Spicy Hot and Sour Soup With Pork image

Hot and Sour soup is one of my favorite foods. I grew up in the NYC metro area so it was always easy to get delicious soup anytime. Unfortunately I'm currently living in a part of the country where that is not the case! I'm taking it on myself to come up with recipes that are satisfying when I'm homesick. This is a combination of several recipes I tried, but mainly Tyler Florence's. The pork is easier to cut if you put it in the freezer for ten minutes first.

8 ounces shiitake mushrooms, sliced
4 ounces oyster mushrooms, sliced
2 tablespoons oil
1 -2 tablespoon chili paste
1 tablespoon ginger paste (or minced ginger)
4 garlic cloves, smashed
1/2 cup bamboo shoot, thinly sliced (one small can's worth)
1/4 cup soy sauce
1/4 cup rice vinegar
1 teaspoon salt
1/2 teaspoon white pepper (or more to taste)
1 pinch sugar
6 cups chicken broth
3 tablespoons cornstarch, dissolved in 1/4 cup water
1 piece firm tofu, drained, sliced and chopped (optional)
2 large eggs, lightly beaten
3 scallions, chopped
3/4 lb pork chop, thinly sliced
cornstarch
white pepper
1 teaspoon oil

Steps:

  • Heat the oil in a large pot over medium-high flame.
  • Add the smashed garlic, ginger paste, chili paste, shiitake and oyster mushrooms, and bamboo shoots. Cook 1-2 minutes, stirring constantly.
  • Mix the soy sauce, vinegar, salt, pepper, and sugar in a small bowl, pour it into the pot. Cook 2-3 minutes to let flavors blend.
  • Pour in the chicken broth, bring the soup to a boil, and simmer for 10 minutes.
  • Meanwhile, dust pork with cornstarch. You will probably need about 2-3 tbsp, depending on how much pork you have. Season with a few shakes of white pepper and mix thoroughly.
  • Heat a pan with 1 tbsp oil and fry pork until mostly cooked through. It will finish cooking in the soup but you want the outside a little brown. Add to soup.
  • If you haven't already, dissolve the 3 tbsp cornstarch in the 1/4 cup water and stir until smooth. Pour into the soup and continue to simmer 5 more minutes, until soup thickens. If using tofu, add at this step.
  • Remove the soup from the heat and stir in 1 direction until the soup is spinning on its own. Then, slowly pour in eggs in a steady stream using a fork to stir if necessary to break up pieces. (The egg should be cooked almost immediately.).
  • Add scallions and enjoy!

1/2 pound ground pork
2 garlic cloves, finely chopped
2 teaspoons finely grated peeled ginger
1 teaspoon Sichuan peppercorns, crushed
3/4 teaspoon crushed red pepper flakes
1/2 teaspoon cumin seeds, coarsely chopped
1 tablespoon vegetable oil
Kosher salt, freshly ground black pepper
4 cups low-sodium chicken broth
1 bunch mustard greens, torn (about 4 cups)
4 scallions, thinly sliced
2 tablespoons reduced-sodium soy sauce
1 teaspoon fish sauce (such as nam pla or nuoc nam)
8 ounces wide rice noodles

Steps:

  • Mix pork, garlic, ginger, Sichuan peppercorns, red pepper flakes, and cumin in a medium bowl. Heat oil in a large pot over medium heat. Add pork mixture; season with salt and pepper and cook, stirring and breaking up with a spoon, until browned and cooked through, 8-10 minutes.
  • Add broth and bring to a boil; reduce heat and simmer until flavors meld, 8-10 minutes. Add mustard greens, scallions, soy sauce, and fish sauce and cook, stirring occasionally, until greens are tender, 5-8 minutes; season with salt and black pepper.
  • Meanwhile, cook noodles according to package directions; drain.
  • Divide noodles among bowls and ladle soup over.

1 lb ground pork sausage
1 medium yellow onion-chopped
3 medium carrots-chopped
1 medium yellow bell pepper-chopped
1 can(s) 10oz. diced tomatoes with green chilies-undrained
2 can(s) diced tomatoes-undrained
1 can(s) water
1/2 can(s) tomato sauce
2 c chicken broth
6 medium potatoes-peeled and diced

Steps:

  • 1. In a Heavy 6 quart stockpot, heat oil on medium heat. Add Ground sausage. Using a potato masher to break up meat until no longer pink. Add in a pinch or two of red pepper flakes. Stir.
  • 2. Add in tomatoes and vegetables, and water. Cook until vegetables are somewhat soft.
  • 3. Add in cubed potatoes. Simmer until potatoes are soft.
  • 4. Next add in Chicken stock. Stir. simmer until ready to serve

1/2 cup chopped onion
4 cups crushed canned tomatoes
2 cups chicken broth
8 ounces salsa, medium-hot
1 teaspoon ground cumin
1 teaspoon chili powder

1/2 teaspoon ground black pepper
4 corn tortillas, cut into thin strips

Steps:

  • Brown pork and onion over medium-high heat in large saucepan, stirring occasionally.

