2 1/2 cups O'Brien potatoes
2 1/2 cups southern style hash browns
1/4 cup milk
0.5 (8 ounce) can cream of mushroom soup
1/2 cup sour cream
1/4 cup of chopped onion (optional)
2 cups cheese, shredded
1 -2 cup cubed ham (recommended Cure 81)

Steps:

  • Preheat oven to 350 degrees.
  • Combine all the ingredients.
  • Grease pan and pour in pan.
  • Cook for 45 min to 1 hour.

2 tablespoons . butter
2 tablespoons all-purpose flour
2 1/4 cups wrm milk
1 cup havarti cheese, shredded
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin
1/4 teaspoon ground pepper
2 round round white potatoes or 2 round yukon gold potatoes, scrubbed
1 cup chunky salsa
1/4 cup pickled jalapeno pepper, slices drained (optional)

Steps:

  • In a saucepan, melt butter over medium heat; add flour and cook, stirring for 1 minute. Whisk in milk and cook, whisking constantly, for 3-5 minute or until beginning to boil and thicken. Remove from heat and whisk in cheese, salt, oregano, cumin and pepper until smooth; set aside.
  • Peel and thinly slice potatoes. Arrange one-third of the slices into greased 8-inch baking dish. Spread with half of the salsa.
  • Repeat layers once and layer remaining potato slices on top. Pour cheese sauce over top and around sides to cover evenly and reach bottom of dish.
  • Sprinkle with pickled jalapeno peppers, if using.
  • Cover with foil or lid and bake in a 375F oven for 1 hour.
  • Uncover and bake for 30 minutes or until lightly browned and potatoes are tender. Let stand for 5 minutes before serving.

2 boxes (4.7 oz each) Betty Crocker™ scalloped potatoes
1 1/3 cups milk
2 tablespoons butter
3 cups Mexican tortilla chicken stock
1 can (14.5 oz) stewed Mexican style tomatoes, drained, juices reserved, tomatoes chopped
2 cups cubed cooked chicken
1 1/2 teaspoons finely chopped chipotle chiles in adobo sauce (from 7-oz can)
3 cups crushed nacho-flavored tortilla chips

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • Make potatoes as directed on box for stove-top directions, substituting tortilla chicken stock and reserved tomato juices for the water. Stir in chicken and chiles; pour into baking dish. Top with tomatoes; sprinkle with tortilla chips.
  • Bake 12 to 15 minutes or until sauce is bubbling. Let stand 5 minutes before serving (sauce will thicken as it stands).
