea kelp stock into the pot. Let it boil, reduce the heat and simmer for 15-20 minutes, covered.
  • Remove from heat and let it sit for another 5 minutes so the remaining heat inside the pot will finish the job. Fluff the rice and chard with a fork.
  • Meanwhile, make the chili topping sauce by combining the remaining ingredients.
  • To serve, spoon the rice in a bowl, top with the sauce, and mix all together to incorporate the rice with the sauce. Serve warm.

1 bunch of Swiss Chard or other type of greens: Collard, etc.
Uncooked, spicy sausage (about 4)
1 large onion (any color), or 3 shallots in medium slices
Clove of garlic minced or grated
Chicken or vegetable stock; about 1/2 cup or as desired
olive oil
salt and pepper
crushed red pepper flakes or small dried chiles
cumin and/or fresh ginger

Steps:

  • - Rinse chard well and drain - Hold a leaf of chard at base of stem with one hand, and with other hand, grab leaf along stem, and move hand in an upwards motion to remove leaf from thick stem. Repeat for the rest of the bunch - Tear leaves into about 1.5 inch strips, and dry (Chard preparation can be done days ahead. Keep dry in an air tight container or plastic bag in the refrigerator; will remain fresh for up to two weeks) - Heat a large skillet over med-high heat with some olive oil - Add onions and saute until tender; about 7 minutes - Add garlic, red peppers, and other variety of spices such as: freshly grated ginger and or cumin - Stir, and then add greens - Saute for a minute or so, and then add stock and freshly cracked pepper and a pinch of salt (depending on the salt content of the stock, adding salt may not be necessary) - Turn down to medium heat, and cook for about 5 minutes - Add spicy sausage in thick slices; about 3/4 inch - Cook until sausage is cooked thoroughly, greens are wilted, and most of the liquid is evaporated (about 8-10 minutes)

handful of shelled pistachio
3 large cloves garlic
red pepper flakes
1 tbsp butter or ghee
salt
pepper

Steps:

  • Coarsely chop the Swiss Chard into strips. Mince the garlic. Melt the butter or ghee in a large pan or wok on medium heat. Add garlic and pistachios to the pan. Cook for a couple minutes. Add the chard. Cover it for a minute. Stir. Cook it down. Salt and pepper to taste. I didn't cook mine for long. Just until it wilts a little.