1 tablespoon oriental sesame oil
1/2 pound pork tenderloin, cut into thin 1 1/2-inch-long strips
5 green onions, thinly sliced on diagonal
1 tablespoon minced peeled fresh ginger
4 cups canned low-salt chicken broth
4 1/2 ounces (half of 9-ounce package) fresh linguine, cut in half
1 1/2 cups mung bean sprouts (about 4 ounces)
3 tablespoons soy sauce
Cayenne pepper

Steps:

  • Heat sesame oil in heavy large saucepan over medium-high heat. Add pork, sliced green onions and minced ginger and stir-fry 1 minute. Add chicken broth, pasta, bean sprouts and soy sauce. Bring soup to boil. Reduce heat to medium-low and simmer until pork is cooked through and pasta is just tender, about 3 minutes. Season soup to taste with cayenne pepper and salt. 1 T canola oil
s & p
4 C chicken broth
4 C packed torn mustard greens
4 green onions, thinly sliced
2 T soy sauce
1 t fish sauce
8 oz. wide rice noodles

Steps:

  • Mix pork, garlic, ginger, peppercorns, red pepper flakes and cumin in a medium bowl. Heat oil in a large pot over medium heat. Add pork mixture. Season with s & p. Cook, breaking up, until browned and cooked through, 8 - 10 minutes. Add broth and bring to a boil. Reduce heat and simmer until flavors meld, 8 to 10 minutes. Add all but noodles until greens are tender, 5 to 8 minutes. Season with s & p. Cook noodles according to package directions; drain. Divide noodles among bowls and ladle soup over.

1 Large onion, diced
4 Celery ribs, diced
2 Tablespoons butter
5 Cans (15 oz) Great Northern Beans, drained and rinsed
5 Cups chicken or vegetable broth
2 Cups water
2 Jalepeno peppers, seeded, and diced
1/2 teaspoon white pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon cumin
1/2 teaspoon pepper, or TO TASTE
3 Cloves of garlic, minced
1/2 teaspoon salt, or TO TASTE
1/4 teaspoon dried parsley flakes
1/4 teaspoon hot pepper sauce (optional)
Serve with shredded Monterey Jack Cheese and sour cream, tortillas or tortilla chips are a nice accompaniment. Seasonings can be adjusted to taste!

Steps:

  • In large stock pot, cook pork until partially browned. Add onion and celery and cook until transparent, and meat is browned. Stir in beans, broth, water and add the rest of the ingredients. Bring to a low boil, then cover and simmer slowly for one hour or more. Uncover and simmer to desired thickness. Serve with Monterey Jack cheese, sour cream, and tortillas or tortilla chips.

SPICY PORK MEATBALL SOUP

This started as a pantry soup, whatever I had on hand. But it was a hit so I wrote it all down. I used vegetables I had in the freezer, hence the cooking time. If you substitute canned vegetables you could cut your cooking time way down. I say use what you have!

FOR THE SOUP
5 c beef broth
3/4 c frozen black eyed peas
3/4 c frozen baby lima beans
1/2 c frozen corn kernels
1/2 c diced onion
1/2 c sliced celery
1/2 c sliced carrots
1 can(s) turnip or collard greens, drained
1 can(s) diced tomatoes
1 can(s) tomatoes and green chilies (or another can of diced tomatoes if you don't like heat)
salt and pepper to taste
dash(es) a few dashed of hot sauce, chipotle is good
FOR THE MEATBALLS
1 lb ground pork
1/2 tsp fennel seeds, crushed to release flavor
1 Tbsp dried sage
1/2 tsp garlic salt
1/2 tsp ground black pepper
1/2 c bread crumbs, soaked in enough milk to cover them, drain excess before use

Steps:

  • 1. Place all of the soup ingredients in a large soup pot.
  • 2. Bring to a boil, cover, reduce to simmer, and cook until the peas and beans are done. Approximately an hour.
  • 3. Gently mix the ingredients for the meatballs. Don't over mix.
  • 4. Form into small, bite sized balls and drop into the soup. Add some more beef broth or water if too much has cooked away.
  • 5. Once it is back to a simmer, cover and cook for 5 to 10 minutes. These little meatballs will cook quickly. Pull one out and cut it open to insure they are done.
