1 pound sirloin steak (without much gristle) or pre-cut beef tips
Kosher salt and fresh ground black pepper

Steps:

  • Trim off the excess fat from the meat, and then cut strips less than 1-inch wide. Rotate the meat and cut into small bite-size pieces. If you see any more large chunks of fat, gristle or long silvery membrane, cut them off.
  • Sprinkle generously with kosher salt and freshly ground pepper. Toss the meat around a bit to thoroughly coat with the seasonings.
  • Next, turn on your ventilation fan-you'll need it! Heat the skillet over medium-high to high heat. As the pan heats, add about 2 tablespoons butter to the skillet. Allow the butter to melt, and then get very brown, before you add the meat.
  • Place some of the meat in the pan in a single layer. It should sizzle loudly when it hits the pan - if it doesn't, the pan isn't hot enough. Don't stir or disrupt the meat for 30 to 45 seconds. You want it to sizzle and brown on one side. Scoop as many steak bites as you can with your spatula and flip them over. Repeat until all the meat is turned. Cook for an additional 30 to 45 seconds-just long enough to sear the outside of the meat but NOT cook the inside.
  • Remove the meat to a clean plate. Add a little more butter to the pan and repeat the cooking process with the next batch just as before. Lastly, when all the meat is nicely browned and removed to the plate, pour all that browned/blackened butter all over the meat. And enjoy!

SPICY ROAST BEEF SLIDERS

Sloppy, melty goodness. Usually I make these roast beef sliders without the flour to thicken the broth into a gravy, so you can absolutely do it without the flour and just strain the meat before putting on the sliders and then use the sauce like an au jus to dip in on the side, but I preferred these with the meaty gravy. Reminded me of a grown up Sloppy Joe. Yum!

½ pound thinly sliced deli roast beef
1 (10.5 ounce) can condensed beef consomme, undiluted
1 jalapeno pepper, diced, or more to taste
1 dash Worcestershire sauce
salt and ground black pepper to taste
¼ cup all-purpose flour, or as needed
12 Hawaiian bread rolls, split
6 slices provolone cheese
6 slices pepper Jack cheese
2 tablespoons spicy horseradish, or to taste

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • Roughly chop roast beef until crumbly.
  • Combine consomme, jalapeno, Worcestershire sauce, salt, and pepper in a saucepan over medium heat; bring to a simmer. Add roast beef, lower heat to medium-low, and simmer until heated through, 1 to 2 minutes. Add flour and stir constantly until thickened into a gravy, 3 to 5 minutes. Remove from the heat.
  • Slice rolls in half without separating rolls from each other. Put bottom halves on a baking sheet and layer with provolone cheese slices. Spoon meat mixture on the provolone and cover with Cheddar cheese slices. Add a thin smear of horseradish and place top rolls on top.
  • Bake in the preheated oven until cheese is melted, about 5 minutes. Cut sliders apart to serve.

3 large onions, halved and thinly sliced
2 tablespoons olive oil
3 tablespoons butter, divided
1 beef tenderloin roast (2 pounds)
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups (8 ounces) crumbled blue cheese

Steps:

  • In a large skillet, saute onions in oil and 1 tablespoon butter until softened. Reduce heat to medium-low; cook, stirring occasionally, for 30 minutes or until deep golden brown., Meanwhile, cut roast into 1-1/2-in. cubes; sprinkle with salt and pepper. In a large skillet over medium heat, brown beef in batches in remaining butter., Transfer beef to an ungreased 15x10x1-in. baking pan; top with onions and blue cheese. Bake at 350° for 8-10 minutes or until beef reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Insert skewers into appetizers.

1/8 teaspoon ground cloves
1/4 teaspoon marjoram
1/4 teaspoon ground cinnamon
2 teaspoons salt
1 tablespoon sugar
1 garlic clove, minced
1 small onion, chopped
1 tablespoon red wine vinegar
1 cup red wine
1 (16 ounce) can diced tomatoes (can be Italian style)
3 -4 lbs chuck roast
2 bay leaves

  • Combine first 10 ingredients.
  • Line a roasting pan with foil and grease the foil.

  • Pour mixture on roast.
  • Place bay leaves on top.
  • Cover tightly with foil.

Easy to make and delicious little slices of marinated roast beef on fresh baguette slices topped with roasted red peppers, black olives, and just enough hot pepper relish to give them a little kick. I made these for a Christmas Tea party and the ladies loved them! My DH loved them too! They look expensive to make but are really affordable because you only need a small amount of roast beef to make them.

8 slices good quality roast beef (have your deli person slice it fairly thick)
1 long French baguette, sliced into 24 pieces
1/2 cup balsamic vinaigrette
1 (7 ounce) jar roasted red peppers, drained and sliced into 24 pieces, approx. 1-inch square
1 (6 ounce) can black olives, drained and cut into halves lengthwise
1/4 cup red hot pepper relish
butter, for the bread slices

Steps:

  • Prep. Work:.
  • Slice the baguette into at least 24 pieces and place into a ziplock bag. Set aside.
  • Cut each slice of roast beef into 3 pieces. Fold each piece in half and place into ziplock bag.
  • Pour Balsamic Vinaigrette over roast beef slices and seal bag. Marinate in refrigerator for 1-2 hours.
  • To assemble:.
  • Butter one side of each baguette slice.
  • Place one folded slice of the marinated roast beef on each buttered baguette slice.
  • Top with a pieces of roasted red pepper. Top that with half an olive, hollow side up.
  • Place a small amount of hot pepper relish onto the olive's hollow. The more you put on, the hotter your appetizer will taste. Secure all with a toothpick if necessary.
  • Note: assemble not more than 1hour before serving so the bread does not have a chance to get soggy. Prep. time does not include marination of beef.
