Spicy and smoky, this Cajun chicken marinade is full of delicious flavor. It will become one of your favorite chicken breast recipes!

1 ½ tablespoons olive oil
2 small garlic cloves, (minced or pressed through a garlic press)
½ tablespoon smoked hot paprika*
½ teaspoon dried oregano
⅛ teaspoon salt
¼ teaspoon onion powder
⅛ teaspoon Hungarian paprika*
¼ teaspoon black pepper
8 ounces boneless, skinless chicken breast, (pounded into even thickness)

Steps:

  • Whisk all marinade ingredients together in a bowl, then pour into a resealable plastic bag.
  • Add the chicken to the bag with the marinade and turn around to coat. Marinate in the fridge for 1 hour.
  • Take the chicken out of the marinade and grill until its internal temperature reaches 165 degrees F. (about 5 minutes per side).

After several attempts at making a Cajun themed meal, I came up with this spicy marinade for chicken breasts. The flavors blend perfectly with chicken with just enough heat that isn't over-powering.

1/2 tablespoon cayenne
1 tablespoon paprika
1 tablespoon garlic powder
1/2 tablespoon oregano
1/2 tablespoon ground thyme
1/2 tablespoon onion powder
1/2 tablespoon salt
1/4 teaspoon white pepper
1/4 teaspoon black pepper
1 teaspoon crushed red pepper flakes
1/3 cup soy sauce
1/3 cup apple cider vinegar
1/3 cup vegetable oil
2 boneless chicken breasts

Steps:

  • Combine all the ingredients in a bowl (except the chicken) and whisk until well blended. Reserve 1/4 cup of the marinade in a cup for basting.
  • Add the chicken to the marinade. Cover and refrigerate for at least 2 1/2 hours (shaking and flipping every 30 minutes).
  • Preheat the grill for medium/high heat.
  • Grill on a lightly oiled rack for 25 to 30 minutes, flipping and basting every 10 minutes.
