SPICY STEAMED MUSSELS WITH GARLIC BREAD

Steps:
- Brush 1 teaspoon oil onto each slice of bread. Toast until brown and crisp. Rub both sides (one side if using baguette) with whole garlic. Cut bread in half on the diagonal. Heat remaining 2 tablespoon oil in a large skillet over medium-high heat. Cook sliced garlic, scallions and salt, stirring occasionally, until scallions and garlic color slightly, about 5 minutes. Add mussels, tomato puree, wine and pepper flakes. Bring to a boil. Reduce heat to medium, cover and cook until mussels open, 1 to 2 minutes. (Discard any mussels that don't open.) Uncover pan and add herbs; toss to combine. Divide mussels evenly among 4 bowls and spoon broth over them. Serve each with toast.

- Heat the oil in a large skillet over medium heat. Add the sausage and cook, stirring often, until golden brown, about 5 minutes. Drain on paper towels, reserving the drippings in the skillet. Place the sausage in a large serving bowl.
- Add the shallots to the skillet; cook, stirring often, until translucent and tender, 3 to 4 minutes. Stir in the garlic and crushed red pepper; cook for 1 minute. Add the wine, stirring and scraping to loosen the browned bits from the bottom of the skillet. Stir in the coconut milk, butter, salt, pepper, ginger and turmeric. Add the clams, cover the skillet, and steam until the clams open, 6 to 7 minutes.
- Transfer the clams to the bowl with the sausage. Stir the lime juice into the broth and pour over the clams and sausage. Sprinkle with the lemon thyme.
- Serve immediately with Spicy Garlic Bread.
- Preheat the oven to 350 degrees F. Cut the bread in half lengthwise through the top of the loaf without cutting all the way through to the bottom. Cut the bread crosswise into 1-inch slices without cutting all the way through to the bottom.
- Stir together the butter, garlic, crushed red pepper and salt. Spread over the bread and between the slices.
- Place the loaf on a baking sheet and bake until golden brown, 5 to 7 minutes. Serve warm.

- To make Garlic Aioli:.
- In the bowl of a food processor, fitted with a metal blade, combine the egg, mustard, garlic and lemon juice. Season with salt and pepper. With the machine running, add the oil in a steady stream slowly until the mixture is pale in color and thick. Remove from the processor and refrigerate for at least one hour.
- To assemble the Spicy Garlic Bread:.
- Preheat oven to 400. In a mixing bowl, combine the aioli, jalapenos, artichoke hearts and parmesan cheese. Mix well. Season with salt and pepper. Slice the bread in half lengthwise (if not already cut). Spread the mixture over each half of the bread. Place on a parchment lined baking sheet and bake until golden and bubbly. About 20-25 minutes. Remove from the oven and cool slightly before slicing.
SOPA DE AJO (SPICY BREAD & GARLIC SOUP WITH POACHED EGGS)

- To make the croutons, preheat the oven to 350'°F (175°C). Combine the olive oil and garlic in a bowl, add the diced bread, and toss until well coated. Transfer to a baking sheet pan and bake until golden brown, about 5 minutes. Return the croutons to the bowl, sprinkle with the paprika, and toss well. To make the soup, heat the olive oil and garlic in a large saucepan over medium heat until the garlic is lightly browned. Remove from the heat and quickly stir in the paprika and cayenne so they do not burn and taste bitter. Immediately add the stock and bring to a boil. Season to taste with salt and pepper. Set aside and keep warm. To serve, preheat the oven to 500'°F (260°C). Add the croutons to the soup and bring to a boil, shaking the pan gently so that all the croutons are moistened. Carefully place 4 hot ovenproof serving bowls on a baking sheet pan. Divide the soup among the 4 bowls. Break an egg into the center of each dish. Gently spoon a tablespoon of the soup over each egg. Bake for 4 to 5 minutes, or until the white of the egg turns opaque but the yolk is still runny. Remove from the oven, place on a plate, and sprinkle with the chives.
SPICY GARLIC BREAD

- In a small bowl, combine ½ tsp salt with all the ingredients apart from the ciabatta. Mash together with a fork so everything is combined.
- Heat oven to 200C/180C fan/gas 6. Using a bread knife, cut diagonal slices into the loaves, about three-quarters of the way through. Spread the butter into the slices, then wrap each loaf in a double layer of foil. Bake in the oven for 15 mins, then open up the foil and bake for a further 10 mins until crispy.
